TUNA FISH CASSEROLE
A creamy and comfy dinner on chilly or cold nights. This is fast and economical. I offer credit to my mother-n-law who shared this recipe with me. SHE WAS THE GREATEST always willing to share her recipes, kindness and heart.

Steps:
- Cook noodles al dente as per package directions.
- Combine mushroom soup and milk in a 10 x 10 casserole dish ( or similar in size).
- Add in peas (drained).
- Add in tuna in water (drained).
- Mix gently as you do not want the tuna fish to mince. leave some chunks in there.
- Add in cooked noodles and blend well.
- Top with pat of butter.
- Microwave for 5 minute stir.
- Serve and enjoy.
- *** Prep time does not include time to get noodle water to boil.
- *** Can sizes vary, I generally use the standard size anywhere from 10-14 oz.

A rich, creamy casserole with popping flavor! I evolved this recipe from my mom's original, and won several awards with it when I was an Army wife. There are NEVER leftovers!

Steps:
- Preheat oven to 375 degrees.
- Boil egg noodles according to package directions.
- Meanwhile, combine ALL REMAINING INGREDIENTS EXCEPT THE SHREDDED CHEESE in extra large, deep bowl. I recommend thoroughly flaking the tuna FIRST in the bowl with a fork.
- Drain noodles when done to desired tenderness.
- Combine cooked noodles into the bowl of wet ingredients.
- Mix thoroughly by folding noodles in with a large spoon.
- Pour mixture into 13 X 9 inch casserole dish, or smaller if you prefer a thicker casserole.
- Top evenly with shredded cheese.
- Bake at 375 degrees for 45 minutes, or until cheese is golden brown.
- Let rest for 15 minutes before serving.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
- Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
- Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

AMAZING TUNA FISH CASSEROLE
My mother made this for me when I was growing up. Now it is a favorite with my family. The cheese and soup create a wonderful flavor. Can also use canned chicken instead of tuna. I serve tiny new peas with this. My kids love it!
