BLUSHING ANGEL HAIR PASTA

Provided by Alex Guarnaschelli

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 8

3 tablespoons extra-virgin olive oil
4 large cloves garlic, grated
Kosher salt
1/3 cup tomato paste
1 pint cherry tomatoes, halved
1 cup heavy cream
10 ounces angel hair pasta
1/2 cup finely grated pecorino

Steps:

  • In a large skillet, warm the olive oil and garlic over medium heat. Add a pinch of salt and 2 tablespoons water. Simmer until the water cooks out and the garlic becomes tender, about 2 minutes. Stir in the tomato paste with 2 more tablespoons water and cook to "fry" the paste for a minute in the oil, stirring. Add the cherry tomatoes and cook over medium heat until they soften, 1 to 2 minutes. Add the cream. Season with salt to taste. Keep warm.
  • In a large pot, bring 4 quarts water to a rolling boil. Add a generous handful of salt. Bring the water back up to a boil. Add the pasta and cook, stirring with a slotted spoon to make sure it does not clump or stick to the bottom, until al dente, 3 to 4 minutes. Reserve 1/2 cup pasta cooking liquid and drain the pasta in a large colander.
  • Add the hot pasta right from the colander to the skillet and toss to coat with the cream. Shut the heat off and allow the pasta to rest for 2 minutes. If too thin, gently warm and reduce over low heat for 1 to 2 additional minutes. If it becomes too thick, simply thin it out with some of the reserved pasta cooking liquid. Serve topped with the cheese.

What is Angel Hair Pasta?

Angel hair pasta, also known as capellini, is a thin, delicate pasta that has long, thin strands. It is made from durum wheat semolina, which gives it a slightly nutty flavor and a satisfying chewiness. Angel hair pasta cooks quickly, usually in just three to four minutes, and it pairs well with light sauces and delicate flavors.

What is Creamy Mushroom Sauce?

Creamy mushroom sauce is a rich, savory sauce made from mushrooms, cream, white wine, and herbs. This sauce is perfect for pasta because it has a smooth, velvety texture that clings to the pasta and complements its delicate flavor. The mushrooms add a meaty, earthy depth to the sauce, while the cream gives it a luxurious mouthfeel. The wine and herbs add bright, fresh notes to balance out the richness of the sauce.

Why is Angel Hair Pasta with Creamy Mushroom Sauce a Great Dish?

Angel hair pasta with creamy mushroom sauce is a fantastic dish because it is both elegant and easy to make. The delicate strands of the pasta and the rich, velvety sauce create a harmonious, comforting texture that is perfect for a cozy dinner at home or a special occasion. The mushrooms add a layer of depth and umami flavor, while the cream and wine give the sauce a bright, tangy finish.
Benefits of Angel Hair Pasta with Creamy Mushroom Sauce
- Easy to make: Angel hair pasta cooks quickly and the sauce comes together in just a few minutes, making this dish perfect for a weeknight dinner or a last-minute meal. - Healthy: Angel hair pasta is a healthier alternative to other types of pasta because it is lower in calories, fat, and sodium. The creamy mushroom sauce is rich, but you can use low-fat cream or substitute with non-dairy alternatives for a lighter option. - Versatile: Angel hair pasta can be paired with a wide variety of sauces, so you can switch up the flavors and create different dishes every time you make it.
Tips for Making Angel Hair Pasta with Creamy Mushroom Sauce
- Use fresh, high-quality ingredients for the best flavor. Fresh mushrooms and herbs will add more depth to the sauce. - Cook the pasta al dente (firm to the bite) to prevent it from becoming mushy or overcooked. - Reserve some pasta water to use in the sauce. The starch in the water will help thicken the sauce and make it creamier. - Add some grated parmesan cheese or chopped parsley to the dish for an extra burst of flavor and color.
Final Thoughts
Angel hair pasta with creamy mushroom sauce is a classic dish that is both elegant and easy. The delicate strands of the pasta and the rich, velvety sauce create a harmonious flavor that is perfect for a comforting and satisfying meal. With its versatility and healthy benefits, this dish is a great addition to any recipe collection.
Angel hair pasta with creamy mushroom sauce is a popular Italian dish that is easy to make and always delicious. When preparing this dish, it is important to keep a few tips in mind. In this article, we will discuss valuable tips for making angel hair pasta with creamy mushroom sauce recipes.

Choose the Right Ingredients

The first step in making angel hair pasta with creamy mushroom sauce is to choose the right ingredients. When selecting mushrooms for the sauce, opt for fresh mushrooms instead of canned ones. Fresh mushrooms have a better flavor and texture than canned mushrooms. You can use a variety of types of mushrooms, such as button mushrooms, shiitake mushrooms, or porcini mushrooms. For the creamy part of the sauce, heavy cream is the way to go. Do not substitute with a lighter cream as it will not produce the same creamy texture. Parmesan cheese is also an essential ingredient for the sauce. The cheese adds a nutty flavor and complements the mushrooms' earthiness.

Cook the Pasta Correctly

Angel hair pasta cooks quickly, usually in about 4-5 minutes. It's essential to monitor the pasta and not overcook it, as it will become mushy. When cooking the pasta, add a generous amount of salt to the boiling water to flavor the pasta. Once the pasta is cooked, drain it and rinse it in cold water to stop the cooking process. This step is crucial as it prevents the pasta from continuing to cook and becoming mushy.

Preparing the Mushroom Sauce

When preparing the mushroom sauce, start by sautéing the mushrooms in butter until they are tender and have released their liquid. It's essential to cook the mushrooms until all the liquid has evaporated, as it concentrates their flavor. Next, add garlic to the pan and cook until fragrant. Garlic adds flavor to the sauce and complements the mushrooms' earthiness. After the garlic has cooked for a minute, deglaze the pan with white wine. The wine adds acidity to the sauce and complements the mushrooms. Cook until the wine has evaporated. Then, add heavy cream and parmesan cheese to the pan and stir to combine. Cook the sauce until it thickens and coats the back of a spoon. Lastly, season with salt and pepper to taste.

Additions to the Dish

While the traditional angel hair pasta with creamy mushroom sauce recipe is delicious, you can also add additional ingredients to elevate the dish. For example, you can add cooked chicken or shrimp to the dish for added protein. Herbs such as thyme or parsley can also add freshness and balance the dish's flavors.

Serving the Dish

When serving angel hair pasta with creamy mushroom sauce, it's essential to have everything prepared and hot. Reheat the pasta in hot water or briefly in the microwave before serving. Pour the sauce over the pasta and toss to combine. Garnish the dish with fresh herbs and parmesan cheese. Serve immediately to enjoy the dish while it's hot.

Conclusion

In conclusion, angel hair pasta with creamy mushroom sauce is a delicious and easy-to-make Italian dish. When making this dish, ensure that you choose the right ingredients, cook the pasta correctly, prepare the mushroom sauce correctly, and add additional ingredients to elevate the dish's flavors. With these valuable tips in mind, you'll be able to make the perfect Angel hair pasta with creamy mushroom sauce.
