BLT AND P (BACON, LEEK, TOMATO AND POTATO) SOUP
Bacon, Leek and Tomato Soup is a soup for any season! It is surprisingly light and colorful and full of vegetables. It makes a simple, flavorful, special lunch or supper that warms you up, soul and stomach. It is especially delicious on rainy days or nights! I first made this for my mom because she and I both LOVE Oscar's bacon and we wanted a whole pot full of soup that tasted like it! We ate a pot of it while watching movies curled up in the living room of the cabin.

Steps:
- Heat a medium soup pot or deep sided skillet over medium-high heat. To the hot pan add a drizzle of extra-virgin olive oil and the bacon. Cook bacon until brown and crisp. Add the chopped celery. Take peeled carrots and lay flat on cutting board. Hold each carrot at root end and use the vegetable peeler to make long, thin strips of the carrot. Chop the thin slices into small carrot bits or carrot chips, 1/2-inch wide. Add the chips to celery and stir. Cut leeks lengthwise and then into 1/2-inch half moons. Place the leeks into a colander and run under rushing cold water, separating the layers to wash away all the trapped grit. When the leeks are separated and clean, shake off water and add to celery and carrots. Stir veggies together, add a bay leaf and season with salt and pepper. While the leeks cook to wilt, 3 to 4 minutes, slice the potatoes.
- Cut each potato across into thirds. Stand each piece of potato upright and thinly slice it. The pieces will look like raw potato chips.
- Add stock to vegetables and bring to a boil. Reduce heat and add potatoes and tomatoes. Cook 8 to 10 minutes until potatoes are tender and starting to break up a bit. Add bacon and parsley and stir. Adjust seasonings. Serve immediately with crusty bread.

Andreas spicy BLT soup recipe is a great way to enjoy the flavors and spiciness of a BLT, while also enjoying the comfort of a warm soup. Here are some valuable tips for preparing Andreas spicy BLT soup recipe.
Tip #1: Use high-quality ingredients
The quality of the ingredients you use will significantly affect the taste of your soup. When preparing Andreas spicy BLT soup recipe, ensure that you use high-quality ingredients. Look for fresh vegetables like ripe tomatoes, crisp lettuce, and flavorful onions. Also, use thick, high-quality bacon with a good balance of fat and meat. The right ingredients will make a noticeable difference in the taste of your soup.
Tip #2: Experiment with the level of spiciness
Andreas spicy BLT soup recipe gets its kick from the addition of jalapenos. But the amount of jalapenos you use will depend on how much heat you can handle. Start with a small amount of jalapenos, and taste the soup to assess the heat level. If the soup isn't spicy enough for you, add more jalapenos. Remember that the amount of jalapenos you use will significantly affect the taste of your soup, so experiment until you get the right balance of heat and flavor.
Tip #3: Incorporate fresh herbs
Fresh herbs add a lot of flavor to soups. When preparing Andreas spicy BLT soup, add some fresh herbs like basil, oregano or cilantro. The herbs will complement the jalapenos and other ingredients, and also add a refreshing aroma to your soup. Chopped herbs should be added towards the end of the cooking process to maintain their freshness and flavor.
Tip #4: Use stock instead of water
The foundation of a good soup is the base. If you want to enhance the flavor of your Andreas spicy BLT soup recipe, avoid using plain water as the base. Instead, use chicken or vegetable stock. The stock will add flavor to your soup, and also provide a richer, more satisfying texture. If you don't have stock on hand, add some bouillon cubes or granules to your water when making the soup.
Tip #5: Prepare your bacon separately
Bacon is a key ingredient in Andreas spicy BLT soup recipe. To ensure that your bacon is cooked to crispy perfection, it's best to prepare it separately. Line a baking sheet with foil, and bake the bacon in the oven. Alternatively, cook the bacon in a frying pan until it's crispy. Once the bacon is done, chop it into small pieces and set it aside. Adding uncooked bacon to your soup can lead to a greasy texture, which can ruin the overall taste of the soup.
Tip #6: Don't overcook the vegetables
Overcooking vegetables can lead to a mushy texture, which can ruin the overall texture of the soup. When preparing Andreas spicy BLT soup, ensure that you don't overcook the vegetables. Tomatoes and onions should be added towards the end of the cooking process to maintain their freshness and flavor. The lettuce should be added last, right before serving to maintain its crispness.
Tip #7: Adjust the consistency of your soup
The consistency of your Andreas spicy BLT soup depends on personal preference. If you like your soup thicker, simmer it for a longer time to allow the flavors to meld. If you prefer a thinner soup, add more stock or water. Keep in mind that the soup will thicken as it cools, so be mindful of how much liquid you add while preparing the soup.
Tip #8: Garnish your soup
Garnishing your Andreas spicy BLT soup recipe is a great way to add some color and flavor to your meal. Chopped bacon, fresh herbs, and croutons are excellent garnishes for your soup. However, you can get creative and use other garnishes like shredded cheese, avocado, or sour cream. Garnishes add a personal touch to your soup, and also make it look more appetizing.
Conclusion
Andreas spicy BLT soup recipe is a flavorful and spicy twist on the classic BLT sandwich. By following the tips above, you can make a delicious and satisfying soup that will warm you up on a chilly day. Be sure to experiment with the level of spice, adjust the consistency of your soup, and garnish it to your liking.
