AMISH SOUR CREAM APPLE PIE
I found this recipe in my files. I dont remember where I got it, but it's good. I love the simplicity of the recipe.

Steps:
- Beat sour cream and egg together.
- Add flour, sugar, salt and vanilla.
- Mix until smooth.
- Stir in apples.
- Bake at 400 degrees for 25 minutes.
- Mix the crumb topping ingredients until crumbly.
- Remove pie from oven and spread with crumb topping.
- Bake 20 more minutes.

- In sauce pan combine, white sugar, salt, half-and-half and whipping cream.
- Bring to a boil.
- In another sauce pan, combine Br.sugar & cornstarch.
- Gradually whisk in hot mixture into br.sugar mixture.
- Add margarine/or butter (to me this makes it even better.).
- Cook over med. heat, whisk constantly, 5 min or until thick.
- Simmer 1 minute and stir in van.
- Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg.
- Bake at 375°F for 25 minutes.

- Preheat oven to 425°F.
- Combine ingredients thoroughly using whisk.
- Pour into pie shell.
- Bake at 425°F for 10 minutes, reduce heat to 325°F, and bake for 45-55 minutes more, wrapping edges of pie crust with foil, if necessary, to prevent excessive browning (pie will appear slightly soft in center when done).
- Cool and refrigerate completely before cutting (it will firm up a little more as it sits).

- Preheat the oven to 400 degrees F (200 degrees C).
- Beat sour cream and egg together in a mixing bowl. Add white sugar, flour, vanilla extract, and salt. Mix until smooth. Stir in apples. Transfer to the pie crust.
- Combine brown sugar, flour, butter, and cinnamon for topping in a bowl. Set aside.
- Bake pie in the preheated oven for 25 minutes. Remove from the oven and spread with crumb topping. Return to the oven and continue to bake until golden and bubbly, about 20 minutes more.

I found and made this recipe today...this pie is SO good! The recipe comes from Midwest Living's April 2003 issue, originally from the M&M Cafe in Monticello, Wisconsin.

Steps:
- In a medium saucepan, stir together the sugar, cornstarch and salt.
- Whisk in the half-and-half or light cream and cook and stir over medium heat until the mixture is thickened and bubbly.
- Remove from heat.
- Stir in butter, brown sugar and vanilla until butter melts.
- Pour into baked pie shell and sprinkle lightly with cinnamon.
- Bake the pie in a 325° oven for 30 minutes- the center of the pie will not be set.
- Cool the pie on a wire rack for 1 hour.
- Chill for 3 to 6 hours before serving- pie will set up upon chilling.
- Cover for longer storage.

- 1. Preheat oven to 375°F.
- 2. In a medium size saucepan, heat the cream and half & half together until lightly scalded (it should coat the back of a spoon but should NOT reach a boil). Remove from heat, and set aside.
- 3. In a mixing bowl, beat egg whites until frothy. Add the white sugar, and beat until well blended. Add the brown sugar, flour, salt and vanilla, and beat well.
- 4. Gradually whisk the warmed cream mixture to the egg white mixture, and mix well.

- 1. use the 1/4 cup milk to mix the cornstarch in to make thickening.
- 2. cook together all but the vanilla until it thickens add the vanilla stir well and pour into a hot baked crust. Sprinkle with nut meg. Cool and serve
- 3. Variation 1 Add banana extract instead of vanilla, 2 drops yellow food coloring, and add sliced banana's layered on bottom of crust and pour 1/2 the filling, add another layer of bananas and pour the remainder of the filling over top.
- 4. variation 2 add 1 cup chocolate chips to the pan when it is half way thickened and make it a chocolate cream pie.
- 5. variation 3 same as above but add chocolate mint chips for chocolate mint cream pie
- 6. Variation 4 add 3/4 cup peanut butter just before you pour it into the crust, mixing until all mixed
