Time 45m

Yield 4

Number Of Ingredients 10

1 ½ pounds broccoli
2 tablespoons olive oil
¼ cup butter
6 cloves garlic, minced
1 teaspoon red pepper flakes
3 cups chicken stock
salt to taste
1 pound angel hair pasta
½ cup freshly shredded Parmigiano-Reggiano cheese, plus a little more for garnish
1 pinch red pepper flakes for garnish, or to taste

Steps:

  • Hold a sharp knife at a 45-degree angle and cut the florets from the broccoli stems into a bowl. Chop remaining stems into small pieces and transfer stems to a separate bowl.
  • Heat 2 tablespoons olive oil with butter in a skillet over medium heat and cook garlic in the hot oil-butter mixture, stirring often, until garlic is soft but not browned. Sprinkle in 1 teaspoon red pepper flakes and salt. Pour chicken stock into skillet and bring to a simmer. Stir broccoli stems into the stock mixture and simmer until tender, 10 to 12 minutes. Add a little water or stock if mixture starts to dry out.
  • Stir broccoli florets into skillet and cook broccoli sauce until florets are bright green and slightly tender, 3 to 4 minutes.

Time 48m

Yield 4 to 6 servings

Number Of Ingredients 11

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

ANGEL HAIR PASTA WITH SIMPLE GARLIC & BASIL

Angel Hair Pasta With Simple Garlic & Basil image

I adore angel hair pasta, and such a fine pasta doesn't always need a big sauce. Serve with some kind of cheese or "cheez" if you wish, sprinkled on top. My children like it with sliced olives. There are many versions of this simple recipe, this one I adapted from www.cookingnook.com. This would probably be good for 4 as a side dish or 4 for lunch with a salad.

Time 35m

Yield 3-4 serving(s)

Number Of Ingredients 9

2 tablespoons olive oil
2 garlic cloves, minced
1/2 cup dry white wine
1 lemon, juice of
1 tomatoes, diced
sea salt, to taste
8 ounces angel hair pasta
1/4 cup fresh basil, roughly chopped
pepper, to taste

Steps:

  • Bring a large pot of salted water to boil over high heat.
  • Meanwhile, heat the olive oil up a large saute pan over medium heat. Once warm add the garlic and cook until it just begins to brown -- too long or too high and the garlic will burn.
  • Remove the pan from the heat and deglaze by pouring in the wine. Return the pan to the heat and cook for a few minutes. The wine should reduce by about half. Add in lemon juice, chopped tomato, and sea salt to taste. Stir once or twice then remove the pan from the heat again and set it aside to wait for the pasta.
  • Add the pasta to the boiling water and cook until desired tenderness, following package directions. Drain, then add the cooked pasta to the pan with the garlic & tomato mixture, along with the basil and some freshly ground pepper. Toss well, (if your pan isn't big enough, just do the tossing in a large serving bowl).
  • *Tip: 4 ounces of uncooked pasta (spaghetti, angel hair, vermicelli, fettuccine or linguine) = a 1-inch diameter bunch of dry pasta = 2 cups cooked pasta. Generally they say 2 ounces of pasta is one serving, but for larger appetites this might not be enough.

What is Angel Hair Pasta in Garlic Sauce?

Angel hair pasta in garlic sauce is a classic Italian dish that is as versatile as it is delicious. The dish consists of long, thin noodles of pasta made from wheat flour and eggs, cooked al dente (firm but not hard) and coated in a savory garlic sauce. The pasta itself is delicate and light, while the garlic sauce provides a satisfying depth of flavor that is sure to please any palate.
Ingredients
To create the perfect angel hair pasta in garlic sauce recipe, you'll need a few key ingredients. For the pasta, you'll need angel hair pasta, which is sometimes called capellini, as well as salt, water, and olive oil. For the garlic sauce, you'll need garlic (of course), butter, chicken broth, heavy cream, grated parmesan cheese, and fresh parsley for garnish.
Preparation
To begin preparing your angel hair pasta in garlic sauce recipe, start by boiling a large pot of salted water for the pasta. Once the water is boiling, add the angel hair pasta and a splash of olive oil to the pot, and cook for approximately 3-4 minutes, or until the pasta is tender but still firm to the bite. Drain the pasta and set it aside, reserving approximately 1/2 cup of the cooking water. While the pasta is cooking, prepare the garlic sauce. Melt the butter in a large skillet over medium heat, and add the garlic, cooking for 1-2 minutes until fragrant. Be careful not to burn the garlic, as this can quickly ruin the flavor of the dish. Next, add the chicken broth to the skillet and simmer the mixture for 3-4 minutes to allow the flavors to meld together. Add the cooked pasta to the skillet with the garlic sauce, along with the reserved cooking water, heavy cream, and grated parmesan cheese. Toss the pasta to coat it thoroughly in the sauce, and continue cooking for an additional 2-3 minutes, or until the sauce has thickened slightly and the pasta is warmed through. Finally, transfer the pasta to a serving dish and garnish with fresh parsley. Serve hot, and enjoy!
Variations
While the classic angel hair pasta in garlic sauce recipe is sure to please, there are many different variations you can try to switch up the flavor profile or add extra ingredients to the dish. One popular variation is to add shrimp to the garlic sauce, creating a savory seafood pasta that is perfect for dinner parties or special occasions. Another option is to add vegetables such as broccoli, spinach, or diced tomatoes to the skillet with the garlic sauce, creating a healthier and more colorful version of the dish. You can also experiment with different herbs and spices, such as adding oregano or red pepper flakes to the sauce for a bit of extra heat.
Serving Suggestions
Angel hair pasta in garlic sauce is a versatile dish that can be served with a wide variety of accompaniments. A crisp green salad or freshly-baked bread are both great choices for rounding out the meal, while a glass of chilled white wine is the perfect choice to sip alongside the dish. If you're looking for a heartier meal, you can also serve the pasta with a side of roasted vegetables or grilled chicken or fish. No matter how you choose to serve it, angel hair pasta in garlic sauce is sure to become a staple in your recipe collection.

Always use fresh ingredients to get the best flavors from the dish. Fresh garlic, parsley, and extra virgin olive oil are essential components of a good garlicky sauce. Additionally, make sure to use high-quality pasta made from durum wheat semolina for a better taste and texture. Preparation of the Pasta Angel hair pasta is delicate and thin, and it cooks quickly. To avoid overcooking, follow the cooking time mentioned on the package, and test the pasta for doneness a minute before it's done. Ideally, the pasta should be cooked al dente, which means it should be firm to the bite but not hard or mushy. Once the pasta is cooked, drain it, and add a little olive oil to prevent it from sticking together. Preparation of the Garlic Sauce Garlic sauce is the heart of the dish, and it's easy to make. Heat olive oil in a pan and add minced garlic. Cook for a few seconds until it turns fragrant, but make sure not to burn it. Add salt and red pepper flakes to the garlic and oil mixture. Remove the pan from the heat and add chopped parsley. Let the sauce sit for a few minutes to let the flavors blend. Combining the Pasta and the Garlic Sauce Once the pasta is cooked and drained, it's time to combine it with the garlic sauce. Toss the pasta in the pan with the garlic sauce and parsley. Make sure that the pasta is well coated with the sauce. If it's too dry, add a little pasta water to the pan to create a silkier texture. Do not add too much water as it can dilute the flavors of the sauce. Presentation Angel hair pasta in garlic sauce is a simple and elegant dish that can be presented in different ways.
