1 cup half-and-half
1 cup Parmesan cheese (, shredded)
1/4 teaspoon paprika
1/4 teaspoon salt
6 oz spinach
5 basil leaves (fresh, finely chopped)

Steps:

  • Cook linguine according to package instructions. Drain.
  • Heat 1 tablespoon of olive oil in a large skillet on medium heat.
  • Add chopped sun-dried tomatoes and minced garlic. Cook on medium heat for about 30 seconds, constantly stirring.

2 tablespoons butter
3 teaspoons minced garlic
2 teaspoons Italian seasoning (OR ½ teaspoon each dried basil, dried oregano, dried thyme)
½ cup juliened sun dried tomatoes ((they come in a jar packed with oil, be sure to drain excess oil))
1 cup chicken broth
½ cup half and half (or heavy cream, (use heavy cream for a thicker, creamier sauce!))
⅔ cup shaved or shredded parmesan cheese + ¼ cup grated parmesan cheese for topping ((or more to taste) )
fresh basil or thyme, for topping
salt and pepper to taste ((I use about 1 teaspoon salt and ¼ teaspoon pepper))

Steps:

  • In a large skillet over medium heat, melt butter. Add chicken and cook for 5-7 minutes on each side until browned and cooked through. Transfer to a platter and cover to keep warm while you make the sauce.

2 tablespoons unsalted butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1/2 cup heavy cream
1/3 cup julienned sun dried tomatoes in olive oil, drained
1/4 cup freshly grated Parmesan
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon red pepper flakes, or more, to taste
Kosher salt and freshly ground black pepper, to taste

Steps:

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat.
