Angel Hair Pasta with Lobster image

2 lobster tails (8 to 10 ounces each)
2 garlic cloves, minced
3 tablespoons olive oil
1/2 cup white wine or chicken broth
2 tablespoons tomato puree
1/2 teaspoon salt
1/4 teaspoon pepper
8 ounces uncooked angel hair pasta
1 cup fresh arugula or baby spinach, coarsely chopped
2 tablespoons lemon juice
1 tablespoon grated lemon zest
Shredded Romano or Parmesan cheese, optional

Steps:

  • Carefully remove lobster meat from shells; cut into 1-in. pieces and set aside., In a large skillet, saute garlic in oil until for 1 minute. Add the wine, tomato puree, salt and pepper. Bring to a boil over medium heat. Reduce heat. Stir in lobster; simmer, uncovered, for 5-6 minutes or until lobster is firm and opaque. , Meanwhile, cook pasta according to package directions. Drain pasta; add to lobster mixture and toss to coat. Stir in the arugula, lemon juice and zest; cook for 1-2 minutes or until arugula is wilted. Garnish with cheese if desired.,

Came up with this one a few summers ago when I wanted to impress a newly acquired "beau". He loved it, I hated him ....I dumped him but kept the recipe. Creamy & cheesy, this one isn't low in calories but it is pretty quick. Basically an Alfredo recipe but really garlic-ed up. I've also made this w/crayfish once & it was just as good.

1/4 lb salted butter
2 tablespoons olive oil
1/4 cup chopped garlic
1 pint heavy cream
8 ounces freshly grated parmesan cheese (NOT "sprinkle cheese" or parmesan in a can-freshly grated is best; can use bagged shredded if need b)
1/2 lb fresh shrimp, cleaned & deveined
1/2 lb lobster, cut into bite size pieces
1/4 teaspoon ground nutmeg (fresh ground is best)
1 teaspoon fresh lemon juice
salt & pepper
1/4 cup fresh basil, chopped
1 lb cooked pasta, of your choice (I usually use penne or fusilli)

Steps:

  • In large skillet slowly melt the butter over medium-high heat.
  • While it's melting add the olive oil (this should keep it from burning).
  • Butter/oil should be bubbly but not browned.
  • Brown the garlic in the butter/olive oil, tossing to keep color even.
  • Be careful not to burn.
  • Lower heat slightly and add the heavy cream& nutmeg.
  • Stir, scraping bottom of the pan.
  • Simmer for 3 minutes, stirring OFTEN.
  • Once the cream has been incorporated thoroughly, add the cheese a little bit at a time.
  • Before adding more cheese, make sure the last bit has melted into the cream mixture.
  • Add the shrimp& lobster.
  • This should cook fairly quickly.
  • Salt& pepper to taste& toss w/cooked pasta& chopped basil.
  • Excellent in the summer served with May Wine or any slightly sweet white wine.
  • Also great with Peach Iced tea.

12 ounces uncooked angel hair pasta
1/2 pound uncooked medium shrimp, peeled and deveined
2 tablespoons olive oil
2 garlic cloves, minced
2-1/2 pounds fresh tomatoes (about 8 medium), chopped
1/4 cup reduced-sodium chicken broth
1 teaspoon sugar
1 teaspoon reduced-sodium chicken bouillon granules
1/2 teaspoon salt
1/8 teaspoon pepper
1 package (8 ounces) imitation crabmeat, chopped

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute shrimp in oil for 5 minutes or until shrimp turn pink. Add garlic; cook 1 minute longer. Remove and keep warm., In the same skillet, combine the tomatoes, broth, sugar, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Stir in crab and reserved shrimp; heat through. Drain pasta; serve with seafood mixture.

This is a copycat recipe, but it's delicious. I used a pinot grigio wine but you could substitute chicken broth if you didn't want to use alcohol.

1/3 cup extra virgin olive oil
3 garlic cloves (I added more!)
1 lb shrimp, peeled, deveined and tails removed
2/3 cup clam juice (or chicken broth)
1/3 cup white wine
1 cup heavy cream
1/2 cup parmesan cheese, freshly grated
1/4 teaspoon dried basil, crushed
1/4 teaspoon dried oregano, crushed
8 ounces pasta, cooked and drained, I used linguine

Steps:

  • Heat oil in large skillet over medium heat. Add garlic; reduce heat to low. Simmer until garlic is tender.
  • Add shrimp and cook over medium-low heat until opaque. Remove, reserve liquid in pan.
  • Add clam juice (or chicken broth) and bring to a boil.
  • Add wine; cook over medium high heat for three (3) minutes, stirring constantly.
  • Reduce heat to low; add cream, stirring constantly.
  • Add cheese, stirring until smooth. Cook until thickened.
  • Add shrimp back in to sauce. Heat thoroughly.
  • Add remaining ingredients except pasta.
  • Put pasta in a large bowl and pour sauce over pasta; toss gently to coat.
  • Serve with additional grated parmesan cheese.

CREAMY SEAFOOD WITH ANGEL HAIR PASTA



Creamy Seafood With Angel Hair Pasta image

Since I live off the coast of North Carolina I am always looking for seafood recipes. This is not only great it is VERY easy to prepare. The original recipe came from one of my favorite cookbooks, "Cook Healthy, Cook Quick". It called for lobster but I have substituted all types of seafood, (whatever I can find fresh!) and they all taste wonderful!! Serve with a salad and bread for a great light summer time meal!!

8 ounces fresh seafood (shrimp, scallops, lobster or crabmeat..even imitation crabmeat will work)
8 ounces angel hair pasta, uncooked
3/4 cup sliced fresh mushrooms
1/3 cup chopped green onion
1/3 cup dry white wine
1 clove garlic, minced
2 tablespoons reduced-calorie stick margarine
2 tablespoons flour
1 cup skim milk
1/3 cup nonfat sour cream
2 tablespoons grated parmesan cheese
1/2 teaspoon paprika

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain well.
  • Set aside and keep warm.
  • Combine mushrooms, green onions, white wine and garlic in a large nonstick skillet.
  • Bring to a boil.
  • Reduce heat, and simmer, uncovered until liquid evaporates.
  • Add margarine, stirring to melt.
  • Add flour and cook stirring constantly for 1 minute.
  • Gradually stir in milk.
  • Cook over medium heat, stirring constantly until mixture thickens and begins to boil.
  • Stir in your choice of seafood and sour cream; cook an additional 2-4 minutes until seafood is opaque and thorougly heated.
  • Spoon over pasta; sprinkle with cheese and paprika.

This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

½ (16 ounce) package angel hair pasta
¼ cup butter, divided
1 (16 ounce) package frozen peeled-and-deveined shrimp
½ cup diced onion
2 teaspoons minced garlic
¾ cup diced tomatoes
1 bunch fresh asparagus spears, trimmed and cut into 1-inch pieces
salt to taste
¼ cup grated Parmesan cheese, or to taste
4 wedges lemon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain, reserving 1 cup of the water.
  • Melt 1 tablespoon in a large skillet over high heat. Saute shrimp in hot butter until no longer pink, about 5 minutes. Remove shrimp with a slotted spoon to a bowl, retaining liquid in the skillet.
  • Reduce heat to medium-high. Cook onion and garlic in the retained liquid in the skillet until the onions are translucent 5 to 7 minutes. Stir tomatoes into the onion mixture; cook and stir until the tomatoes soften, about 5 minutes.
  • Stir asparagus into the tomato mixture and add the reserved water from cooking the pasta; bring liquid to a simmer and cook until the asparagus is tender, about 5 minutes. Add the shrimp and angel hair pasta; stir. Cook until the shrimp is completely opaque in the middle, 2 to 3 minutes more. Season with salt and garnish with Parmesan cheese and lemon wedges.
