1 cup butter, softened
1 cup vegetable oil
1 cup sugar
1 cup confectioners' sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
4-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Steps:

  • Preheat oven to 375°. In a large bowl, beat the butter, oil and sugars. Beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar; gradually add to creamed mixture., Drop by small teaspoonfuls onto ungreased baking sheets. Bake until lightly browned, 8-10 minutes. Remove to wire racks to cool.

I came up with this after reading a ton of reviews of WW brownies and trying a bunch of recipes that are not really low point or not really good...its very HG inspired. Don't be scared of the pumpkin, its nutritious, adds moisture and makes the brownie very dense. I ran it through recipe builder using the Betty Crocker low-fat brownie mix. Another mix may alter the points.

Number Of Ingredients 8

1 (20 ounce) box low-fat brownie mix (18 servings)
1 (8 ounce) package fat free cream cheese (softened)
1 (15 ounce) can pumpkin
4 ounces applesauce (I used one of the little individual cups)
1 1/2 cups Fiber One cereal (ground to a powder)
2 tablespoons Splenda granular
4 tablespoons cocoa (I used Hershey's Special Dark)
1 teaspoon baking powder

Steps:

  • Grind fiber one to a powder in food processor.
  • Mix fiber one, brownie mix, baking powder, cocoa and splenda thoroughly until combined.
  • Blend in pumpkin, softened cream cheese, and applesauce.
  • Mix very well until consistent color/texture is reached.
  • Spoon into 22 muffin tins. If you only get 21, according to Recipe Builder they go up to 3 points so make sure to get 22 ;).
  • Bake at 350 for 18 minutes.

2 large potatoes, peeled and shredded (red, white, or Idaho)
2 teaspoons olive oil
1/2 teaspoon paprika
1/2 teaspoon table salt
1/4 teaspoon black pepper
2 tablespoons red wine vinegar
1/3 cup fat-free chicken broth, reduced-sodium preferred

Steps:

  • Place potatoes in a large saucepan and add enough water to cover.
  • Set pan over medium-high heat and bring to a boil.
  • Boil 5 minutes.
  • Drain and set aside.
  • Heat oil in a large, nonstick skillet over medium-high heat.
  • Add potatoes, paprika, salt and pepper; stir to coat.
  • Sauté 2 minutes.
  • Add chicken broth and vinegar and cook until liquid is absorbed, stirring frequently, about 3 minutes.
  • 2 Points Yields about 1/2 cup.

1 1/4 cups lean ham, finely diced
1/2 cup low-fat swiss cheese, shredded
1 scallion, minced
8 egg roll wraps
cooking spray
1/4 cup honey mustard

Steps:

  • Preheat oven to 400°F.
  • Combine ham, cheese and scallion in a small bowl; mix well.
  • Place an egg roll wrapper on a flat work surface with the corners set vertically (pointing up and down - like a diamond shape). Arrange 3 slightly rounded tablespoons of filling down the center of the wrapper, leaving 1/2 inch of space at the bottom and top.
  • Fold the bottom of the wrapper to the center, over the filling. Gently, but firmly, fold the left side of the wrapper to the center and then fold in the right side. Fold the top of the wrapper down to cover filling and seal any loose ends with water; repeat with remaining ingredients.
  • Place filled wrappers on prepared baking sheet; lightly coat surface of wrappers with cooking spray. Bake until wrappers are golden brown, flipping once, about 15 minutes.
