Yield 4

Number Of Ingredients 9

½ (16 ounce) package angel hair pasta
1 ½ medium lemons
1 cup chicken stock, or more as needed
2 tablespoons salted butter, divided
1 pound uncooked shrimp, shelled and deveined
1 teaspoon dried parsley, or to taste
salt and ground black pepper to taste
2 medium tomatoes, cubed
1 cup shredded Parmesan cheese, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes.

  • Preheat a skillet over medium-high heat. Add enough chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter with shrimp and lemon slices. Add parsley, salt, and pepper; cook shrimp until they are bright pink on the outside and the meat is opaque, about 4 minutes. Turn heat off, add tomatoes, and cover with a lid until the heat softens the tomatoes.
  • Drain pasta and return to its pan. Add shrimp and tomato mixture and mix to combine. You may take out the lemon slices and squeeze the juice out of them or simply keep them mixed in.
  • Add more chicken stock to cover the bottom of the skillet. Add 1 tablespoon butter, more parsley, and the reserved lemon juice. Let the butter melt and simmer, then pour sauce into the pasta along with Parmesan cheese. Stir until fully combined.

SAUTEED SHRIMP WITH LEMON CAPER CREAM SAUCE ON ANGEL HAIR PASTA

Sauteed Shrimp With Lemon Caper Cream Sauce on Angel Hair Pasta image

I got this recipe from the Olive Garden website. I'm not a big fan of capers, so they were omitted, but I didn't want to change the original ingredient list. This stuff is incredible! You may be tempted to try a different type of pasta, but I believe to achieve the proper delicate nature of this dish, you need to use the specified angel hair pasta.

Choosing the Right Shrimp When making this dish, it's essential to choose high-quality shrimp. Make sure to purchase shrimp that are fresh, firm, and plump. You can either use precooked or raw shrimp, depending on your preference. If using raw shrimp, be sure to cook them thoroughly before adding them to the dish. Seasoning the Shrimp To ensure that the shrimp are flavorful and delicious, it's essential to season them properly. You can use a simple mixture of salt and pepper, or you can get creative with additional seasonings such as paprika, garlic powder, or cayenne pepper. If you have time, marinate the shrimp in your preferred seasoning mixture for at least 30 minutes before cooking. Preparing the Pasta Angel hair pasta cooks quickly, so it's essential to keep an eye on it to avoid overcooking. Be sure to cook the pasta in a large pot of boiling, salted water until it's tender but still slightly firm to the bite. Once cooked, immediately drain the pasta and rinse it with cold water to stop the cooking process. Toss the pasta with a little bit of olive oil to prevent it from sticking together. Bringing Everything Together To assemble the dish, add the cooked shrimp to the skillet with the creamy lemon caper sauce and gently stir to combine. Then, add the cooked angel hair pasta to the skillet and toss everything together until the pasta is coated with the sauce. Serve the pasta with some chopped parsley and grated Parmesan cheese for added flavor. Alternative Ingredients If you don't like shrimp, you can substitute it with other seafood such as scallops, crab, or lobster. You can also add some vegetables to the dish, such as cherry tomatoes, spinach, or bell peppers.
