Steps:
- Heat oven to 350°F. Grease bottom only of 9x5-inch or 8x4-inch loaf pan with shortening.
- In large bowl, beat cake mix, mashed bananas, butter and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
- Bake 9-inch loaf 55 to 60 minutes, 8-inch loaf 1 hour 5 minutes to 1 hour 15 minutes, or until toothpick inserted in center comes out clean. (Place sheet of foil over loaf to prevent overbrowning.) Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to cooling rack. Cool about 1 hour before slicing.

- Stir bananas, sugar, milk, oil, vanilla and eggs in large bowl. Stir in Bisquick mix and nuts. Pour into pan.

I love the lighter color of this banana bread and the flavor is great. I can have this together before the oven even preheats.

- Preheat oven to 325°F Spray a standard bread pan with cooking spray. I use an aluminum bread pan. Mash bananas and lemon juice in a bowl. In a seperate mixing bowl beat eggs, sugar, and vanilla until well combined. Add oil and mix for about 10 strokes. Add bisquick and mix vigorously. Mixture will be very thick and some lumps will remain. Add banana mixture and mix vigorously again. Some lumps will remain. Pour batter into greased bread pan. Bake for 1 hour and test. Continue in ten minute intervals until a tooth pick inserted comes out clean. Whether you use a glass or metal bread pan will impact the cooking time.

AMY'S GF BISQUICK BANANA BREAD
Visiting cousin with celiac disease, brown bananas on the counter. Decided to give this a shot and it came out delicious!

- 1. Cream together butter and sugar
- 2. Add eggs and mashed bananas, combine well
- 3. Add bisquick and vanilla to creamed mixture
- 4. Pour into greased and floured loaf pan
- 5. Bake at 350 degrees for 60 minutes
- 6. Ovens vary, change degrees and cooking time accordingly. I recommend using a glass dish. Enjoy!
