1/2 cup canola oil
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1-1/2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground nutmeg
4 cups chopped unpeeled apples
1 cup chopped walnuts
FROSTING
3 ounces cream cheese, softened
3 tablespoons butter, softened
1 teaspoon vanilla extract
1-1/2 cups confectioners' sugar

Steps:

  • In a large bowl, beat sugar and eggs. Add oil and vanilla; mix well. Combine the flour, baking soda, cinnamon, salt and nutmeg; gradually add to sugar mixture, mixing well. Stir in apples and walnuts. Pour into a greased and floured 13x9-in. baking pan. Bake at 350° until a toothpick comes out clean, 50-55 minutes. Cool on a wire rack., For frosting, beat cream cheese, butter and vanilla in a bowl. Gradually add confectioners' sugar until the frosting has reached desired spreading consistency. Frost cooled cake.

2 cups diced peeled tart green apples (such as Granny Smith; about 1 1/2 large)
1 cup sugar
1/2 cup (1 stick) unsalted butter, melted, cooled
1 large egg
1 1/4 cups all purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coarsely chopped walnuts

Steps:

  • Preheat oven to 375°F. Butter and flour 8x8x2-inch baking pan. Mix diced apples, sugar, butter and egg in large bowl to blend. Sift flour, cinnamon, baking soda and salt over. Add chopped walnuts; mix thoroughly. Transfer mixture to prepared pan.

½ pound butter

1 ½ teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour one 10 inch tube pan.

1 1/2 cups sugar, divided
2 pounds tart apples such as Granny Smith, Northern Spy, or Greening, peeled, halved lengthwise, and cored
3/4 teaspoon salt, divided
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground allspice
1/2 teaspoon cinnamon
1/4 teaspoon grated nutmeg
1 1/2 cups walnuts (5 ounces), coarsely chopped, toasted , and cooled completely
2 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon pure almond extract
3 tablespoons apple jelly
Equipment: a 9- by 3-inch round cake pan or a 9-inch springform pan wrapped in foil
