2 lbs eckrich farm smoked sausages
10 cups chicken broth (or, water* )
1 (4 ounce) package Zatarians gumbo base mix
1 -2 small onion, diced
1 small green bell pepper, diced

  • Please note that you can find several brands of this gumbo base mix.
  • It's usually on the grocery isle with the gravy, and other sauce mixes in packages. I mentioned "Zatarians" brand in my ingredients list because that's the only brand that this program would accept. I've tried several.
  • brands and they have all been very good.
  • Turn heat down to medium. Add chicken to pot of water with gumbo mix and cook until done. (20-30 minutes).
  • Cut cooked and cooled chicken into bite-size pieces and put back in the pot.
  • Cut up the smoked sausage in small bite-size pieces and add to pot.
  • Note: You can pre cook the sausage in the microwave on high for 2 minutes or so, if you would like to remove some of the grease from the sausage first, before adding to the pot.
  • Add all other ingredients (except rice) and cook on low to medium for an hour. Use 1 or 2 cans each of the Vegetables (corn and okra), depending on how much you like.
  • Cook the rice separately and set aside. When Gumbo is finished and you are ready to serve, add rice to individual serving bowls and spoon gumbo on top of rice.
  • For variation, you can also add a package of frozen, pre cooked and shelled, medium shrimp, which is also excellent. If you use shrimp, don't add until the last 15 minutes of cooking.
  • *May need to add more water, depending on how soupy or thick you want the gumbo.
  • Can also be made in the crock pot and cook on low for 8-10 hours.

SLOW COOKER GUMBO

Slow Cooker Gumbo image

A delicious crockpot gumbo that is easy to 'dump' and cook. With an optional roux base for a more authentic flavor this traditional Creole dish can now be a weeknight favorite.

Provided by Lauren Schmidt

Categories     Crockpot

Time 6h10m

Number Of Ingredients 15

4 tablespoons butter
1/4 cup + 2 tablespoons flour
1 red bell pepper, diced
1 onion, diced
3 celery stalks, diced
28 ounce can diced tomatoes (the big can)
1 ½ pounds chicken thighs, boneless skinless
1 package andouille sausage, sliced
1 pound raw shrimp (add at the end)
1 tablespoon cajun seasoning
1 teaspoon kosher salt
½ teaspoon dried thyme
2 cups chicken broth
1 teaspoon minced garlic
2 cups cooked rice for serving

Steps:

  • Optional: Make a roux using the optional butter and flour. On the stovetop add the butter to a skillet over medium heat. Once melted and starting to bubble add the flour to the butter. Whisk to combine and continue to whisk until the mixture becomes a dark brown color about 4 minutes. Remove from the heat, set aside until you are ready to add the the crockpot.
  • Add the diced red bell pepper, onion, celery, diced tomatoes, chicken thighs, sliced andouille, cajun seasoning, salt, thyme, broth, minced garlic, and if you are using it the optional roux from step one. Do NOT add the shrimp yet.
  • Stir to combine and cook on LOW 6-7 hours or HIGH 3-4 hours.
  • During the last 15 minutes of cooking stir in the shrimp. I recommend leaving the shells on for maximum flavor but it isn't absolutely necessary. Once the shrimp is pink and no longer translucent the gumbo is ready to eat. Serve over a bed of rice.

I saw this recipe deomonstratd on tv during a PBS telethon. It looked so good, that I made a donation in order to get the cookbook. I have not tried this recipe yet, but it sure looked good. Surprisingly, this recipe does not start with a roux, so this isn't quite a traditional version. Adapted from "5 Tastes of the South."

Slow cooking is a great way to prepare delicious meals without having to dedicate too much time and effort. Gumbo is a Southern delicacy that's a perfect option for slow cooking. Rich in flavor and texture, gumbo recipes need time to cook and to let the flavors blend. Among the different gumbo variations, Anita's Easy Slow Cooker Gumbo is an excellent option for those who want a flavorful meal without spending too much time on the stove. Here are some valuable tips to consider when preparing Anita's Easy Slow Cooker Gumbo.

Tip #1: Use Fresh Ingredients

One of the essential tips when making Anita's Easy Slow Cooker Gumbo is using fresh ingredients. Fresh seafood, sausage, and vegetables are more nutritious and flavorful than frozen options. While frozen ingredients are convenient, fresh ingredients add more depth and dimension to the dish. Selecting fresh ingredients from the market or grocery store will make a considerable difference in the taste of Anita's Easy Slow Cooker Gumbo recipe.

Tip #2: Invest in a Good Slow Cooker

The right slow cooker is key to ensuring that Anita's Easy Slow Cooker Gumbo recipe cooks evenly and to perfection. Invest in a good-quality slow cooker that has a timer, temperature control, and is the right size for the amount of food you're cooking. Choose a slow cooker that will hold enough gumbo to serve your family or guests without overcrowding it.

Tip #3: Brown the Meat

While not essential, browning the meat before adding it to the slow cooker can add an extra layer of flavor and texture to Anita's Easy Slow Cooker Gumbo recipe. When you roast the meat before putting it into the slow cooker, it will reduce the fat from the meat, making it much healthier while also adding a crispy texture to the final dish.

Tip #4: Don't Skim on the Roux

Roux is a crucial ingredient in gumbo, and it plays a vital role in the recipe. When done right, roux adds a thick and silky texture to the dish, making it more hearty and flavorful. Be careful when making your roux, as undercooking it will give your gumbo a raw flour taste, while overcooking will have you starting all over again. Take time to ensure that the roux is done to perfection and will not affect the overall taste of your Anita's Easy Slow Cooker Gumbo.

Tip #5: Invest in Good Quality Spices

Spices are what give gumbo its distinct flavor, and good quality spices are essential to ensure that Anita's Easy Slow Cooker Gumbo recipe is not bland. The spice blend is unique to gumbo recipes, so it's essential to get it right. Invest in a good quality blend of dried spices like cayenne pepper, smoked paprika, thyme, and gumbo file powder. These spices will enhance the flavors of your gumbo recipe and make it more delectable.

Tip #6: Add Your Vegetables Towards the End of Cooking

Anita's Easy Slow Cooker Gumbo recipe includes vegetables like onions, pepper, and okra, which have a tendency to cook quickly. When you add them at the beginning of cooking, there's a risk that they will turn soft, mushy, and disintegrate. To avoid this from happening, add the vegetables towards the end of cooking. They will come out al dente, have a little bit of crunch, retain their colors, and flavors.

Tip #7: Serve with the Right Accompaniments

The accompaniments that you serve with Anita's Easy Slow Cooker Gumbo recipe can either make or break the dish. The perfect accompaniment brings out the best in the gumbo, balancing the flavors and textures. Commonly used options include boiled rice, cornbread, salad, and coleslaw. Experiment with varying accompaniments to find the perfect pairing for this delicious meal.

Conclusion:

Anita's Easy Slow Cooker Gumbo recipe provides an excellent option for those who want a scrumptious meal without spending hours in the kitchen. By using fresh ingredients, investing in a good slow cooker, browning the meat, not skimming on the roux, investing in good quality spices, adding vegetables towards the end of cooking, and serving with the right accompaniments, you can make a delicious meal that your family and friends will love. Follow these valuable tips to make Anita's Easy Slow Cooker Gumbo recipe a classic dish in your home.
