MRS BELLISSIMO'S ORIGINAL ANCHOR BAR CHICKEN HOT WINGS (LOW-CARB
Theresa Bellissimo is credited with creating the original Hot Wings at the Buffalo Anchor Bar. She says always fry, never bake, and never flour the wings. Hope you enjoy the original recipe! We serve it with bleu cheese dressing and celery sticks. DH gives this recipe 10 stars - I said we could only rate it up to 5 stars. I added my personal wing notes in the directions.

- 1. Chop off the tip of each chicken wing, and discard it (or save for chicken stock). Chop the wing in half (cutting at the joint) to make 2 pieces. Grind on fresh black pepper and sprinkle with salt. (here is where I vary from the recipe - I add the salt and pepper to the melted butter and hot sauce).
- 2. Heat the oil over high heat in a deep skillet, Dutch oven, or a deep-fat fryer until it starts to pop and sizzle (around 400 degrees F). Add half the chicken wings and cook until they're golden and crisp, stirring or shaking occasionally. When done, remove them to drain on paper towels and cook the remaining wings. (I fry them for 7 minutes a batch and after the last batch put them all back into the fryer for two minutes, drain and toss in the sauce).
- 3. Melt the butter over medium heat in a heavy saucepan, add the hot sauce and the 1 tablespoon of vinegar. Stir well and remove from the flame immediately. (I nuked it).
- 4. Place the chicken on a warm serving platter, pour the sauce on top, and serve. (I also vary from the recipe by tossing the wings in a huge bowl with the sauce for total coverage).

- The Sauce: This makes enough for about 30 "wingettes." Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.
- The Wings: Fry the wings in a deep fryer set at 375 degrees F using vegetable or peanut oil. Fry 15 wings at a time for 12 to 15 minutes. Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings.
- They can be eaten now, or you can put them on a baking sheet and bake them for a few minutes to get an extra-crispy coating.

This is the original spicy Buffalo chicken wings recipe from the Anchor Bar in Buffalo, NY. You can adjust the heat by adding more or less cayenne and Tabasco. - If necessary, cut whole wings into two pieces. In a bowl toss the wings with the oil, and salt. Place into a large plastic shopping bag, and add the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour, and spread out evenly on oiled foil-lined baking pan(s). Do not crowd. Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned.

- Gather the ingredients.
- Dry wing pieces well with paper towel.
- Heat a large pot filled with 2 to 3 inches of the cooking oil to 350 F. Set the oven to warm.
- Place a few wings at a time in the hot oil to fry. Do not crowd the pot.
- Fry for 10 to 12 minutes until they are golden brown and crispy.
- Remove with a slotted spoon to a baking sheet and place in the oven to keep warm while you cook the remaining wings.

BUFFALO HOT WINGS-ANCHOR BAR STYLE
These are the best hot wings IMHO. I don't like my hands to be really sloppy and the trip through the oven after frying solves this. Add as much heat as you like. I prefer the flavor of Red Hot sauce, but use your favorite. Add some Cayenne pepper to kick it to your desired heat level. Serve with my blue cheese dressing. Serves one hungry wing-lover or up to 4.

- Preheat oven to 350 and preheat oil in a deep fryer to 375.
- Fry wings for 8 minutes. (Do this in batches so you don't over crowd).
- Transfer to a tray lined with paper towels to drain.

- Prep the chicken:
- Stir buttermilk, hot sauce, and 1 Tbsp. salt in a wide, shallow bowl. Add chicken and toss to coat.
- Mix flour, garlic powder, paprika, cayenne, black pepper, and remaining 1 Tbsp. salt in a large bowl.
- Working in batches, transfer chicken to bowl with flour mixture. Toss to coat, then transfer to a rimmed baking sheet or large platter. Working in batches again, dip in buttermilk mixture, allow excess to drip off, then dip again in flour mixture. Transfer back to baking sheet and chill at least 15 minutes and up to 2 hours.
- For the hot sauce:
- Meanwhile, cook butter, hot sauce, and maple syrup in a small saucepan over medium heat, stirring, until butter is melted and mixture is smooth.
- For the blue cheese dip:
- Whisk sour cream, buttermilk, blue cheese, pepper, salt, and 1 Tbsp. plus 2 tsp. chives in a small bowl. Top with remaining 1 tsp. chives.
- Fry the chicken:
- Preheat oven to 250°F. Set a wire rack over another rimmed baking sheet.
- Pour oil into a large heavy pot fitted with thermometer to a depth of 2". Heat over medium-high until thermometer registers 350°F. Working in batches, fry chicken, turning occasionally, until crispy and golden brown and an instant-read thermometer registers 165°F, 4-6 minutes per batch. Transfer chicken to prepared wire rack, season with salt, and keep warm in oven.
- Right before serving, transfer fried chicken to a large bowl. Pour hot sauce mixture over and gently turn with tongs until coated. Serve with blue cheese dip and celery sticks alongside.
ANCHOR BAR'S BUFFALO WINGS: THE ORIGINAL HOT WING RECIPE

- Preheat oven to 425°F. In a large bowl, toss wings with vegetable oil and salt. Sprinkle flour and toss until wings are evenly covered. Spread out on baking pans lined with aluminum foil. Bake for 20 minutes. Turn wings and bake 20 minutes more or until golden brown. Meanwhile, in a saucepan, combine butter, vinegar, cayenne pepper, garlic powder, and hot sauce.
