PERFECT SPINACH SALAD

3 whole eggs
Ice
7 slices thick-cut peppered bacon
1 small whole red onion
1 package white button mushrooms
3 tablespoons red wine vinegar
2 teaspoons sugar
1/2 teaspoon Dijon mustard
1 dash salt
8 ounces baby spinach, washed, dried and stems removed

Steps:

  • Place the eggs in a saucepan, cover with water and bring to a boil. Then turn off the heat and allow to sit in the water for 20 minutes. Drain off the water and add ice on top of the eggs.
  • Fry the bacon in a skillet until crispy/chewy. Remove to a paper towel. Drain the fat into a bowl and reserve. Give the skillet a wipe with kitchen paper.
  • Slice the red onion very thinly, and then add to the skillet. Cook slowly until the onions are caramelized and reduced. Remove to a plate and set aside.
  • Slice the mushrooms and add them to the same skillet with a little of the reserved bacon fat if needed. Cook slowly until caramelized and brown. Remove to a plate and set aside. Chop the bacon. Peel and slice the eggs.
  • Make the hot bacon dressing:
  • Add 3 tablespoons of the reserved bacon fat, vinegar, sugar, Dijon and salt to a small saucepan or skillet over medium-low heat. Whisk together and heat thoroughly until bubbly. Add the spinach to a large bowl. Arrange the onions, mushrooms and bacon on top. Pour the hot dressing over the top; toss to combine. Arrange the eggs over the top and serve.

1 package ramen noodles
1/4 cup slivered almonds or 1/4 cup sliced almonds
2 -3 bags Baby Spinach
1/2 cup vegetable oil
1/2 cup red wine vinegar
1/2 cup sugar
2 tablespoons soy sauce

Steps:

  • Saute in the butter, until lite brown, the package of ramen noodles (crumbled) and the slivered OR sliced almonds.
  • These are the"crispies" and will keep in a baggie in the freezer if you have any leftover.
  • Combine all the dressing ingredients in jar and shake to mix.
  • This makes enough salad for 2-3 bags of baby spinach or baby romaine or spring greens, your choice.
  • Toss the salad with some crispies and dressing right before serving.

12 ounces washed baby spinach leaves, well drained
1/4 lb bacon
1/2 cup sliced almonds
1/2 cup craisins
1 cup mayonnaise
2 teaspoons seasoned rice vinegar
4 tablespoons white sugar

Steps:

  • Dressing:.
  • Mix together mayonnaise, rice vinegar and sugar until sugar dissolves. Cover and place in refrigerater until just before serving.
  • Salad:.
  • Remove any excess water from spinach leaves and place in large salad bowl.
  • Brown bacon until crisp, remove from pan and drain on paper towels and crumble. Add to spinach.
  • Discard all but 1 Tablespoon of bacon drippings. Saute sliced almonds over medium high heat until lightly toasted. Add to spinach.
  • Add 1/2 cup craisins (can add more or less to taste).
  • About ten minutes before serving remove dressing from refrigerator. Stir or shake well and pour over spinach mixture. Toss well and serve.
