Provided by Food Network Kitchen

Categories     main-dish

Time 1h10m

Yield 8 to 10 servings

Number Of Ingredients 11

Kosher salt and freshly ground black pepper
1 pound elbow macaroni
Half a loaf day-old French bread
1 stick (8 tablespoons) unsalted butter
1/4 cup all-purpose flour
2 teaspoons mustard powder
1/4 teaspoon cayenne
3 cups milk
8 ounces fontina cheese, grated (about 2 cups)
8 ounces Gruyere, grated (about 2 cups)
1 pound sharp yellow Cheddar, grated (about 4 cups)

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just slightly softened, about 6 minutes. Reserve 1 cup pasta cooking water, then drain the pasta and rinse under cold water.
  • Meanwhile, remove the crusts from the bread and cut into 1-inch cubes. Pulse in the food processor until the bread breaks into bean-sized pieces.
  • Melt 3 tablespoons of the butter in a large skillet over medium heat. Add the breadcrumbs and cook, stirring, until toasted, 5 to 10 minutes. Remove from the heat and season with salt and pepper.
  • Melt 4 tablespoons of the butter in a large saucepan over medium heat. Whisk in the flour, mustard powder and cayenne. Cook, whisking constantly, until smooth and slightly golden, about 2 minutes. Whisk in the milk and cook, whisking occasionally, until the sauce begins to boil and thicken, about 7 minutes, then remove from heat. Stir in the fontina, Gruyere and all but 1 1/2 cups of the Cheddar until fully melted. Stir in the pasta, adding the reserved pasta water as needed to make a creamy sauce. Season with salt and pepper.
  • Melt the remaining 1 tablespoon butter in a small bowl in the microwave. Brush a 9-by-13-inch glass or ceramic baking dish with the melted butter. Spread the pasta mixture in the prepared dish. Sprinkle the remaining Cheddar evenly over the pasta, then scatter the toasted breadcrumbs on top. Bake until heated through and just bubbling, about 25 minutes. Let rest for 10 minutes before serving.

Tips for Making the Perfect AMS Boston Baked Macaroni and Cheese

Macaroni and cheese is a classic comfort food, and no one does it better than the AMS Boston Baked Macaroni and Cheese Recipe. There are a few tips and tricks that can help you perfect this recipe and make it truly memorable. Here are some valuable tips that can help you make the perfect AMS Boston Baked Macaroni and Cheese recipe.
Use High-Quality Ingredients
When it comes to making the perfect baked mac and cheese, high-quality ingredients are key. This includes high-quality pasta, cheese, and other ingredients. For pasta, use elbow macaroni or another small pasta that can hold onto the cheese sauce well. For cheese, use a combination of sharp cheddar and Parmesan cheese to give the dish plenty of flavor.
Cook the Pasta Just Right
For mac and cheese, the pasta needs to be cooked just right. You don't want it to be too soft or too tough, but just right. To achieve this, cook the pasta to al dente, or until it is just cooked through but still firm. This will give the pasta the perfect texture to hold onto the cheese sauce.
Make a Perfect Cheese Sauce
The cheese sauce is the star of the show when it comes to baked mac and cheese. To make a perfect cheese sauce, you need to start by making a roux. This is done by heating butter and flour in a pan until it turns into a smooth paste. Then, slowly whisk in milk and continue to whisk until the sauce is smooth and creamy. Next, start adding in the cheese a little bit at a time, whisking constantly until it is fully melted and incorporated into the sauce. Be sure to season the sauce with a little bit of salt and pepper to taste.
Add Some Flavorful Extras
While the cheese sauce is the main attraction in this recipe, you can add some flavorful extras to really take the dish to the next level. This includes ingredients like bacon, diced tomatoes, green onions, or even some cooked chicken. These extras will add extra flavor and texture to the dish, making it even more delicious.
Cover and Bake to Perfection
Once you have mixed the pasta with the cheese sauce and any extras, it's time to bake it to perfection. To do this, cover the dish with foil to keep the moisture in and bake it in the oven at 375 degrees for about 20-30 minutes. Once it's fully cooked, remove the foil and let it sit for a few minutes to cool down before serving.
Serve with a Side Salad or Vegetable
To balance out the richness of the dish, it's always a good idea to serve baked mac and cheese with a side salad or vegetable. A simple green salad with a vinaigrette dressing can be a great way to balance out the heavy flavors of the dish. Some roasted vegetables, such as broccoli or Brussels sprouts, can also be a great pairing.
Store and Reheat Properly
If you have leftovers, it's important to store and reheat the dish properly to ensure that it stays delicious. Store the leftovers in an airtight container in the refrigerator for up to three days. To reheat, cover the dish with foil and bake in the oven at 350 degrees for about 10-15 minutes, or until it's fully heated through.
Experiment with Different Cheeses
While the recipe calls for a combination of sharp cheddar and Parmesan cheese, you can experiment with different cheeses to create different flavor profiles. For example, you can use Gouda or smoked gouda for a smoky flavor, or use a combination of different cheeses for more complexity.
Make it Gluten-Free or Dairy-Free
If you have dietary restrictions, you can still enjoy this delicious recipe by making it gluten-free or dairy-free. To make it gluten-free, simply use gluten-free pasta and a gluten-free flour for the roux. To make it dairy-free, use a dairy-free milk and cheese substitute, such as almond milk and vegan cheese. In conclusion, with these tips in mind, you can make the perfect AMS Boston Baked Macaroni and Cheese recipe that will leave everyone asking for seconds. Remember to use high-quality ingredients, cook the pasta just right, make a perfect cheese sauce, add some flavorful extras, cover and bake to perfection, serve with a side salad or vegetable, store and reheat properly, experiment with different cheeses, and make it gluten-free or dairy-free if needed.
