1 quart milk
2 large egg yolks
3/4 cup sugar
1 teaspoon vanilla
1 cup saltine crackers, crumbled
3/4 cup coconut
2 large egg whites
1/2 cup sugar

Steps:

  • scald milk in saucepan -- add beaten egg yolks.3/4 cup sugar, cracker crumbs and coconut.mix well --
  • cooking and stirring constantly.till thickened.
  • remove from heat and stir in vanilla.
  • pour into sprayed 3 quart baking dish --
  • beat egg whites till stiff and gradually add 1/2 cup sugar to make a meringuw --
  • spread over pudding and put in oven long enough to nicely brown meringue tips.
  • be careful not to burn.

2 c milk
2 beaten egg yolks
1/4 c sugar
1/2 c shredded coconut
1 tsp vanilla
2 egg whites
1/4 dash(es) sugar
1 c coarsely crushed saltine crackers

Steps:

  • 1. In a saucepan gradually stir milk into egg yolks.Add 1/4 cup sugar. Cook and stir over medium heat till thick and bubbly. Remove from heat. Stir in crackers, coconut and vanilla. Pour into a 1 quart casserole dish. Beat egg whites till soft peaks form. Very gradually add 1/2 cup sugar, beat till stiff peaks form. Spread over hot pudding. Bake at 350 for 12 to 15 minutes. Serve and enjoy!

3/4 teaspoon vanilla
6 ounces vanilla instant pudding mix or 3/4 cup bulk vanilla instant pudding mix
3 tablespoons butter
1 cup crushed graham cracker, divided
2 cups heavy whipping cream, divided
sweetened strawberries (optional) or blueberries (optional)

Steps:

  • Mix cold milk (including sweetened condensed milk) and vanilla together. Gradually add pudding mix, stirring continually for 2 minutes; put in refrigerator.
  • Melt butter in saucepan and add crushed graham crackers. Stir over medium heat until lightly browned. Remove from heat.
  • Beat 1 cup heavy whipping cream until peaks form; fold together with 1/2 cup browned graham cracker crumbs and cooled pudding mixture. Pour into a 2 quart serving dish. Reserving 1 tablespoons crumbs, sprinkle remaining browned graham cracker crumbs over the pudding mixture; refrigerate.

24 graham crackers, crushed
1 quart milk
1 pinch salt
