AWESOME SAUSAGE, APPLE AND CRANBERRY STUFFING

Awesome Sausage, Apple and Cranberry Stuffing image

This Thanksgiving stuffing is fantastic! It is very flavorful and fresh-tasting. This recipe will stuff a 10-pound turkey (which serves six) plus extra. I replaced the usual pork sausage with much healthier turkey sausage. Other dried fruits may also be used in place of cranberries.

STUFFING WITH MUSHROOMS, LEEKS AND BACON

Stuffing With Mushrooms, Leeks and Bacon image

Discord swarms around the issue of stuffing. Should it be cooked in the bird or baked alongside, as dressing? White or corn bread? Firm enough to slice or soft as pudding? Call this recipe the peacemaker, because it's adaptable enough to make everyone happy. You can use white or corn bread (and gluten-free corn bread works perfectly). The mushrooms allow vegetarians to nix the bacon without sacrificing all the flavor. We advocate baking it separately (which technically makes it dressing), but if you want to stuff the turkey, you can do that, too.

Time 2h30m

Yield 8 to 10 servings

Number Of Ingredients 12

3 tablespoons melted butter, more as needed for greasing pan
1 1/2 pounds sliced white bread or corn bread
1/2 pound thick-cut bacon
2 large leeks, trimmed and sliced (3 cups)
1 1/2 pounds mixed mushrooms, cut into bite-size pieces
1 1/2 teaspoons kosher salt
3/4 teaspoon black pepper
2 tablespoons chopped sage
1/2 cup dry white wine
1 1/4 cups chicken stock, more as needed
1/4 cup apple cider, if using white bread
3 tablespoons chopped parsley

Steps:

  • Heat oven to 250 degrees. Butter a 9-by-13-inch baking pan. Trim the crusts from the white bread and cut into 1-inch cubes; if using corn bread, coarsely crumble it. Spread the bread pieces out on one or two large baking sheets. Toast in the oven, tossing occasionally, until very dry, about 30 minutes for white bread, 1 hour for corn bread. Transfer to a large bowl to cool. Increase oven temperature to 375 degrees.
  • In a large skillet over medium-high heat, cook the bacon strips until crisp. Transfer to a paper-towel-lined plate to drain, leaving the fat in the pan. Add the leeks to the bacon fat and cook, stirring occasionally, until soft, 5 to 10 minutes. Add the mushrooms, 1 teaspoon salt and 1/2 teaspoon black pepper. Cook, tossing frequently, until mushrooms are tender and most of their juices have evaporated, 10 to 15 minutes. Stir in the sage and cook 1 minute. Add the wine and cook until it evaporates, about 2 minutes.
  • Spoon the mushroom mixture over the dried bread. Stir in stock. If using white bread, stir in the cider. Add parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper. The mixture should be moist and very soft. If you like your stuffing extremely moist, add enough stock to make it seem slightly soggy but not wet. (Think pudding.) Crumble bacon and stir it in.
  • Transfer the bread mixture to the prepared baking pan. Drizzle 3 tablespoons melted butter over the stuffing. Bake until golden, 35 to 45 minutes.

APPLE BACON THANKSGIVING DRESSING (OR STUFFING) F

Apple Bacon Thanksgiving Dressing (Or Stuffing) F image

This stuffing has a nice background note of orange and apples. You won't taste it in every bite, but once in a while, you have a taste and think, "HMMMM, what's that?" It's a nice balance of flavors with the bacon and the orange and apples. The spinach keeps it moist and heatthy. And, if you're like me, you always run out of room in the oven on Turkey Day. Use your crock pot for the dressing and you've solved the problem. I use a crock pot liner and there's no clean up. Also, the crock pot keeps the dressing moist. How many times have you had dry Thanksgiving dressing at a relative's house? Me, more than I can count. I promise you this dressing will be easy, no clean up, tasty and MOIST.

Thanksgiving is just around the corner, and it's the perfect time to start planning your menu. One dish that's always a standout at any Thanksgiving dinner is the stuffing or dressing. This year, why not try adding a twist to the classic stuffing by incorporating apples and bacon? Here are some valuable tips for making the perfect apple bacon Thanksgiving dressing.

Tip 1: Choose the Right Bread

The bread is the foundation of the dressing, so it's essential to choose the right kind of bread. For an apple bacon Thanksgiving dressing, it's best to use bread with some texture that can hold up with the other ingredients. Sourdough, ciabatta, or French bread are all great options. Avoid using plain white bread as it can become too mushy once mixed with liquid.

Tip 2: Use Quality Bacon

Bacon is a crucial ingredient that adds a smoky and savory flavor to the dish. It's essential to use quality bacon for the best results. Choose bacon that's thick, with good marbling, and minimal fat. Thick bacon will add more flavor and texture to the dish, while minimal fat will prevent the stuffing from becoming too greasy.

Tip 3: Choose the Right Apples

Apples are the star ingredient in this apple bacon Thanksgiving dressing, and it's essential to choose the right apples. Look for apples that are firm, crisp, and slightly tart. Granny Smith, Honeycrisp, Braeburn or Jonagold apples are all great choices. Avoid using overly sweet or soft apples, as they will turn to mush during cooking.

Tip 4: Add Some Vegetables

While apples and bacon are the main flavors in this dish, adding some vegetables can add some depth and balance to the dressing. Onions, celery, and carrots are classic choices that add flavor and texture. You can also add some garlic, mushrooms, or herbs like thyme, rosemary, or sage for additional flavor.

Tip 5: Let the Bread Dry Out

Dry bread is essential for making the perfect stuffing or dressing. It helps absorb the liquid and prevents the stuffing from becoming too soggy. Once you've chosen your bread, let it dry out for a day or two before making the dressing. Cut it into cubes, spread it out on a baking sheet, and let it sit uncovered at room temperature.

Tip 6: Add the Liquid Slowly

The liquid is what binds the stuffing together, but it's essential to add it slowly. Adding too much liquid at once can make the stuffing too wet and mushy. Pour the liquid over the bread mixture in small increments, stirring until the bread has absorbed the liquid before adding more. This process will help you maintain the right texture and prevent over-saturation.

Tip 7: Don't Overstuff the Bird

While it may be tempting to stuff the turkey with the dressing, it's not recommended. Stuffing the turkey can prevent it from cooking evenly, and it can also lead to foodborne illness. It's best to bake the dressing separately in a casserole dish. This way, you can control the cooking time and temperature.

Tip 8: Add Some Crunch

Adding some crunch to the dressing is a great way to add some texture and interest. You can add some toasted pecans, walnuts, or almonds at the end of cooking. Adding some breadcrumbs or panko on top of the dressing before baking can also add some crunch.

Tip 9: Baste with Butter

Adding a layer of melted butter on top of the dressing before baking can help create a crispy, golden crust. Use a pastry brush to baste the top of the dressing with melted butter. This will also add some flavor and richness to the dish.

Tip 10: Rest Before Serving

Once the dressing is out of the oven, it's tempting to dig right in. But it's important to let it rest for a few minutes before serving. This will help the flavors meld together and prevent the dressing from falling apart.

Conclusion

Apple bacon Thanksgiving dressing is a delicious twist on the classic stuffing. With these valuable tips, you can make the perfect dressing that's sure to impress your guests. Remember to choose the right bread, bacon, and apples, add some vegetables and crunch, let the bread dry out, add the liquid slowly, and rest before serving. Happy Thanksgiving!
