Time 1h10m

Number Of Ingredients 7

1 cup cake flour (spooned and leveled)
1/4 teaspoon salt
12 large egg whites, room temperature
1 teaspoon cream of tartar
1 1/4 cups sugar
2 teaspoons pure vanilla extract
Berries and Cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Place flour and salt in a sieve set over a bowl; sift into bowl, and set aside. With a mixer, beat egg whites on medium-high until foamy, about 1 minute. Add cream of tartar; beat until soft peaks form. Continue to beat, gradually adding sugar; beat until stiff peaks form, about 2 minutes. Add vanilla; beat to combine.
  • Gently transfer egg-white mixture to a large, wide bowl. In four batches, using the sieve again, sift flour mixture over egg-white mixture. While turning the bowl, use a rubber spatula to fold in the mixture by cutting down the center and coming up the sides.
  • Gently spoon batter into an ungreased angel food cake pan with a removable bottom; smooth top. Cut a knife or small spatula through batter to release air bubbles. Bake until cake is golden and springs back when lightly pressed, 35 to 40 minutes. Invert pan; let cool in pan, 1 hour. Run a knife around the inside of the pan and around the tube to release cake, and unmold. Use knife to release cake from bottom of pan, and remove.

Angel Food Cake with Berry Sauce Recipes: Tips for Making a Perfect Dessert

Angel food cake is a light and fluffy dessert that is perfect for any occasion. Pairing it with a berry sauce takes it to the next level, adding a burst of tangy sweetness to the dessert. However, making an angel food cake with berry sauce can be a bit tricky. Here are valuable tips to help ensure that your dessert comes out perfectly every time.
1. Use the Right Equipment
To make the perfect angel food cake and berry sauce, you need the right equipment. For the cake, you will need an angel food cake pan. This type of pan is tall and narrow with a removable bottom. It is important to use this pan because the cake rises by clinging to the sides and cannot be flipped upside down to remove it. You can use a 9-inch or 10-inch pan depending on your preference. For the berry sauce, a blender or food processor may come in handy, but it is not necessary. Simply adding sugar to fresh or frozen berries and cooking them on the stove will produce a delicious sauce.
2. Follow the Recipe Carefully
Angel food cake is a delicate dessert that requires precision in measuring and mixing the ingredients. It is important to follow the recipe carefully and measure your ingredients accurately. A slight deviation from the recipe can cause the cake to fall or have a tough texture. Similarly, the berry sauce recipe should be followed carefully for the best results. It is important to cook the sauce until it thickens but without burning it. Overcooking the sauce can cause it to become too thick and stick to the pan.
3. Whip Your Egg Whites Properly
The key to a fluffy and light angel food cake is in the egg whites. Whipping the egg whites correctly is crucial to the success of the dessert. The egg whites must be at room temperature, and the bowl and mixer must be clean and dry. Begin whipping the egg whites on low speed and gradually increase to high speed. Whip until the egg whites form soft peaks. It is important not to over-whip the egg whites as this can cause the cake to have a dry and crumbly texture.
4. Add Sugar Gradually
After the egg whites have been whipped, it is time to add sugar. It is important to add sugar gradually, one tablespoon at a time, while whipping the egg whites. This is to ensure that the sugar is fully dissolved and does not cause the egg whites to deflate. It is also important to use superfine sugar instead of granulated sugar for the best results. This is because superfine sugar dissolves quickly, preventing it from weighing down the egg whites.
5. Be Careful When Folding Ingredients
Angel food cake requires light folding of the ingredients to ensure that the air bubbles are not deflated. It is important to use a large spatula and fold gently until the ingredients are fully incorporated. It is also essential to be cautious when adding the flour mixture. To incorporate the flour mixture into the egg whites, sprinkle it on top, and fold it in gradually. Over-mixing the ingredients can result in a tough and heavy cake.
6. Let the Cake Cool Upside Down
After the cake has finished baking, it is important to let it cool completely. This can be achieved by inverting the pan on a bottle or cooling rack, allowing the cake to cool upside down. Leaving the cake to cool upside down ensures that it retains its light and fluffy texture. Cooling the cake right side up can cause it to collapse, resulting in a dense and heavy cake.
7. Use Fresh and Ripe Berries
The berry sauce is a crucial component of the angel food cake dessert. It is important to use fresh and ripe berries for the best results. If using frozen berries, they should be thawed and drained before being added to the recipe. Additionally, the sauce should be made ahead of time and allowed to cool slightly before serving. This allows the flavors to meld and ensures that the sauce is at the right consistency for pouring over the cake.
8. Serve with Whipped Cream
To take your angel food cake with berry sauce to the next level, serve it with whipped cream. This adds a creamy and rich flavor to the dessert, complementing the tanginess of the berry sauce. It is best to use freshly whipped cream instead of store-bought for the best results. In conclusion, following these valuable tips will ensure that your angel food cake with berry sauce comes out perfectly every time. Remember to use the right equipment, follow the recipe carefully, whip your egg whites properly, add sugar gradually, be careful when folding ingredients, let the cake cool upside down, use fresh and ripe berries, and serve with whipped cream. Enjoy your light and delicious dessert!
