2 cups sifted all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
½ cup shortening
1 ⅓ cups packed brown sugar
⅓ cup apple juice
1 cup chopped walnuts
1 cup chopped apples
1 cup raisins

Steps:

  • Cream together shortening and brown sugar. Stir in flour, baking soda, salt and spices until dampened. Stir until smooth. Mixture will be very thick.
  • Stir in nuts, apples and raisins.
  • Drop by tablespoon 2 inches apart on a lightly greased cookie sheet. Bake 8 to 10 minutes in a 400 degree F (205 degrees C) oven. Let cool slightly, remove from cookie sheet.

3/4 cup margarine, softened
3/4 cup sugar
1 egg
1 1/2 cups flour, unsifted
1 1/2 teaspoons cinnamon
1 cup apple, shredded
3/4 cup oats, uncooked
1/2 cup brown sugar
1 teaspoon vanilla
3/4 teaspoon baking soda
3/4 teaspoon salt
1 (6 ounce) package butterscotch chips
1/2 cup powdered sugar
2 teaspoons milk

Steps:

  • Beat margarine and sugars until creamy. Add in egg and vanilla and beat. Add in dry ingredients and beat until smooth.
  • Stir in apples and oats. Spread evenly on generously greased pizza pan. Bake 20 to 25 minutes or until golden. Remove from oven.
  • While the crust is hot sprinkle with the butterscotch chips. Let stand until soft then spread. Sprinkle 1 cup chopped pecans on top of the butterscotch.
  • Sift powdered sugar, add milk. Mix until smooth. Drizzle on top of pizza cookie.
