SUPER EASY PENNE ALLA VODKA



Super Easy Penne Alla Vodka image

This Penne Alla Vodka is creamy, cheesy, and sweetly flavored with tomatoes and vodka. It's also incredibly easy to prepare!

1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 medium yellow onion (finely chopped)
2 garlic cloves (minced)
1/4 cup vodka
28 oz canned puréed San Marzano tomatoes
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1 lb penne pasta
2 basil leaves (chopped (for garnish))
Salt and pepper to taste

Steps:

  • In a large skillet, add 1 tablespoon olive oil and 1 tablespoon unsalted butter. Bring the butter and oil to medium-high heat.
  • Then add 1/2 medium chopped yellow onion and 2 minced garlic cloves into the pan. Stir the garlic and onion until the onion becomes translucent.
  • Then bring the heat to high and pour in 1/4 cup of vodka and let it cook out for about 1-2 minutes while stirring.
  • Now add 28 oz of canned puréed San Marzano tomatoes and 1 cup heavy whipping cream. Let the sauce simmer over low heat for about 3-4 minutes.
  • In the meantime, cook 1 pound of penne pasta in a pot of salted boiling water. Once the pasta is cooked al dente, drain it, but don't rinse.
  • Turn the heat off and remove the sauce from the cooktop. Then stir in 1/2 cup of grated Parmesan cheese and add the cooked penne. Season with salt and pepper to taste.
  • Then garnish with chopped basil and a little extra grated Parmesan cheese.

Perfectly hearty and tender penne pasta is tossed with a creamy and vibrant, San Marzano tomato based and vodka infused sauce that's seasoned with fresh herbs and parmesan. Talk about delicious dinner recipe!

1 (28 oz) can San Marzano tomatoes, (crushed finely with hands*)
2 Tbsp extra virgin olive oil
1/2 cup minced yellow onion
3 oz. proscuitto (or pancetta, diced (optional))
1 Tbsp minced garlic ((3 cloves))
Salt and freshly ground black pepper
1/2 cup vodka
1/4 tsp red pepper flakes, (more or less to taste)
2/3 cup heavy cream
1/4 cup finely shredded parmesan cheese, (plus more for serving)
1 Tbsp chopped fresh oregano
1/4 cup chopped fresh basil
14 oz. penne pasta, (plus reserved pasta water for thinning sauce as needed)

Steps:

  • Bring a pot of water to a boil to cook pasta. Season water with salt.
  • Heat oil in a large pot over medium heat. Add onion and prosciutto saute 4 - 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.
  • Remove pan from heat and add tomatoes, vodka, season with salt and pepper to taste. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 minutes**, stirring occasionally.
  • Meanwhile cook pasta according to package directions. Reserve 1/2 cup pasta water and drain pasta.
  • Stir cream into sauce and let just heat through, about 1 minute. Stir in parmesan, basil and oregano.
  • Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve warm with more parmesan and garnish with more basil if desired.

3 tablespoons olive oil
3 fresh whole tomatoes, chopped
1 onion, diced
7 cloves garlic, chopped
1 (28 ounce) can whole peeled tomatoes
1 (12 ounce) can tomato paste
1 cup chopped fresh basil
salt and ground black pepper to taste
½ cup vodka
1 pint heavy whipping cream
1 pound penne pasta
½ teaspoon olive oil

Steps:

  • Heat 3 tablespoons olive oil in a large skillet over medium heat; cook and stir fresh tomatoes, onion, and garlic in the hot oil until onion is tender, 1 to 2 minutes. Stir canned tomatoes and tomato paste into the tomato-onion mixture, breaking down the whole tomatoes with a fork. Mix basil, salt, and pepper into the tomato mixture; simmer until liquid has slightly reduced, 15 minutes.
  • Stir vodka into the tomato mixture; simmer vodka sauce until slightly reduced, 15 minutes. Stir cream into vodka sauce and cook until heated through, 15 minutes.
  • Bring a large pot with lightly salted water and 1/2 teaspoon olive oil to a boil. Cook pasta, stirring occasionally, at a boil until tender yet firm to the bite, about 10 minutes; drain. Fold pasta into vodka sauce to coat.
