APPLE BANANA BUTTERSCOTCH SNACK CAKE

Apple Banana Butterscotch Snack Cake image

Using cake flour make this cake lighter and fluffier than traditional all purpose flour. However, if you do not mind a dense, banana bread like consistency, then all purpose flour can be used. You can also use different flavored chips, chocolate or cinnamon work well too. Or try using Heath Bar Bits. You can also stir in a half cup of golden raisins, or other dried fruit bits for more texture. I prefer mine with just apple, but be creative! If serving the cake to company. I suggest lining the pan and turning cake out. It looks pretty when turned out, with a sprinkle of powdered sugar

Number Of Ingredients 13

3 cup(s) grated apple, peeled (unless you like the peelings)
2 medium bananas, mashed to a smooth puree
2 - whole eggs
1 large egg white
1 teaspoon(s) vanilla
2 cup(s) cake flour
3 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/4 teaspoon(s) ground ginger
1/2 cup(s) apple or orange juice
1 cup(s) butterscotch chips

Steps:

  • Pre-heat oven to 350 degrees. Spray a 9x13 inch cake pan with cooking spray. (If you plan to turn the cake out onto a platter, then you MUST line the pan with PARCHMENT paper or NON-STICK aluminum foil. Otherwise the butterscotch chips settle to the bottom and you will have serious trouble turning the cake out.) You may cool the cake in the pan and serve from the pan if you do not have parchment.
  • In a large mixing bowl. Beat the bananas to a smooth pureee. Then add the 2 whole eggs and the 1 egg white, and the vanilla and beat until creamy and smooth. In a separate, smaller bowl, combine the dry ingredients (flour, salt, baking powder, cinnamon, nutmeg, and ginger.) Do not add the grated apple or the butterscotch chips yet.
  • Add the dry ingredients alternately with the 1/2 cup of juice in two additions. Incorporate all the dry ingredients and beat for 50 strokes if by hand, or about a minute with a hand mixer. Stir in the butterscotch chips and the grated apple and turn batter into the prepared pan.
  • Bake the cake for 30-45 minutes in a 350 degree oven. Test the cake at 30 minutes. If NO gooey batter comes out on the tester, the cake is done. If there is gooey batter (not butterscotch or apple) then bake 5 minutes at a time additionally, until the tester comes out clean. Do not overbake.
  • If you want to turn the cake out, and have lined the cake pan with parchment or non-stick foil, then cool in the pan on a cooling rack for 5-10 minutes, until just warm, then turn the cake out onto a platter or cooling rack, and peel off the paper or foil. If serving from the cake pan, cool until just warm, then serve, or cool completely. Store leftover cake in the refrigerator, otherwise the moist apples will cause the cake to mold at room temperature.

Apple banana cake is a delicious and healthy dessert that can be made at home with simple ingredients. The combination of apples and bananas adds a unique flavor and texture to the cake. Whether you are a beginner or a professional baker, following these valuable tips will ensure that you create a perfect and mouth-watering apple banana cake every time.

Tip #1: Choose the right apples and bananas

The first and most crucial step in making an apple banana cake is selecting the right apples and bananas. The ideal apple for the cake is a tart and firm variety like Granny Smith. The tartness of the apple complements the sweetness of the banana, resulting in a perfectly balanced cake. When it comes to bananas, ensure that they are ripe but not overripe. Overripe bananas can make the cake too dense, and it may not rise properly.

Tip #2: Use a good quality flour and leavening agents

The quality of the flour and leavening agents you use for the cake plays a significant role in the texture and rise of the cake. Always use good quality self-raising flour that has a high protein content. You can also add a pinch of baking powder to the flour to help the cake rise. Using fresh baking powder is also essential as old baking powder loses its effectiveness and can affect the texture of the cake.

Tip #3: Mix the ingredients correctly and in the right order

Mixing the ingredients at the right time and in the correct order is crucial to the success of the cake. Begin by beating the eggs and sugar together until they are light and fluffy. This process is essential as it aerates the mixture, resulting in a light and fluffy cake. After the eggs and sugar, add the dry ingredients to the mixture and mix until just combined. Overmixing can result in a dense and heavy cake.

Tip #4: Add the fruits at the right time

Adding the fruits at the right time is essential to ensure that they do not sink to the bottom of the cake or burn during baking. After mixing the dry ingredients, fold in the chopped apples and bananas. It is important to ensure that the fruits are evenly distributed throughout the batter. Avoid using a mixer at this stage as it can break down the fruits and affect the texture of the cake.

Tip #5: Preheat the oven and choose the right baking dish

Preheating the oven before baking the cake is essential to ensure that the cake bakes evenly and rises perfectly. Set the oven to 180°C or 350°F and allow it to preheat for at least 10 minutes. The baking dish you choose for the cake should be the right size and shape. A too-small dish can cause the cake to overflow, while a too-large dish can result in a flat and dense cake.

Tip #6: Watch the baking time and temperature

The baking time and temperature are critical to the success of the cake. Bake the cake at 180°C or 350°F for 30 to 35 minutes or until a skewer inserted into the center comes out clean. Keep a close eye on the cake during baking, as it can burn easily. If the top of the cake starts to brown too quickly, cover it with a sheet of aluminum foil to prevent it from burning.

Tip #7: Allow the cake to cool before serving

Allowing the cake to cool for at least 10 to 15 minutes after baking is crucial to ensure that the cake sets properly. If you try to remove the cake from the dish while it's still hot, it can break or fall apart. Once the cake has cooled, you can remove it from the baking dish and transfer it to a serving plate. Serve it warm with a dollop of whipped cream or a scoop of ice cream.
Conclusion
In conclusion, following these valuable tips can help you create a perfect apple banana cake every time. Choosing the right apples and bananas, using good quality flour and leavening agents, mixing the ingredients correctly, adding the fruits at the right time, preheating the oven and choosing the right baking dish, watching the baking time and temperature, and allowing the cake to cool before serving are all crucial to the success of the cake. So, follow these tips and enjoy a delicious and healthy apple banana cake at home!
