Time 2h

Yield 10

Number Of Ingredients 10

3 cups all-purpose flour, divided
¼ cup white sugar
1 teaspoon salt
1 (.25 ounce) package rapid rise yeast
⅔ cup milk
1 teaspoon anise extract
2 tablespoons butter at room temperature
2 eggs
1 egg, beaten
½ tablespoon colored candy decorating dragees, or as desired

Steps:

  • Mix 1 cup of flour with sugar, salt, and yeast in a bowl, stir well. Place milk and anise extract into a small saucepan over low heat, and warm to about 110 degrees F (43 degrees C). Make a well in the center of the flour mixture with your hand, and pour in the milk mixture; swirl with your hand in a circular motion to combine the flour mixture with the milk mixture. Mix in butter and eggs, one at a time, then mix in remaining flour until dough begins to pull together.
  • Turn the dough out onto a floured work surface, and knead until soft but elastic, about 8 minutes. Cover with a damp cloth, and let dough rest for 10 minutes; cut dough into halves.
  • On floured work surface, roll each half into a ball, then shape the balls into 2 long pieces, about 1 1/2 inches thick and 18 to 20 inches long. Pinch the 2 top ends together, and loosely twist the pieces to form a twisted loaf; pinch the bottom ends together, and tuck the two ends underneath the loaf. (Alternately, form the twist into a ring, and pinch the ends together.)
  • Grease a baking sheet, lay the loaf onto the prepared sheet, and cover with a damp towel; let rise until doubled, about 1 hour. Brush loaf with beaten egg, and sprinkle with colored decorating dragees.
  • Preheat oven to 350 degrees F (175 degrees C). Bake the decorated loaf in the preheated oven until golden, 20 to 25 minutes. Watch closely towards the end of the baking time that the bread does not begin to burn. Transfer to wire rack immediately after baking to cool.

ITALIAN ANISE EASTER BREAD

Italian Anise Easter Bread image

Making this bread every Easter has been a tradition for my family. It is worth the work at least once a year. Great sliced and toasted with butter for breakfast or just plain. I have recently found that using bread flour helps the bread rise better and I have been able to half this recipe without a problem. You can use butter in place of the Crisco if you wish. Please note it should be 3 .25 oz envelopes yeast, it looks in the way the ingredients came up that its just one envelope but it should be three.

Time 9h

Yield 5-6 loaves, 60 serving(s)

Number Of Ingredients 11

12 eggs
2 1/2 cups sugar
1/2 cup melted butter
1/2 cup Crisco
1/2 cup oil
1/2 cup milk
3 teaspoons vanilla

16 -20 cups flour (almost 5 lbs.)
3 tablespoons anise seeds

Steps:

  • In mixer bowl beat eggs. Add sugar, butter, crisco, oil, milk, and vanilla.

  • Add flour one cup at a time until mixture is unmanageable. Transfer into LARGE pan (Dishpan works well.) and work in remaining flour, kneading with hands.
  • Knead until you are too tired to knead any more (half hour?) and then oil top of dough ball, cover, and let rise in warm place 6 hours or overnight.
  • Grease 6 loaf pans. Separate dough into 6 parts and knead each again. Cover with towels and let rise in warm place another couple of hours.
  • Bake 1 hour at 275 degrees. Do not underbake or they will be hard as a rock. (Top should be lightly browned.).

ITALIAN ANISE BREAD

Italian Anise Bread image

My family has been making this Easter bread for generations. It's origins are in a family bakery owned by my great-great aunts off the boat from Italy. My mom and I are the only remaining individuals who know how to make this, so I'm posting it hoping to share it with others. It is made the old world way, so it is not quick, but it is delicious and well worth the work and wait.

Easter is a time when families come together, share meals, and make cherished memories. One of the Easter traditions is to bake sweet and delicious Easter bread. Anise Easter bread, also known as paska, is a soft and fluffy bread that is slightly sweet with a unique anise flavor. Making anise Easter bread at home can be easy, especially with the help of a bread machine. In this article, we will talk about valuable tips that you should keep in mind when making anise Easter bread in a bread machine.

1. Use Quality Ingredients

Using quality ingredients is the first and foremost rule of baking. When making anise Easter bread, make sure that you use fresh and high-quality ingredients. Use fresh yeast, high-quality flour, and organic eggs. Also, make sure that all your ingredients are at room temperature before adding them to the bread machine.

2. Follow the Recipe

When making anise Easter bread in a bread machine, it is essential to follow the recipe. Follow the instructions carefully, measure the ingredients accurately, and set the machine according to the recipe's directions. Do not try to alter the recipe, as bread baking is a science and requires precise measurements and timings.

3. Use Bread Flour

Use bread flour instead of all-purpose flour to make anise Easter bread in a bread machine. Bread flour has a higher protein content than all-purpose flour, which gives the bread a better structure and texture. The higher protein content in bread flour also results in a chewy and crusty texture, which is perfect for anise Easter bread.

4. Don't Be Afraid of the Anise Flavor

Anise is a unique and strong flavor that might not be everyone's cup of tea. However, anise is an essential ingredient in anise Easter bread, and you should not be afraid of the flavor. The anise flavor provides a signature taste to anise Easter bread, and without it, the bread will not have the same flavor profile.

5. Use Lukewarm Water

When making anise Easter bread in a bread machine, make sure that you use lukewarm water instead of cold or hot water. Lukewarm water helps activate the yeast and also helps the dough rise better. The ideal temperature for the water is between 105°F and 110°F.

6. Add Ingredients in the Right Order

When adding ingredients to the bread machine, make sure that you add them in the right order. Typically, you will need to add wet ingredients first, followed by dry ingredients, yeast, and then the anise seeds. By adding ingredients in the correct order, you will get a better mixed and kneaded dough that rises correctly.

7. Use the Dough Setting

Most bread machines come with different settings, such as a basic setting, a French bread setting, and a dough setting. When making anise Easter bread, use the dough setting as it allows the dough to rise twice, resulting in a more flavorful and soft bread.

8. Let the Dough Rise Twice

To get a fluffy and delicious anise Easter bread, it is necessary to let the dough rise twice. The first rise takes place in the bread machine, and the second rise takes place after the dough has been shaped and placed in a baking pan. Let the dough rise for at least an hour before baking it.

9. Brush with Egg Wash

To get a golden and shiny crust on your anise Easter bread, brush the top of the dough with egg wash before baking it. Egg wash is a mixture of beaten egg and a tablespoon of water or milk. Brush the egg wash gently over the dough, and it will create a beautiful and shiny crust.

10. Bake at the Right Temperature

Bake anise Easter bread in a preheated oven at 350°F for 30-40 minutes. Keep an eye on the bread and take it out when the crust is golden brown and the bread sounds hollow when tapped. Let the bread cool for a few minutes before slicing and serving.

Conclusion

Making anise Easter bread in a bread machine is easy and straightforward. Follow these valuable tips, use quality ingredients, and let the dough rise twice to get a soft and fluffy bread with a unique anise flavor. With these tips, you will be able to impress your family and friends with a delicious and homemade anise Easter bread.
