SLOW COOKER GREEN BEANS, HAM AND POTATOES

Slow Cooker Green Beans, Ham and Potatoes image

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

2 pounds fresh green beans, rinsed and trimmed
1 large onion, chopped
3 ham hocks
1 ½ pounds new potatoes, quartered
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon seasoning salt
1 tablespoon chicken bouillon granules
ground black pepper to taste

Steps:

  • Halve beans if they are large, place in a slow cooker with water to barely cover, and add onion and ham hocks. Cover, and cook on High until simmering. Reduce heat to Low, and cook for 2 to 3 hours, or until beans are crisp but not done.

NEW POTATOES, GREEN BEANS AND HAM

New Potatoes, Green Beans and Ham image

This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

Time 8h15m

Yield 6-8 serving(s)

Number Of Ingredients 6

8 red potatoes, scrubbed and halved
1 (16 ounce) package frozen green beans (or fresh)
1 large onion, cut into about eight wedges
2 cups ham, cut into bite sized pieces
vegetable broth or chicken broth
salt and pepper

Steps:

  • I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
  • Add all the ingredients and cover, cook on low for 8 to 10 hours.
  • If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
  • Use your own judgement on the amount of broth.
  • Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

Health benefits of the ingredients

Green beans and new potatoes are packed with essential nutrients that have numerous health benefits. Green beans are an excellent source of fiber, vitamin C, and vitamin K, which boost the immune system, prevent chronic disease and keep the body hydrated. New potatoes, on the other hand, are an excellent source of potassium, which supports heart health, and vitamin B6, which helps the body metabolize protein and produces red blood cells.
Selection and preparation of ingredients
Choosing fresh and high-quality ingredients is essential when preparing this dish. For green beans, pick those that are firm, straight, and bright green with no blemishes. Look for new potatoes with smooth skin, heavy weight, and no sprouts or green spots. Before cooking, wash the ingredients well and chop the potatoes into small bite-size pieces for even cooking.

Cooking methods

There are various ways of preparing ham green beans and new potatoes depending on individual preferences. Below are some popular cooking methods worth trying.
Roasting
Roasting is an easy and straightforward cooking method that amplifies the flavor of the dish. To roast, place the green beans and potatoes on a baking sheet and season with salt, pepper, garlic, and rosemary. Drizzle some olive oil over the vegetables and toss them until they are well coated. Add the ham slices and continue roasting for about 25 minutes or until the vegetables and ham are golden brown and tender. Roasting produces a smoky flavor that brings out the sweetness of the potatoes.
Boiling
Boiling is a classic cooking method that brings out the natural juiciness of the vegetables. To cook, place the potatoes in a pot of salted water and let them cook for about five minutes. Add the green beans and continue boiling for an additional five minutes or until the vegetables are fork-tender. Drain the water and stir in the ham slices and some butter for flavor. Boiling is an easy and quick way of cooking the dish and also allows for the addition of other herbs and seasonings.
Grilling
Grilling is a healthy cooking method that brings out the smoky flavor of the ingredients. To grill, marinate the green beans and potatoes in a mixture of olive oil, garlic, salt, and pepper for a few hours. Skewer the vegetables and ham slices and place them on a preheated grill for about ten minutes, turning occasionally until they are well charred and cooked. Grilling adds a crispy texture to the dish and imparts a smoky taste.
