Time 40m

Yield 2

Number Of Ingredients 14

½ pound asparagus spears, trimmed and bottom thirds thinly peeled
3 tablespoons unsalted butter
¼ cup chopped pecans
2 (4 ounce) fillets salmon
salt and ground black pepper to taste
2 tablespoons olive oil
½ lemon, halved (juice only)
⅓ (8 ounce) package angel hair pasta
2 tablespoons butter
1 tablespoon minced parsley
1 tablespoon chopped fresh basil
2 tablespoons butter
1 tablespoon Dijon mustard
½ lemon, halved (juice only)

Steps:

  • Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
  • Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
  • Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
  • Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
  • Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
  • Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
  • To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.
  • To serve, divide angel hair pasta between two plates, top each serving of pasta with half the asparagus and pecans, and arrange a fillet over the asparagus. Spoon Dijon dressing over fillets to serve.

Angel hair pasta with salmon is an easy, quick, and delicious recipe to make. It is a perfect dish for busy weeknights where you want to prepare something appetizing in no time. The delicate and thin pasta, combined with the savory salmon, creates a light yet satisfying meal that will leave you wanting more. In this article, we will share some valuable tips to help you make the perfect angel hair pasta with salmon recipe. Tip 1: Choosing the Right Salmon Choosing the right salmon for your recipe is crucial for the taste and texture of the dish. Always go for fresh salmon, if possible, and avoid frozen or canned salmon. You can choose between wild or farmed salmon, depending on your preference. Wild salmon has a more robust flavor and is often leaner, which makes it an excellent choice for those who are watching their calorie intake. On the other hand, farmed salmon is more readily available and often has a more delicate flavor than wild salmon. Tip 2: Preparing the Salmon Before cooking the salmon, make sure to remove any bones, and cut it into even portions. You can leave the skin on or remove it, depending on your preference. If you leave the skin on, make sure to score it before cooking. This will prevent the skin from curling up and ensure that the salmon cooks evenly. Tip 3: Cooking the Salmon When cooking the salmon, it's essential to handle it delicately to avoid overcooking or undercooking. A good rule of thumb is to cook the salmon for 3-4 minutes on each side for every inch of thickness. You can also check the internal temperature with a meat thermometer. The temperature should be around 145°F for the salmon to be fully cooked. Overcooking the salmon can result in a dry and rubbery texture, while undercooking it can cause foodborne illness. There are different methods for cooking salmon, including grilling, baking, and pan-frying. Grilling is a popular choice for its smoky flavor, but baking and pan-frying can be quicker and more convenient for weeknight dinners. If you're baking or pan-frying the salmon, always preheat the oven or the pan before adding the salmon. This will prevent it from sticking and help it cook more evenly. Tip 4: Preparing the Pasta Angel hair pasta cooks quickly, usually in 3-4 minutes, so it's crucial to be attentive when cooking it. Fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Once the water is boiling, add the pasta and stir occasionally to prevent it from clumping. Cook the pasta for 3-4 minutes or until it's al dente, meaning it's cooked but still firm to the bite. Drain the pasta well and rinse it under cold water to stop the cooking process. Tip 5: Sauce and Ingredients Angel hair pasta with salmon can be versatile in terms of the sauce and ingredients. A classic recipe is to toss the pasta with olive oil, garlic, lemon juice, and fresh herbs such as parsley or basil. You can also add some chopped tomatoes, capers, or olives for extra flavor. Another option is to create a creamy sauce by mixing some heavy cream, parmesan cheese, and lemon zest. The key is not to overwhelm the delicate flavor of the salmon and pasta with too many ingredients. Tip 6: Presentation Finally, presentation is essential to make your angel hair pasta with salmon recipe look appealing and appetizing. You can garnish the dish with some fresh herbs or a slice of lemon. You can also add some grated parmesan cheese on top for extra flavor. Another tip is to serve the dish in a shallow bowl or a plate with raised sides to contain the sauce. Conclusion: Angel hair pasta with salmon is a delicious and easy dish to make. By following these valuable tips, you can ensure that your recipe turns out perfect every time. Choosing the right salmon, handling it delicately, and cooking it correctly is crucial to creating the perfect dish. Don't forget about the pasta, which should be cooked al dente, and the sauce that should enhance the flavors without overpowering them. Finally, presentation is key to making your dish look attractive and appetizing. With these tips, you'll be able to create a delicious and satisfying meal that everyone will love.
