EXTREME AMBROSIA FRUIT DESSERT

This is so delicious, and makes a ton of ambrosia, but recipe may be cut in half if desired to serve about 4-6 people, I like to use coloured mini marshmallows --- plan ahead this needs to chill for minimum 2 hours, prep time includes chilling time.

2 (8 ounce) containers cool whip frozen whipped topping, thawed
1 cup soft shredded coconut (optional)
3/4 cup walnuts
2 (8 ounce) cans fruit cocktail, drained
2 (8 ounce) cans pineapple chunks, drained
2 (11 ounce) cans mandarin oranges, well drained (can use about 2 cups fresh chopped orange segments also)
5 -6 cups mini marshmallows
1 (10 ounce) jar maraschino cherries, drained
1 1/2 teaspoons nutmeg (or to taste)
1 1/2 teaspoons cinnamon

Steps:

  • In a large bowl, combine the Cool Whip topping, coconut (if using) chopped walnuts, fruit cocktail, pineapple, oranges, marshmallows, cherries, nutmeg and cinnamon; mix all together very well (adjusting the cinnamon and nutmeg to suit taste).
  • Chill in refrigerator for 2 or more hours before serving.
  • Delicious!

This is a classic Southern dessert in which layers of oranges, bananas and coconut are drizzled with honey, lemon juice and Cointreau. The perfect sweet to serve in the dreary midwinter months when your palate is craving something bright and juicy, but the berries haven't arrived yet.

6 oranges, peeled and sliced into 1/4 -inch rounds
1 banana, peeled and thinly sliced
1/2 cup sweetened shredded coconut
1 cup orange juice
3 tablespoons lemon juice
2 tablespoons honey (optional)
Splash of Cointreau (optional)

Steps:

  • In a glass serving bowl, form a single layer of orange slices and top with a few slices of banana. Sprinkle a thin layer of coconut over the top. Repeat layering until all of these ingredients are finished, reserving a tablespoon of the coconut. Stir together the juices and honey, if using, and pour over the fruit. Follow with the Cointreau, if desired, and a final sprinkling of coconut. Serve immediately or cover and refrigerate for several hours.

This tart, based on a classic Southern pie, oozes with gooey custard and has a simple cookie-crumb crust.

Vegetable oil cooking spray, for pan
1 1/4 cups ground Nilla Wafers (about 45)
5 tablespoons unsalted butter, melted and cooled slightly
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup packed light-brown sugar
1 tablespoon fine cornmeal
1/4 teaspoon salt
3 large eggs plus 1 large yolk
1/2 teaspoon pure vanilla extract
1 stick unsalted butter, melted and cooled slightly

Steps:

  • Preheat oven to 350 degrees. Make the tart shell: Coat a 9-inch fluted tart pan with a removable bottom with cooking spray. Mix together wafers, butter, granulated sugar, and salt. Press mixture into bottom and up sides of pan. Refrigerate until set, about 15 minutes.
  • Transfer pan to a rimmed baking sheet, and bake until tart shell is golden, about 12 minutes. Let cool slightly. Reduce oven to 325 degrees.
  • Make the filling: Mix together sugars, cornmeal, and salt, breaking up clumps. Whisk in eggs, yolk, and vanilla. Whisk in butter. Pour filling into tart shell. Bake until top is dark golden brown and edge is set but center is still a bit wobbly, 35 to 40 minutes.
  • Transfer pan to a wire rack, and let cool for 15 minutes. Refrigerate until cooled, at least 2 hours or overnight.
