When I was 10 I asked my sitter for this recipe because her house smelled SO good while it was in the oven. I still make it for the same reason today. This is different from the other Forgotten Chicken recipes already submitted. I sometimes use boneless skinless chicken and I LOVE the 2 different cooking options!

1 (3 lb) chicken, cut up
1/2 envelope onion soup mix
1 can cream of chicken soup
1 package regular cook uncle bens long grain and wild rice blend
2 3/4 cups water

Steps:

  • Place rice in roasting pan.
  • Put chicken on top.
  • Sprinkle with onion soup mix.
  • Spoon cream of chicken soup over chicken and rice.
  • Pour the water over ingredients in roaster.
  • Sprinkle herbs from rice over the ingredients in roaster.
  • Cover.
  • Do not open or stir till cooking time is over.
  • Bake at 325 degrees for 2- 2 1/2 hours OR Bake at 200 degrees for 4 hours.

salt and pepper to taste
½ cup mayonnaise
2 cups Italian seasoned bread crumbs

Steps:

1 cup uncooked rice
2 (10 3/4 ounce) cans cream of chicken soup
1 1/2 cups water
1 large chicken, cut into pieces
salt, to taste
pepper, to taste
0.5 (1 1/4 ounce) package dry onion soup mix

Steps:

  • Preheat oven to 350°F.
  • Place rice in the bottom of a large greased casserole dish.
  • In a mixing bowl, combine both cans of soup with water.
  • Pour some of the soup mixture over the rice and let stand a few minutes.
  • Place chicken pieces on top of rice.
  • Salt and pepper to taste.
  • Pour remaining soup on top.
  • Top with remaining dry onion soup mix.
  • Cover, put in the oven and forget about it for about 1 1/2- 2 hours.

◾2 cups Minute rice (I used brown rice)
◾1 can cream of mushroom soup
◾1 can cream of chicken soup
◾1 can of water (use one of the soup cans)
◾1 tbsp. butter
◾1 envelope Lipton onion soup mix

Steps:

  • 1.Using the 1 tbsp. butter, butter a 9 x 13 baking pan. 2.In a medium bowl, combine the cream of mushroom soup, cream of chicken soup, 1 can of water, and Minute rice. 3.Pour mixture into buttered pan. 4.Place chicken breasts on top of mixture. 5.Sprinkle Lipton onion soup evenly on top of chicken breasts. 6.Cover pan with foil and place in a preheated oven, 350. 7.Cook for about 1- 1 1/2 hours, or until the chicken is cooked through. 8.Enjoy!!
