SAVORY BUTTERMILK MEATLOAF

Savory Buttermilk Meatloaf image

This meatloaf recipe is very flavorful, and as the proverbial description goes, 'melts in your mouth.' As far as vegetables, I only used onions, but their sweetness, along with the simple brown sugar glaze, were a great counterpoint to the others flavors.

Time 2h

Yield 6

Number Of Ingredients 16

2 tablespoons butter
1 yellow onion, diced
2 ½ pounds ground chuck
1 cup dry bread crumbs
¾ cup buttermilk
½ cup ketchup
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 ½ teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot sauce
½ teaspoon dried tarragon
½ teaspoon Italian seasoning
¼ cup brown sugar
1 tablespoon Dijon mustard
1 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Melt butter in a skillet over medium-high heat. Saute onion in hot butter until soft and translucent, 6 to 7 minutes. Cool to room temperature.
  • Combine cooled onion, beef chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, black pepper, hot sauce, tarragon, and Italian seasoning in a bowl; mix together with a fork and let sit until breadcrumbs absorb moisture, about 10 minutes.

An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MELT-IN-YOUR-MOUTH CROCKPOT MEATLOAF

Melt-In-Your-Mouth Crockpot Meatloaf image

I can't take credit for this recipe. It came from one of my Taste of Home magazine years ago. I can say that it is truly the easiest and best meatloaf EVER! The texture is perfect for sandwiches the next day, and the sauce adds a slight sweetness you don't get from the typical plain ketchup on the top. My picky daughter loves it, which says a LOT She hates finding chunks of onions or peppers in meatloaf and this recipe solves that beautifully. Oh, and it doubles wonderfully if you have a larger crockpot. Use tin foil strips to aid in removal. ENJOY!!

Antoinette Lordos Melt in Your Mouth Meatloaf Recipes: Valuable Tips Meatloaf is one of the classic comfort dishes that everyone loves. It's customizable, easy to make, and perfect for feeding the whole family. But for meatloaf to be truly excellent, it needs to be moist, tender, and have a rich, hearty flavor. That's where Antoinette Lordos' melt in your mouth meatloaf recipes come in. Here are some valuable tips to help you make the most out of Antoinette Lordos' meatloaf recipes. 1. Choose the Right Meat The type of meat you use to make your meatloaf greatly affects its texture and flavor. Antoinette Lordos recommends using a mix of ground beef, ground pork, and ground veal for the best results. This combination provides a perfect balance of flavor and texture. Ground beef alone can be too dense and dry, while using only pork or veal can result in a meatloaf that is too soft and lacks substance. 2. Add Moisture One of the biggest problems with meatloaf is that it can turn out dry and crumbly. Antoinette Lordos' melt in your mouth meatloaf recipes combat this by including ingredients that add moisture. These can include breadcrumbs, milk, eggs, and even grated vegetables like zucchini or carrots. The breadcrumbs help to absorb the moisture and keep the meatloaf from drying out, while the milk and eggs provide extra liquid. Vegetables not only add moisture but also help to sneak in some extra nutrients. 3. Use Flavorful Seasonings A meatloaf can be bland and unappetizing if the seasonings are not right. The key to Antoinette Lordos' melt in your mouth meatloaf recipes is in the seasoning. She recommends using a mix of herbs and spices, including garlic, onion, thyme, basil, and parsley. These ingredients not only add flavor but also contribute to the overall texture of the meatloaf. 4. Incorporate Cheese Adding cheese to meatloaf may seem unconventional, but it can really enhance the flavor and texture of the dish. Antoinette Lordos' melt in your mouth meatloaf recipes include cheese in various forms – either grated or cubed. Cheese not only adds flavor and depth to the meatloaf, but it also helps to keep it moist. 5. Form it Properly The shape and size of your meatloaf can affect how it cooks and how it turns out. Antoinette Lordos recommends forming the meatloaf into a loaf shape that is about 9 x 5 inches. This size ensures that the meatloaf will cook evenly and that there will be enough for everyone. When forming the meatloaf, make sure not to pack it too tightly – this can result in a dense, heavy meatloaf. 6. Cook it Slowly Meatloaf is not a dish that you can rush – it needs time to cook slowly and evenly. Antoinette Lordos recommends baking her meatloaf recipes at 350°F for about 1 hour and 20 minutes. Cooking the meatloaf slowly ensures that it cooks through evenly and that it stays moist and tender. When cooking, make sure to check the internal temperature of the meatloaf – it should be 160°F in the center. 7. Let it Rest Once your meatloaf is done, it's important to let it rest for a few minutes before slicing it. This allows the juices to redistribute throughout the meatloaf, resulting in a more evenly moist and flavorful dish. Antoinette Lordos recommends letting the meatloaf rest for at least 10 minutes before serving. Final Thoughts Antoinette Lordos' melt in your mouth meatloaf recipes are truly delicious and satisfying. However, to get the best results, it's important to follow these valuable tips. Use the right meat, add moisture, use flavorful seasonings, incorporate cheese, form it properly, cook it slowly, and let it rest. By following these tips, you'll be able to create a meatloaf that is not only delicious but also moist and tender – just like Antoinette Lordos' melt in your mouth meatloaf recipes.
