1/4 cup olive oil
3 tablespoons chopped fresh basil
3 to 4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium tomatoes, diced
2 tablespoons grated Parmesan cheese
1 loaf (1 pound) unsliced French bread

Steps:

  • In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour. , Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately.

This bread is wonderful made with garden fresh tomatoes, it's perfect for a barbecue! I used the Philadelphia brand soft cream cheese in the small tub for this. Use only firm plum tomatoes for this.

1 (8 ounce) container soft cream cheese
1/3 cup grated parmesan cheese
1 tablespoon minced fresh garlic (can use more)
2 -3 tablespoons chopped fresh basil
salt and pepper
1 large unsliced French bread
4 large plum tomatoes, thinly sliced (can use less)

Steps:

  • Microwave the the cream cheese in a medium microwave-safe bowl on HIGH for 20 seconds; Add in the Parmesan cheese, garlic and basil; mix well to combine, then season with salt and pepper to taste.
  • Slice the bread in half lengthwise.
  • Evenly divide and spread the mixture over the cut sides of the bread.
  • Top with the sliced tomatoes, then sprinkle a small amount of salt over the tomato slices.
  • Broil about 5-inches away from heat with the oven door partially open for about 5 minutes.

1 loaf French bread, cut into 1 1/2 inch slices
1 (8 ounce) jar pizza sauce
3 tomatoes, sliced thin
1/2 lb mozzarella cheese, sliced thin
parmesan cheese
butter or margarine
garlic salt
oregano
parsley

Steps:

  • Butter both sides of french bread slices, and sprinkle lightly with garlic salt.
  • Arrange bread slices on an ungreased cookie sheet.
  • Spoon about 1 tablespoon of pizza sauce on each slice, and spread to cover.
  • Put a thin slice of tomato over top the sauce.
  • Then put a slice of mozzarella cheese on top of the tomato.
  • Sprinkle generously with parmesan cheese.
  • Lightly sprinkle with oregano and parsley.
  • Bake at 350 until cheese is melted, and bread is slightly toasted.
  • Serve Warm.

2 cups unbleached flour

  • Cut 2 tablespoons butter unto 1/4-inch dice. Place on a piece of waxed paper and place in the freezer.
  • In a large bowl, combine flour, sugar, salt, and yeast. Heat soft butter and tomatoes to 125 degrees. Add to the dry ingredients with the egg, Parmesan cheese, and parsley. Beat vigorously for 2 minutes.
  • Turn dough into a well-greased, 8-inch round pan. Cover with a tightly woven towel and let rise for 1 hour. About 10 minutes before baking, preheat oven to 375 degrees.
