MRS BELLISSIMO'S ORIGINAL ANCHOR BAR CHICKEN HOT WINGS (LOW-CARB

Mrs Bellissimo's Original Anchor Bar Chicken Hot Wings (Low-Carb image

Theresa Bellissimo is credited with creating the original Hot Wings at the Buffalo Anchor Bar. She says always fry, never bake, and never flour the wings. Hope you enjoy the original recipe! We serve it with bleu cheese dressing and celery sticks. DH gives this recipe 10 stars - I said we could only rate it up to 5 stars. I added my personal wing notes in the directions.

Time 35m

Yield 4 pounds, 6 serving(s)

Number Of Ingredients 7

4 lbs chicken wings (fresh not frozen)
salt
pepper, fresh cracked
4 tablespoons butter
5 tablespoons hot sauce (Frank's)
1 tablespoon vinegar (white or white wine)
shortening (for frying)

Steps:

  • 1. Chop off the tip of each chicken wing, and discard it (or save for chicken stock). Chop the wing in half (cutting at the joint) to make 2 pieces. Grind on fresh black pepper and sprinkle with salt. (here is where I vary from the recipe - I add the salt and pepper to the melted butter and hot sauce).
  • 2. Heat the oil over high heat in a deep skillet, Dutch oven, or a deep-fat fryer until it starts to pop and sizzle (around 400 degrees F). Add half the chicken wings and cook until they're golden and crisp, stirring or shaking occasionally. When done, remove them to drain on paper towels and cook the remaining wings. (I fry them for 7 minutes a batch and after the last batch put them all back into the fryer for two minutes, drain and toss in the sauce).
  • 3. Melt the butter over medium heat in a heavy saucepan, add the hot sauce and the 1 tablespoon of vinegar. Stir well and remove from the flame immediately. (I nuked it).
  • 4. Place the chicken on a warm serving platter, pour the sauce on top, and serve. (I also vary from the recipe by tossing the wings in a huge bowl with the sauce for total coverage).

Anchor bars buffalo wings are a true American delicacy. These hot and tangy chicken wings are perfect for game day, parties, or just as a snack. Making perfect anchor bars buffalo wings can be a bit tricky, but with the right tips, you can make a delicious batch of wings every time. Tip #1: Choose the Right Chicken Wings When you are making anchor bars buffalo wings, it is important to start with the right chicken wings. You want to use fresh, high-quality chicken wings that are free from any antibiotics or hormones. It is also important to choose the right size of wings. Aim for smaller wings so that they will cook evenly and quickly. You can buy chicken wings already separated into drumettes and flats or do it yourself at home. Tip #2: Pat the Chicken Wings Dry To make sure that the chicken wings turn out crispy and delicious, it is important to pat them dry with paper towels. This will help to remove any excess moisture, which can make the wings soggy. It can also help the seasoning to stick to the wings better. Tip #3: Season the Wings Properly While the anchor bars buffalo wings are known for their signature hot and tangy flavor, it is important to season them properly. Make sure to use a good quality buffalo wing seasoning mix or create your own. You can also add additional seasonings like garlic powder, paprika, and cayenne pepper to add more flavor. Tip #4: Use a Meat Thermometer When cooking chicken, it is important to make sure that it is cooked to the proper temperature to avoid any foodborne illnesses. The internal temperature of chicken wings should reach 165°F. Using a meat thermometer will ensure that the wings are fully cooked. Tip #5: Fry the Wings Twice One of the secrets to the perfect anchor bars buffalo wings is to fry the wings twice. The first fry is to cook the wings through, and the second fry is to make them crispy. The second fry should be done at a slightly higher temperature to achieve that perfect crunch. Tip #6: Choose the Right Oil When frying the chicken wings, it is important to choose the right oil. You want to use oil with a high smoke point, such as peanut or vegetable oil. These oils will not smoke or burn at high temperatures, allowing you to fry the wings properly. Tip #7: Drain the Wings Properly After frying the wings, it is important to drain them properly. Use a slotted spoon or tongs to remove the wings from the oil, and then place them on a wire rack to allow any excess oil to drain off. Do not place the wings on a paper towel, as this can make them soggy. Tip #8: Use the Right Sauce The sauce is an important part of the anchor bars buffalo wings. While the original sauce is a hot and tangy buffalo sauce, you can also use other sauces like honey BBQ or garlic parmesan. Make sure to heat the sauce properly before tossing the wings in it. Tip #9: Serve with the Right Accompaniments Anchor bars buffalo wings are often served with celery sticks and blue cheese dressing. The celery sticks add a nice crunch and flavor, while the blue cheese dressing helps to cool down the heat of the wings. You can also serve the wings with other dipping sauces like ranch or Sriracha. Tip #10: Experiment with Different Flavors While the original anchor bars buffalo wings are delicious, you can also experiment with different flavors. Try adding different spices or seasonings to the wing mix, or experiment with different sauces. You can also try grilling or baking the wings for a healthier alternative. Conclusion: Making perfect anchor bars buffalo wings requires a bit of skill and attention to detail, but with the right tips, anyone can make delicious wings. Choose the right chicken wings, season them properly, use the right oil, and fry them twice for that perfect crunch. Don't be afraid to experiment with different flavors and accompaniments to create your own unique version of this American classic.
