Time 40m

Number Of Ingredients 8

6 large egg yolks ((approx. 1/2 cup of yolks))
1 cup sugar (superfine or caster if possible)
1¼ cup mascarpone cheese (( room temperature)
1¾ cup heavy whipping cream
30 each Italian ladyfingers (about 1 ½ of the 7 ounce packages (Savoiardi style) )
1 cup cold espresso or strong coffee
½ cup coffee flavored Liqueur (optional )
1 ounce unsweetened cocoa for dusting

Steps:

  • This is how you will make the Sabayon:When you are ready to make the sabayon place about one inch of water in a small pot and bring to a boil. Reduce the heat to simmer and place a bowl on top of the small pot so it's sitting on the pot without touching the water.
  • Now Begin Making the Sabayon:Add the egg yolks and sugar to the bowl, whipping to mix the ingredients together. Place the bowl on the small pot of simmering water. Using a whisk to mix, whip the egg/sugar mixture constantly for about 10 minutes. This will cook the eggs. The mixture will increase in volume as it thickens. This is your sabayon. After you have finished whipping the sabayon, remove the bowl from the heat and continue to whip yolks to help it cool. The mixture should be thick and a lemon yellow color. Allow to cool briefly before mixing in mascarpone.**If the bowl starts to get too hot, lift it off the pot of water for 15 seconds or so while continuing to whip the mixture. You can do this as often as necessary. * *If you used regular sugar instead of superfine / castor sugar your finished sabayon may be grainy. That's okay it will finish dissolving while your tiramisu is firming up.
  • Add room temperature Mascarpone to whipped yolks, mix until well combined. Don't overmix this can cause curdling.*Mascarpone only needs to get to set out for 15-20 minutes. Don't let it get warm.
  • In a separate bowl, using an electric mixer whip cream to stiff peaks. (hand mixer or stand mixer is fine). This process should be slow, starting. on low increasing the speed over about ten minutes.**This method is how you keep the whipped cream from breaking. The cream should be ice cold and as fresh as possible. Look for heavy cream with the longest expiration date.
  • Gently fold the whipped cream in the mascarpone sabayon mixture and refrigerate until you are ready to assemble the tiramisu.
  • Mix the cold espresso (or strong coffee) with the coffee liqueur and dip the ladyfingers into the mixture just long enough to get them wet, do not soak them!**If you can't use alcohol, just leave out the liqueur.
  • Arrange the ladyfingers in the bottom of a 9-inch square baking dish (or container similarly sized)
  • Spoon half the mascarpone cream filling over the ladyfingers.
  • Repeat process with another layer of ladyfingers
  • Add another layer of tiramisu cream
  • Refrigerate at least 4 hours. Overnight is best.
  • Dust with cocoa before serving

CLASSIC TIRAMISù

Classic Tiramisù image

Done correctly, a classic tiramisù can be transcendent. A creamy dessert of espresso-soaked ladyfingers surrounded by lightly sweetened whipped cream and a rich mascarpone, tiramisù relies heavily on the quality of its ingredients. If you don't have a barista setup at home, pick up the espresso at a local coffee shop, or use strongly brewed coffee. As for the ladyfingers, make your own or buy them, but keep in mind that store-bought varieties can range from soft and spongy (like angel food cake) to hard and crunchy (like biscotti). Both kinds will work here, but if you're using the softer variety, stick to a light brushing of espresso, instead of a deep dip.

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 9

4 large egg yolks
1/2 cup/100 grams granulated sugar, divided
3/4 cup heavy cream
1 cup/227 grams mascarpone (8 ounces)
1 3/4 cups good espresso or very strong coffee
2 tablespoons rum or cognac
2 tablespoons unsweetened cocoa powder
About 24 ladyfingers (from one 7-ounce/200-gram package)
1 to 2 ounces bittersweet chocolate, for shaving (optional)

Steps:

  • Using an electric mixer in a medium bowl, whip together egg yolks and 1/4 cup/50 grams sugar until very pale yellow and about tripled in volume. A slight ribbon should fall from the beaters (or whisk attachment) when lifted from the bowl. Transfer mixture to a large bowl, wiping out the medium bowl used to whip the yolks and set aside.
  • In the medium bowl, whip cream and remaining 1/4 cup/50 grams sugar until it creates soft-medium peaks. Add mascarpone and continue to whip until it creates a soft, spreadable mixture with medium peaks. Gently fold the mascarpone mixture into the sweetened egg yolks until combined.
  • Combine espresso and rum in a shallow bowl and set aside.
  • Using a sifter, dust the bottom of a 2-quart baking dish (an 8x8-inch dish, or a 9-inch round cake pan would also work here) with 1 tablespoon cocoa powder.
  • Working one at a time, quickly dip each ladyfinger into the espresso mixture -- they are quite porous and will fall apart if left in the liquid too long -- and place them rounded side up at the bottom of the baking dish. Repeat, using half the ladyfingers, until you've got an even layer, breaking the ladyfingers in half as needed to fill in any obvious gaps (a little space in between is O.K.). Spread half the mascarpone mixture onto the ladyfingers in one even layer. Repeat with remaining espresso-dipped ladyfingers and mascarpone mixture.
  • Dust top layer with remaining tablespoon of cocoa powder. Top with shaved or finely grated chocolate, if desired.
  • Cover with plastic wrap and let chill in the refrigerator for at least 4 hours (if you can wait 24 hours, all the better) before slicing or scooping to serve.

This is the Williams-Sonoma Tiramisu recipe and I made it once for a very good Italian friend of mine who was renowned for her tiramisu. She quietly mentioned to me that she thought this was, in fact, better than hers! Never heard a complaint yet, a definite winner!

Tiramisu is a popular Italian dessert that has gained global popularity. It's a creamy and delicious dessert that combines sweet and savory elements in a perfect balance. Making an amazing tiramisu recipe is not rocket science, but it requires attention to detail and a few tips to make it the best it can be. Here are some valuable tips for making an amazing tiramisu recipe.

Use Quality Ingredients

Quality ingredients are the key to making an amazing tiramisu recipe. The main ingredients of tiramisu are mascarpone cheese, ladyfingers, egg yolks, sugar, coffee, and cocoa powder. While all of these ingredients are essential, selecting high-quality ones can make a significant difference in the final outcome. For example, it is important to use fresh and high-quality mascarpone cheese. If the mascarpone cheese is not fresh, the tiramisu will not turn out creamy and light. Similarly, using high-quality cocoa powder and coffee will enhance the flavor of the tiramisu.

Room Temperature Ingredients

Another valuable tip for making an amazing tiramisu recipe is to ensure that all the ingredients are at room temperature. It is important for the mascarpone cheese, egg yolks, and sugar to be at room temperature before being mixed. Room temperature ingredients will combine and emulsify better, resulting in a smoother and creamier texture.

Separate the Egg Whites and Egg Yolks

When making the tiramisu filling, it is important to separate the egg whites and egg yolks. The egg yolks should be mixed with the sugar until they are pale and frothy. The egg whites should be whisked separately and then folded into the mascarpone cheese mixture. Separating the egg whites and egg yolks allows for a light and fluffy filling.

Whisk Egg Yolks and Sugar Thoroughly

Whisking the egg yolks and sugar until they are pale and frothy is an important step in making the tiramisu filling. The mixture should be whipped until it forms soft peaks. This step makes the filling light and airy, and it will ensure that the tiramisu has a silky smooth texture.

Use Marsala Wine

Marsala wine is an Italian fortified wine that is used in many traditional tiramisu recipes. It adds a subtle sweetness and depth of flavor to the dish. While it is not necessary to use Marsala wine, it does enhance the flavor of the tiramisu. If you prefer not to use alcohol, you can use a non-alcoholic substitute or omit it altogether.

Select the Right Ladyfingers

Ladyfingers are the sponge-like biscuits that are used in tiramisu recipes. The two types of ladyfingers are soft and crispy. Soft ladyfingers are the best option for tiramisu because they absorb the coffee and liquor mixture better. Crispy ladyfingers can become too dry and hard, making the tiramisu less enjoyable.

Dip Ladyfingers Quickly

Dipping the ladyfingers in the coffee and liquor mixture is an important step in making the tiramisu. However, it is crucial not to over-dip the ladyfingers. If the ladyfingers become too soggy, the tiramisu will become watery and unappetizing. Dipping them quickly is key to retaining their texture while still absorbing the coffee mixture.
Layering the Tiramisu
Layering the tiramisu is an art that takes practice. There are a few tips to consider when layering the tiramisu.

Use a Large Dish

Using a large dish when layering the tiramisu is important because it enables you to create even and structured layers. A large dish also allows for enough space to chill the tiramisu properly.

Alternate Layers of Mascarpone Mixture and Ladyfingers

When layering the tiramisu, it is important to alternate layers of mascarpone mixture and ladyfingers. This technique ensures that the tiramisu has an even distribution of flavors and textures.

Top with Cocoa Powder

Once the tiramisu is assembled, it should be chilled in the refrigerator for at least two hours to allow the flavors to meld together. Before serving, dust the top of the tiramisu with cocoa powder. This adds a touch of sweetness and also makes for a lovely presentation.

Conclusion

In conclusion, making an amazing tiramisu recipe requires attention to detail and quality ingredients. Room temperature ingredients, separating the egg whites and yolks, whisking the egg yolks and sugar thoroughly, using Marsala wine, selecting the right ladyfingers, and layering the tiramisu correctly are all important tips to keep in mind when making a tiramisu recipe. By following these tips, you can create a delicious and authentic Italian dessert that is sure to impress.
