AMISH DRY LIME GELATIN SALAD / DESSERT (JELLO)
Found on www.AmishDining.com. A recipe seldom gets any easier than this one. Kids could make this with just a bit of supervision. My mother used to make something like this that had these same ingredients. This is much like her's, and since she was not a dessert maker, I am sure she would have opted for a simple recipe. Other flavors of gelatin work too, like Cherry and Strawberry which are perfect for Valentine's Day. NOTE: Times do not include the 2-3 hours for chilling time. Servings are approximate.

Steps:
- In a 4-6 quart bowl, pour dry gelatin over cottage cheese, pineapple, whipped topping and nuts; stir together well.
- ***Chill 2 to 3 hours***.
LIME CHEESE SALAD
From the files of Winona Holt. I think this one dates back to the 50's, but it is still good today. No luncheon at the church was complete unless there were at least 10 different jello dishes. Prep time is an estimate and is the refrigeration time.

Steps:
- Pour water over gelatin and stir until dissolved.
- Chill, stirring occasionally, until the consistency of unbeaten egg white.
- Add pineapple, cottage cheese, celery, nuts and cheddar cheese.
- Put in a mold or an 8"x8" square dish and refrigerate until firm.
- To serve: cut into squares and put a dollop of dressing on top.

LIME JELLO SALAD WITH NUTS
This is my moms recipe, i don't really know where she got it but I have always liked it. I find that I can substitute low fat evaporated milk and low-fat cottage cheese and use sugar free Jello and sugar free pineapple to make this fit into my diabetic diet plan better.

- Dissolve lime Jello in boiling water add evaporated milk and mix till Jello is completely dissolved.
- Add the rest of the ingredients and mix till blended.
- Pour into a 9-inch square pan and chill till set.

ANYTIME LIME JELLO WITH SHRED. CHEESE FAVORITE
I always like for my recipes to look pretty as well to taste yummy. This was a jello dish, my late sister in law made for reunions, but it is so yummy, I make it all the time~

Steps:
- In a 9 x 13 inch clear baking dish, mix up pkg. jello as box directed.
- Then add the following ingredients: 1/2 cup crushed pineapple 1/2 cup pears Let set in refrigerator till lightly set. Remove.
- Then mix in seperate bowl the following ingredients: 1/2 cool whip cherries nuts if want?
- Now we are ready for the last part. Remove Saran wrap, spoon on last of cool whip across jello mixture.
- And then sprinkle shredded cheese all over the top.
- We n ow have a Yummy Jello salad. It is also a pretty salad. After eating as much as you want, reseal with Saran wrap and keep refrigerated till hungry bunch wants more!
