Time 1h45m

Yield 4 serving(s)

Number Of Ingredients 15

2 teaspoons vegetable oil
1 large onion, chopped
1 carrot, peeled and finely chopped
3 -4 garlic cloves, minced
2 lbs 80% lean ground beef (20% fat)
1 1/2 cups fresh breadcrumbs
2 eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon dried thyme leaves, crushed
1/4 cup finely chopped fresh parsley
1 teaspoon Worcestershire sauce
2/3 cup catsup
1/2 cup tomato sauce, plus
tomato sauce, for serving (optional)

Steps:

  • Saute vegetables in oil until carrots are soft.
  • Add garlic and saute about 1-2 minutes longer.
  • Remove from heat and set aside to cool.
  • In a large bowl, combine beef, bread crumbs, and cooled vegetables.
  • In another bowl, whisk together the eggs, salt, pepper, thyme, parsley, Worcestershire sauce and catsup until combined.
  • Pour egg mixture over beef and mix with hands, handling just enough to combine evenly.
  • Do not overmix, or it will be too dry.
  • Pat mixture gently into greased loaf pan, but do not press down too firmly.
  • Pour 1/2 cup tomato sauce evenly over the top and bake at 350 degrees for approximately 1-1/4 hours.
  • Place on a wire rack and cool for 10 minutes before serving.
  • Cut into thick slices and serve warm or cold with extra tomato sauce, if desired.
  • I use crushed, canned tomatoes sometimes and that is very good too.

ANNIE'S MEATLOAF

Annie's Meatloaf image

My mother's meatloaf - the best in the world. It's light and flaky and moist, not leaden and heavy like most. It still stays together well, especially when cold if you like meatloaf sandwiches. The veal is the secret ingredient that adds distinctive, subtle flavor, so do make sure to include it.

Valuable Tips for Making Annie's Meatloaf Recipes

Valuable Tips for Making Annie's Meatloaf Recipes

Meatloaf is a classic comfort food that many people enjoy. However, making the perfect meatloaf can be a challenge. With Annie's meatloaf recipes, you can create a delicious and satisfying meal. Here are some valuable tips to help you make the best meatloaf possible.

1. Choose the Right Meat

The meat that you use for your meatloaf is critical to its success. Lean ground beef or beef/pork blends are good choices. Avoid meats that are too fatty, like ground chuck or ground pork shoulder, as they can result in a greasy, mushy meatloaf.

TIP: If using lean ground beef, add a little bit of olive oil or bacon grease to give it some moisture and flavor.

2. Don't Overmix

Mixing the ingredients for your meatloaf is important, but it's easy to overdo it. Overmixing can result in a dense, tough meatloaf. Mix the ingredients just enough to combine them evenly.

TIP: Use a fork to gently combine the ingredients. Avoid using your hands or a mixer, as they can overwork the meat.

3. Use Fresh Herbs and Spices

The herbs and spices you use in your meatloaf can make a big difference in its flavor. Fresh herbs are always better than dried ones, as they are more fragrant and flavorful. Use a combination of your favorite herbs, such as parsley, thyme, and rosemary.

TIP: Toast any whole spices, like cumin or coriander, before using them to enhance their flavor.

4. Add Moisture

Meatloaf can quickly become dry and tough if not enough moisture is added. Use ingredients such as eggs, milk, and breadcrumbs to provide moisture and help bind the ingredients together.

TIP: Try adding a grated onion or crushed garlic to provide additional moisture and flavor.

5. Don't Overcook

Meatloaf can become dry and tough if overcooked. Cook the meatloaf until it is cooked through, but not overdone. Use a meat thermometer to ensure the internal temperature reaches 160°F.

TIP: Let the meatloaf rest for a few minutes before serving to allow the juices to redistribute and prevent it from drying out.

6. Experiment with Different Flavors

Meatloaf is a versatile dish that can be customized to suit your tastes. Add different ingredients like mushrooms, cheese, or even fruit to provide additional flavor and texture.

TIP: Use different sauces or glazes, such as barbecue sauce or honey mustard, to give your meatloaf a unique flavor.

Conclusion

Annie's meatloaf recipes are perfect for any occasion, whether it's a family dinner or a potluck gathering. By following these valuable tips, you can create a delicious and satisfying meatloaf that is sure to impress.
