You can use any type of bread or roll for this sandwich. We like the ciabatta, but have used other breads and rolls, whatever I might have handy. You can also pan fry the chicken if you can't get to a grill.-Debbie Speckmeyer, Lakewood, California

Here are some valuable tips to help you create the most amazing Southwest Cilantro Lime Mango Grilled Chicken Sandwiches.
Choose the Right Chicken
The foundation of any great grilled chicken sandwich is the chicken itself. When selecting chicken breast, it's important to choose high-quality organic or pasture-raised chicken to ensure optimal flavor and nutritional value. Thinly sliced chicken breasts or cutlets will also cook faster, resulting in juicier and more tender chicken. It's best to marinate the chicken for at least an hour to get the most flavor possible.
Spice Up Your Marinade
The marinade is what makes the chicken taste amazing. A blend of cilantro, lime, jalapeno, garlic, and honey is the perfect combination for a sweet and spicy marinade. You can adjust the heat level by adding more or less jalapenos, depending on your preference. Remember to let the chicken sit in the marinade for at least an hour before grilling.
Grill the Chicken to Perfection
Proper grilling technique is crucial to creating the perfect Southwest Cilantro Lime Mango Grilled Chicken Sandwiches. Start by preheating your grill to medium-high heat. Once the grill is hot, remove the chicken from the marinade and place it on the grill. Grill the chicken for 3-4 minutes per side, or until the internal temperature reaches 165°F.
Add a Touch of Sweetness
Mango is the perfect addition to these grilled chicken sandwiches to add a touch of sweetness to the recipe. You can use fresh mango, frozen mango, or canned mango, depending on what you have on hand. Mango salsa is also a tasty way to incorporate mango into the dish. Simply chop up mango, red onion, cilantro, and jalapeno, and mix them together with lime juice and salt.
Pick the Right Bread
The bread you choose can make or break your sandwich. A soft, fluffy, whole-grain bread is the best option for these grilled chicken sandwiches. You can use rolls, baguettes, or sliced bread, depending on your preference. Toasting the bread on the grill will give it a delicious smoky flavor and help hold the sandwich together.
Complete Your Sandwich
Once you have all your ingredients prepared, it's time to assemble your Southwest Cilantro Lime Mango Grilled Chicken Sandwiches. Start by placing a leaf of lettuce on the bottom slice of bread, followed by a slice of tomato. Add the grilled chicken on top of the tomato and then add the mango salsa. Add a Tangy Dressing
If you want to add an extra layer of flavor to your sandwiches, try making a tangy dressing to drizzle over the top. A blend of lime juice, honey, jalapeno, and olive oil is the perfect finishing touch to these sandwiches.
