RICE KRISPIES DATE BALLS (AKA ANGEL COOKIES)

Rice Krispies Date Balls (Aka Angel Cookies) image

Another recipe from my Aunt's recipe clippings. This one also came from the Sept 19, 1969 Chicago Tribune originally. The clipping is crinkled with old yellow tape holding it together to make sure the recipes stayed intact. :) These are not like the typical angel cookies at all - they are little balls of dates, coconut, and Rice Krispies rolled in powdered. Don't use the prechopped dates as they aren't sticky enough - buy the whole pitted dates and chop them yourself. Also be sure to use the canned coconut..the kind that comes in bags is too dry and you will have a hard time getting the cookies to roll up otherwise.

Number Of Ingredients 6

4 tablespoons unsalted butter or 4 tablespoons margarine

  • Add cereal and coconut, stirring to combine.

CHRUSCIKI - POLISH ANGEL WING COOKIES

Chrusciki - Polish Angel Wing Cookies image

This delightful pastry was made by my Polish Grandmother every year for Christmas. Traditionally they were made for the last Thursday before Lent. They take a while to make but the time you put in to making these is well worth the reward!

Provided by Chef Shilale

Categories     Dessert

Time 2h30m

Yield 72 cookies, 36 serving(s)

Number Of Ingredients 8

2 eggs, whole (room temperature)
4 egg yolks (room temperature)
1/2 teaspoon salt
3 -3 1/2 cups all-purpose flour
1/2 cup confectioners' sugar (plus a little more for dusting)
1/4 cup butter (room temperature)
1 1/2 ounces brandy (one shot)
deep frying oil (I like to use lard for these)

Steps:

  • Using a stand mixer, whisk whole eggs, egg yolks, butter and salt until thick and lemon colored.
  • Slowly beat in the confectioner's sugar and brandy.
  • Change to the dough hook and slowly mix in the flour a 1/4 cup at a time until the dough forms and pulls away from the bowl.
  • Using the dough hook, knead the dough for 3-5 minutes. It should be thick like bread dough.
  • Keep the dough in the bowl covered with a damp towel to keep it from drying out.
  • Snip off a baseball sized piece of dough. On a floured surface, roll to 1/8 inch thick at the most!
  • Using a sharp knife cut the dough into 1 1/2 inch wide strips. Then cut the other way in a diagonal to make pieces of dough that are about 1 1/2 X 4 inches.
  • Next use your knife to cut a slit in the center of each piece.
  • To form the wing shape, take one pointy end and poke it through the slit. Very gently pull the end through the slit to form a bow shaped cookie.
  • In a heavy pot or deep skillet, heat the fat of choice (I like lard) to 350°F Use a thermometer!
  • Drop the cookies, 3 cookies at a time, into the fat. Drop 3 cookies at once not 1 at a time. The cookies will sink to the bottom at first then they will puff up and float a couple of seconds later. As soon as this happens use a couple of forks to turn them.
  • Immediately after you turn them use a deep fry strainer to remove them from the fat to drain on brown paper bags.
  • Dust the still hot cookies with confectioner's sugar and repeat, cooking 3 cookies at a time until finished.
  • Store in tightly covered, wax paper-lined tins.

I adopted this recipe and when I finally got around to making it I was very impressed! My roomates devoured these cookies and described them as a cross between short bread and sugar cookies. They have a very light taste but are a crispier cookies. A great treat!

HUNGARIAN DEEP-FRIED ANGEL WING COOKIES (CSOROGE)

Hungarian Deep-Fried Angel Wing Cookies (Csoroge) image

Wonderful crispy and light as a feather fried cookies. Always made for Hungarian weddings. These pastries would also be served with coffee after Sunday dinner.

Time 35m

Yield 30 cookies

Number Of Ingredients 9

lard (lard tastes the best, but it's not the healthiest and oil and shortening taste fine) or shortening, for deep frying (lard tastes the best, but it's not the healthiest and oil and shortening taste fine)
2 cups flour, sifted
1 tablespoon sugar
1/2 teaspoon salt
3 egg yolks, slightly beaten
1/2 cup thick sour cream
2 1/2 teaspoons whiskey or 2 1/2 teaspoons dark rum
1/2 teaspoon vanilla extract
2 -3 tablespoons powdered sugar or 2 -3 tablespoons vanilla powdered sugar, to dust cookies

Steps:

  • About 20 minutes before frying fill a deep saucepan halfway to 2/3 full of oil, lard, or shortening, and heat slowly to 365°F or follow the manufacturer's directions for set-up if using an automatic deep-fryer.
  • Sift together flour, sugar, and salt into a bowl.
  • Mix together the egg yolks, sour cream, whiskey, and vanilla, then make a well in the center of the dry mixture and pour the wet mixture inches.
  • Mix the ingredients until all of the flour is moistened.
  • Let dough rest 1-2 minutes.
  • Turn dough out onto a lightly floured surface and knead by folding opposite side over towards you, then using the heels of your hands to push the dough away, then give it a quarter turn and repeat process just until ingredients are well blended (always turn the dough in the same direction and use as little additional flour as possible).
  • Shape dough into a smooth ball and roll out on a lightly floured surface into a rectangle 1/8-inch thick (if you don't have enough space to do this, divide dough in half first, then roll out the halves seperately).
  • Use a spatula to loosen the dough, lift it slightly and sprinkle a little flour underneath anywhere the dough sticks.
  • With a floured knife cut the dough into diamond shapes about 2-inches wide at the center and 6-inches long (you can make a cardboard pattern beforehand and use that as a guide if you wish).
  • Make a 1-inch slit lengthwise at the center of each cookie, and pull one end through the opening, twisting slightly as you do.
  • Deep fry only one layer of cookies at a time (don't crowd the pan).
  • With a fork, turn the cookies several times as they fry and as they rise to the surface, but be careful not to pierce the cookie.
  • Fry until lightly browned (about 3 minutes).
  • Drain cookies over fat for a few seconds and then drain on paper towels.
  • Sprinkle cookies with powdered sugar while still hot.

HUNGARIAN ANGEL WING FRY COOKIES (CSOROGE)

Hungarian Angel Wing Fry Cookies (Csoroge) image

These cookies are those wonderfully crispy, light as a feather fried dough cookies always made for Weddings. They look so beautiful when piled high in a pyramid on a cut crystal platter. These pastries would also be made for a Sunday dinner and served with coffee after a meal of Beef Gulyas or Chicken Paprikas. It always left traces of powdered sugar on your upper lip, and sometimes on the tip of your nose.

COOKIES AND CREAM ANGEL CAKE

Cookies and Cream Angel Cake image

Oreo™ cookies add crunch to the high and light texture of a step-saving angel food cake.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 3h2m

Yield 12

1 1/4 cups cold water
3 Oreo reduced-fat chocolate creme sandwich cookies, finely crushed
1 package Betty Crocker™ fluffy white frosting mix
1/2 cup boiling water
6 Oreo reduced-fat chocolate creme sandwich cookies, cut in half

Steps:

  • Move oven rack to lowest position. Heat oven to 350°F.

  • Bake 37 to 47 minutes or until top is dark golden brown and cracks feel very dry and not sticky. Do not underbake. Immediately turn pan upside down onto glass bottle, or rest edges on 2 to 4 cans of equal height. Let stand 2 hours or until completely cool. Remove from pan by gently pulling cake away from side of pan, using fingers, taking care not to tear cake (cake will spring back to original shape.) Turn pan over; press on removable bottom of pan, or shake pan gently to remove cake.
  • Beat frosting mix and boiling water in small glass or metal bowl on low speed 30 seconds, scraping bowl constantly. Beat on high speed 5 to 7 minutes, scraping bowl occasionally, until stiff peaks form.

Whether you are making these cookies for a holiday gathering or just as a sweet treat for your family, there are a few tips that can help you create the perfect angel cookies every time. In this article, we will discuss some valuable tips that will help you make angel cookies that are sure to impress.

1. The Importance of Room Temperature Ingredients

One of the most important things to keep in mind when making angel cookies is the temperature of your ingredients. It is essential to make sure that your butter and eggs are at room temperature before you start baking. This will help the ingredients to blend together more evenly and create a smoother texture.
How to Bring Butter to Room Temperature
You can bring butter to room temperature by leaving it out on the counter for about 30 minutes. If you are in a hurry, you can also microwave the butter in short increments of 5-10 seconds until it is soft but not melted.
How to Bring Eggs to Room Temperature
To bring eggs to room temperature, you can place them in a bowl of warm water for about 10 minutes. This will help to warm them up and make them easier to mix with the other ingredients.

2. Adding the Ingredients in the Right Order

Another important tip for making angel cookies is to add the ingredients in the right order. It is important to start by creaming the butter and sugar together until they are light and fluffy. Then, beat in the egg yolks and vanilla extract. Finally, you can fold in the dry ingredients and egg whites.
Why Is the Order Important?
The order of the ingredients is important because it helps to ensure that the dough has the right texture and consistency. Creaming the butter and sugar together first helps to create air pockets in the dough which will make the cookies light and airy. Adding the egg yolks and vanilla extract next will help to bind everything together. Finally, adding the egg whites at the end will help to give the cookies their signature puffy texture.

3. Beating the Egg Whites Correctly

Beating the egg whites to the right consistency is crucial to making perfect angel cookies. You want the egg whites to be stiff and glossy but not over beaten.
How to Beat Egg Whites
To beat egg whites, you can use an electric mixer or a whisk. Start by beating the egg whites at a low speed until they start to become frothy. Then, gradually increase the speed and continue to beat until the egg whites are stiff and glossy. You will know the egg whites are done when they hold stiff peaks when the beaters are lifted.
What Happens if You Over-Beat Egg Whites?
If you over-beat the egg whites, they can become dry and crumbly. This can lead to cookies that are too dense and heavy. To avoid this, make sure to stop beating the egg whites when they reach the right consistency.

4. Using the Right Baking Sheet

Using the right baking sheet can also make a big difference in the quality of your angel cookies. You want to use a light-colored, non-stick baking sheet that is made of heavy-duty material. This will help to ensure that the cookies bake evenly and don't stick to the pan.
Why is the Right Baking Sheet Important?
The right baking sheet is important because it will help to ensure that the cookies bake evenly and don't stick to the pan. A dark-colored baking sheet can absorb more heat and cause the cookies to brown too quickly on the bottom. A non-stick baking sheet will also make it easier to remove the cookies from the pan without them sticking.

5. Measuring Accurately

Measuring your ingredients accurately is another key to making perfect angel cookies. You want to use a kitchen scale or measuring cups to make sure that you are adding the right amount of each ingredient.
How to Measure Ingredients Accurately
To measure ingredients accurately, use a kitchen scale for dry ingredients and measuring cups for liquid ingredients. Make sure to level off the measuring cups and spoon the flour into them rather than scooping it directly from the bag.
Why is Measuring Accurately Important?
Measuring accurately is important because it helps to ensure that the dough has the right consistency and the cookies turn out the way they should. Too much flour can make the dough too heavy and dense, while too little flour can make the dough too wet and sticky.

Conclusion

By keeping these valuable tips in mind, you can create perfect angel cookies every time. Remember to use room temperature ingredients, add the ingredients in the right order, beat the egg whites correctly, use the right baking sheet, and measure your ingredients accurately. With a little practice, you will be able to make delicious angel cookies that will have your friends and family coming back for more.
