AMISH PUMPKIN BREAD
A tasty fall quick bread. There's ample pumpkin flavor, but you can also taste the clove and nutmeg. It adds a little spice to the pumpkin bread. Moist, yet dense, enjoy this with a hot cup of coffee for a nice breakfast treat. Or, it's tasty as a midday pick-me-up.

- 1. Preheat oven to 350 degrees. Grease and flour two 9 X 5-inch loaf pans.
- 2. Mix sugar, oil, and eggs together.
- 3. Add pumpkin.
- 4. Add dry ingredients and finally water, stirring until just mixed.
- 5. Pour batter into two greased and floured pans.
- 6. Bake at 350 degrees for one hour.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 11x13-inch baking pan.
- Place raisins in a pot, cover with water, and simmer until soft, 20 to 30 minutes.
- Drain raisins and place in a blender. Add pureed pumpkin, eggs, and oil; blend everything until pureed.
- Combine oat flour, spelt flour, almond meal, coconut flour, amaranth flour, brown rice flour, baking soda, salt, cinnamon, allspice, nutmeg, and cloves in a bowl. Pour in pumpkin mixture and stir until well combined. Fold in pecans. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

This bread is easy to make and is so yummy. I got this recipe from my mother. I think that she got it from the newspaper. This recipe makes 2 regular loafs or 4 mini loafs.

- 1. Preheat oven to 350°F and grease a loaf pan. 2. In a large mixing bowl, stir together the flour, baking powder, soda, salt & spices. 3. In a separate bowl, cream shortening, sugar, and vanilla together before adding eggs one at a time, beating thoroughly after each addition. Stir in pumpkin. 4. Add dry ingredients, alternating w/ water, beating just until smooth. DO NOT overbeat. 5. Put batter in pan. Bake in preheated oven at 350°F for 45-55 minutes or until done. 6. Turn bread on wire rack & allow to cool before storing it in an air tight container. Slice and serve w/ butter.

- Grease pans. (Can be made into loaves of muffins) Preheat oven to 325 F. Add the ingredients to the starter in order. Pour into pans and bake, about one hour for loaves or 40 minutes for muffins. They are done when a toothpick comes out clean. Cool in pans until the bread loosens and then turn out to a serving dish.
