This is our favorite salad . . . sometimes we just make a meal out of it! Note: I've found that the romaine is best (very crisp) if it's soaked in ice water for approximately 30 minutes, then spin dry. I use my Recipe #175543 however a good quality bottled blue cheese dressing can be substituted

CELERY SALAD WITH APPLES AND BLUE CHEESE

Celery Salad With Apples and Blue Cheese image

Celery is perhaps at its best in salad: Its flavor is at its brightest and its crunch is unapologetically assertive. Celery root complements the chopped stalks, apples add sweetness and blue cheese - celery's classic cohort - provides punch. Flavorful enough to stand on its own, this salad isn't so striking that it doesn't play well with others. Celery salad makes a welcome addition to the Thanksgiving table, particularly since the crunchy salad ingredients are strong enough to stay sturdy if refrigerated overnight.

Time 20m

Yield 8 servings

Number Of Ingredients 12

5 tablespoons extra-virgin olive oil
1/4 cup finely chopped shallot
4 teaspoons coarse mustard
1 teaspoon finely grated fresh lemon zest, plus 4 teaspoons lemon juice (from 1 lemon)
1 teaspoon granulated sugar
Kosher salt and freshly ground black pepper
1 head celery, trimmed, stalks peeled and thinly sliced on the diagonal, leaves reserved
2 tart red apples, such as Pink Lady
1 small celery root (about 12 ounces)
1 packed cup fresh parsley leaves, plus more for garnish
1/2 cup coarsely chopped roasted, salted almonds
1 cup crumbled bold, creamy but firm blue cheese (4 to 5 ounces)

Steps:

  • Prepare the vinaigrette: In a large bowl, whisk together the olive oil, shallot, mustard, lemon zest and juice, and sugar; season to taste with salt and pepper. Add the sliced celery and toss to coat.
  • Core the apples, then slice them lengthwise into very thin wedges using a knife or mandoline. Add to the sliced celery and toss to coat. Peel or slice off the outer skin and layers of the celery root until no brown skin remains. Cut the celery root in half lengthwise, then slice into very thin half-moons using a knife or a mandoline. Add to the celery and apple mixture and toss to coat. (The salad will hold up fairly well refrigerated for 1 to 2 hours - or even overnight - from this point.)
  • Just before serving, add the parsley, almonds and half the cheese, and toss to combine; season to taste with salt and pepper.
  • Transfer to a shallow serving bowl or platter; top with the remaining cheese, the reserved celery leaves and fresh parsley leaves. Serve immediately.

Tips for Making a Delicious Apple Almond Blue Cheese Salad

If you are looking for a refreshing and satisfying salad that is easy to make, then an apple almond blue cheese salad is the perfect choice. This salad is perfect for any occasion, whether it is a simple family dinner or a fancy dinner party. However, to ensure that your salad is as delicious as possible, there are a few tips that you should keep in mind. Below are some valuable tips for making an apple almond blue cheese salad that will leave your taste buds wanting more.
Tip 1: Choose the Right Apples
The base of the apple almond blue cheese salad is, of course, the apples. When making this salad, it is important to choose the right type of apple. Ideally, you want an apple that is sweet but not too tart, and one that holds up well when cut into small pieces. Good choices include Honeycrisp or Braeburn apples, which have a crisp texture and a sweet, juicy flavor.
Tip 2: Use Fresh Greens
To make a flavorful salad, it is important to use fresh greens. You can use any type of green you like, but for this recipe, a combination of arugula, spinach, and romaine lettuce works well. Be sure to use greens that are crisp and vibrant, and that are not wilted or discolored.
Tip 3: Toast the Almonds
Toasting almonds before adding them to the salad adds a nutty and crunchy flavor that complements the other ingredients perfectly. To toast almonds, simply spread them out on a baking sheet and bake them at 350 degrees F for about 7-10 minutes, stirring occasionally, until they are golden brown.
Tip 4: Add Some Crunch
In addition to the almonds, adding other crunchy elements to your apple almond blue cheese salad can make it even more delicious. For example, you could add some croutons, chopped celery, or diced red onions. These ingredients not only add texture but also add flavor to the salad.
Tip 5: Choose the Right Blue Cheese
Blue cheese is an essential ingredient in any apple almond blue cheese salad, but not all blue cheeses are created equal. When choosing a blue cheese for this salad, look for a mild and creamy blue cheese, such as gorgonzola or roquefort. These types of blue cheese have a milder flavor that pairs well with the sweetness of the apples and the nuttiness of the almonds.
Tip 6: Dress for Success
A good salad dressing can make all the difference in the world when it comes to the taste of your apple almond blue cheese salad. For this salad, a simple vinaigrette made with olive oil, balsamic vinegar, and Dijon mustard works well. However, you could also use a honey mustard or a creamy blue cheese dressing if you prefer.
Tip 7: Serve Chilled
The apple almond blue cheese salad is best served chilled, so be sure to refrigerate it for at least 30 minutes before serving. This allows the flavors to blend together and ensures that the greens are crispy and refreshing.
Tip 8: Add Some Protein
While the apple almond blue cheese salad is delicious on its own, adding some protein can make it even more satisfying. Grilled chicken or shrimp, sautéed tofu, or even sliced boiled eggs are all great options for adding protein to the salad.
Tip 9: Garnish with Herbs
Finally, to add some extra flavor and visual appeal to your apple almond blue cheese salad, consider adding some fresh herbs as a garnish. Parsley, basil, or even chives can add a pop of color and flavor to the finished dish. In conclusion, making a delicious apple almond blue cheese salad is easy if you follow these valuable tips. By choosing the right ingredients, toasting the almonds, adding some crunch, and choosing the right dressing, you can create a salad that is not only delicious but also beautiful to look at. Whether you serve it as a side dish or as the main course, this salad is sure to please everyone at the table.
