I wanted an egg & cheese appetizer to add to a brunch that I was preparing. I needed to prepare it a day ahead and didn't have time to make pie crust. My friends asked for the recipe and my family enjoyed them too!

Steps:
- Preheat oven to 350 degrees.
- Place 1 tbsp butter in a 9 inch square or 10 x 6 inch pan.
- Melt in the oven about 3 minutes.
- Beat together eggs, milk, basil, salt, onion, and pepper.
- Add your filling from above.
- Stir in 3/4 cup grated cheese.
- Pour into baking dish.
- Sprinkle with remaining cheese.
- Bake 35- 40 minutes until centre puffs up and is firm.
- A knife inserted near the centre comes out clean.
- Let stand 5- 10 minutes before serving.
- Don't under cook as it will be runny and don't over cook as it will be dry.
- Makes about 24 squares.
- You can prepare a day or 2 ahead and reheat in oven for a few minutes until warm.

- Set oven to 400 degrees.
- Prepare an ungreased 15 x 10-inch jelly-roll style pan.
- FOR THE CRUST: In a bowl, combine flour and the crushed cracker crumbs.
- Cut in butter until the mixture resembles coarse cornmeal.
- Sprinkle with 1/2 cup water (a tablespoon at a time).
- Toss with a fork until crumbs are completely moistened.
- Press mixture into bottom of ungreased pan.
- Prick crust WELL with a fork; set aside.
- FILLING: Sprinkle Swiss cheese, ham (or what ever meat you are using), onions, parsley and pimentoes evenly over crust.
- Beat eggs, cream, half and half, salt and pepper.
- Pour over filled crust.
- Bake for 25-30 minutes, or until set (crust may bubble during baking, and need to be pricked with a fork again).
- Cool 5-10 minutes.
- Cut into 1-1/2 - 2-inch sqares/pieces.
- Serve warm.

- HEAT oven to 400 degrees F. Spray a 15 x 10-inch jelly-roll pan with no-stick cooking spray.
- CRUST:
- COMBINE flour and salt in medium bowl. Cut in shortening using pastry blender or 2 knives until all flour is blended in to form pea-size chunks. Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough forms ball.
- ROLL out dough between sheets of waxed paper to fit jelly-roll pan. Place dough in prepared pan, folding edges under. Flute edges. Prick crust with fork.
