APPLE BANANA BUTTERSCOTCH SNACK CAKE

Apple Banana Butterscotch Snack Cake image

Using cake flour make this cake lighter and fluffier than traditional all purpose flour. However, if you do not mind a dense, banana bread like consistency, then all purpose flour can be used. You can also use different flavored chips, chocolate or cinnamon work well too. Or try using Heath Bar Bits. You can also stir in a half cup of golden raisins, or other dried fruit bits for more texture. I prefer mine with just apple, but be creative! If serving the cake to company. I suggest lining the pan and turning cake out. It looks pretty when turned out, with a sprinkle of powdered sugar

Number Of Ingredients 13

3 cup(s) grated apple, peeled (unless you like the peelings)
2 medium bananas, mashed to a smooth puree
2 - whole eggs
1 large egg white
1 teaspoon(s) vanilla
2 cup(s) cake flour
3 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 teaspoon(s) cinnamon
1/4 teaspoon(s) nutmeg
1/4 teaspoon(s) ground ginger
1/2 cup(s) apple or orange juice
1 cup(s) butterscotch chips

Steps:

  • Pre-heat oven to 350 degrees. Spray a 9x13 inch cake pan with cooking spray. (If you plan to turn the cake out onto a platter, then you MUST line the pan with PARCHMENT paper or NON-STICK aluminum foil. Otherwise the butterscotch chips settle to the bottom and you will have serious trouble turning the cake out.) You may cool the cake in the pan and serve from the pan if you do not have parchment.
  • In a large mixing bowl. Beat the bananas to a smooth pureee. Then add the 2 whole eggs and the 1 egg white, and the vanilla and beat until creamy and smooth. In a separate, smaller bowl, combine the dry ingredients (flour, salt, baking powder, cinnamon, nutmeg, and ginger.) Do not add the grated apple or the butterscotch chips yet.
  • Add the dry ingredients alternately with the 1/2 cup of juice in two additions. Incorporate all the dry ingredients and beat for 50 strokes if by hand, or about a minute with a hand mixer. Stir in the butterscotch chips and the grated apple and turn batter into the prepared pan.
  • Bake the cake for 30-45 minutes in a 350 degree oven. Test the cake at 30 minutes. If NO gooey batter comes out on the tester, the cake is done. If there is gooey batter (not butterscotch or apple) then bake 5 minutes at a time additionally, until the tester comes out clean. Do not overbake.
  • If you want to turn the cake out, and have lined the cake pan with parchment or non-stick foil, then cool in the pan on a cooling rack for 5-10 minutes, until just warm, then turn the cake out onto a platter or cooling rack, and peel off the paper or foil. If serving from the cake pan, cool until just warm, then serve, or cool completely. Store leftover cake in the refrigerator, otherwise the moist apples will cause the cake to mold at room temperature.

From October 2006 Nick Jr. Family magazine. Yummy, moist snack cake with all kinds of wonderful nutritious ingredients. I found this sweet enough on its own, but you could sprinkle some powdered sugar on top to make it look pretty. Great for lunch boxes!

APPLE BUTTERSCOTCH CAKE

Apple Butterscotch Cake image

I was looking through the "The Best of Country Cooking 2007"and I came across this recipe. It was ssubmitted to the above cookbook by Nancy Zimmermean from Cape May Court House,New Jersey.I decided to try it,and it wasn' t too bad :).I have found out that the amount of vegetable oil that was listed in the ingredients made the cake just a little too oily for me.I would suggest cutting the oil to 1/4 cup.Since my SO doesn't care for pecans I left those out.And I also found out that 45 minutes is too long to bake, so 35 minutes might be better. So if you try this recipe, please consider the changes that I have made.Submitted to "ZAAR" on April 28,2008.

Valuable Tips for Making Apple Banana Butterscotch Snack Cake Recipes

Making a delicious apple banana butterscotch snack cake can be a fun and rewarding experience, but it can also be a bit challenging, especially if you're new to baking. To help you get started, here are some valuable tips that can help you make the perfect apple banana butterscotch snack cake recipe.
1. Choose the Right Apples
One of the key ingredients in apple banana butterscotch snack cakes is, of course, the apples. When choosing your apples, it's important to pick varieties that are firm and crisp. Some great options include Granny Smith, Honeycrisp, and Braeburn apples. Make sure to core and chop the apples into small pieces before adding them to the batter.
2. Mash Your Bananas Well
Another important ingredient in your recipe is ripe bananas. It's important to mash your bananas well to make sure they're evenly distributed throughout the batter. You can use a fork or potato masher to mash them up, leaving some small chunks if you prefer a more textured cake.
3. Use Room Temperature Ingredients
To achieve a uniformly mixed batter, it's essential to use room temperature ingredients when making apple banana butterscotch snack cake. Take your eggs, butter, and other ingredients out of the fridge 30 minutes before baking to ensure they're at room temperature for better mixing.
4. Add Dry Ingredients in Parts
When adding the dry ingredients to your wet mixture, divide them into three or four parts. This way, you will have a lighter batter and not overwork the mixture. By avoiding overworking the batter, you’ll avoid a tough or dense cake.
5. Add Butterscotch Chips Last
When preparing your apple banana butterscotch snack cake recipe, it's important to add the butterscotch chips only when you are about to pour the mixture into the pan. Adding these chips last ensures that they are evenly mixed throughout the cake and don't sink to the bottom. Also, when baking the cake, make sure to shake the pan a bit to get everything distributed evenly.
6. Use a Parchment Lining
Lining your cake tin with parchment paper provides layer protection against sticking and makes removing the cake from the pan easier. You can use butter or cooking spray, but a parchment paper adds extra convenience and protection to ensure that the cake doesn't stick to the sides or bottom.
7. Don’t Overbake
Last but not least, it's essential not to overbake your apple banana butterscotch snack cake. The key to a moist and delicious cake is timing. Overbaking can result in a dry, burnt cake. You'll know the cake is ready when an inserted toothpick comes out clean, or when the sides start to pull away from the pan. In conclusion, by following these valuable tips when making an apple banana butterscotch snack cake recipe, you'll be able to create a delicious and moist cake that's perfect for any occasion. Remember to choose the right apples, mash your bananas well, use room temperature ingredients, add dry ingredients in parts, add butterscotch chips last, use parchment lining, and don’t overbake. By following these simple steps, you are sure to impress your family and friends with your baking skills and enjoy the delicious flavor of this mouth-watering snack cake.
