Time 30m

Number Of Ingredients 15

1 pound boneless skinless chicken thighs
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
Juice of 2 limes
1 tablespoon olive oil
1/3 cup finely chopped red or sweet onion
1/3 cup finely chopped cilantro
1 finely chopped jalapeño
Juice of 1 lime
Salt and pepper, to taste
1 lime, cut into 8 pieces

Steps:

  • In a large zipper-topped plastic baggie or in shallow dish, add the chicken, all of the spices, lime juice, and oil. Close the bag and use your hands to mix everything together. If you are using a shallow dish, use tongs to work the spices evenly into the chicken. You can let this rest for up to a half-hour or work with it right away. I like to let it rest a minute to increase the flavor.
  • Heat a large skillet over medium to medium-high heat. When the skillet is hot, add the chicken. Cook for 12 to 14 minutes, turning once, until the chicken is cooked through. Remove the chicken from the pan and let it rest for 10 minutes. If you have an extra-large chicken thigh, you'll need to cook them longer, so turn down the heat to medium and cook them until no longer pink (could take up to 25 minutes or 12 minutes per side).
  • While the chicken cooks, stir together the chicken taco topping by placing the chopped onion, cilantro, jalapeño, and the juice of one lime in a small bowl. Add salt and pepper, and stir to combine.
  • While the chicken rests, wipe your skillet clean with a warm rag or paper towels, and place the skillet back on the heat over medium-high to high heat. Place two tortillas (still stacked together) on the skillet and cook until the underside starts to char. Flip over and cook the other side (so the middle of each tortilla won't be cooked against the skillet but it will get warm all the way though). Repeat with remaining tortillas.
  • Chop the rested chicken into bite-sized pieces.
  • To serve, place 1/8 of the chopped chicken in each set of tortillas (still two stacked together) and top with 1/8 of your onion mixture. Serve each taco with a wedge of lime to squeeze over the taco just before serving.

For the sazon chicken:
1 pounds boneless skinless chicken thighs
1 tablespoons olive oil
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1/2 teaspoon garlic powder
1/2 teaspoon oregano
Optional: ¼ teaspoon cayenne (only if you like a little heat)
½ teaspoon salt
Freshly ground black pepper
For the grilled corn:
2 ears of corn, washed
2 tsp olive oil
½ teaspoon cumin
½ teaspoon chili powder
For the salsa:
1 avocado, diced
1 jalapeno, thinly sliced
1/3 cup finely diced cilantro
¼ cup finely diced red onion
1 lime, juiced
Freshly ground salt and pepper, to taste
For the jalapeno lime cashew sauce:
1/2 cup raw cashews
1/3 cup water, plus more to thin if necessary
1 medium jalapeno, seeded
1 clove garlic
2 tablespoons fresh lime juice
3/4 teaspoon salt
1/4 teaspoon onion powder
Freshly ground black pepper
For serving:
8 soft corn tortillas
Extra thinly sliced jalapenos
Extra cilantro

Steps:

  • Soak the cashews in 2 cups of warm water for at least 2 hours; otherwise I've found that you can easily speed up the process by adding the raw cashews to a pot with water and placing over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for about 30 minutes in the hot water, then drain.
  • Once the cashews have finished soaking you'll be ready to make the sauce: add drained cashews, fresh water, jalapeno, garlic, fresh lime juice, salt, onion powder and black pepper to a blender. Blend on high until sauce comes together. If you want a bit of a thinner sauce, add 1-2 tablespoons more water. Set aside.
  • While your cashews are soaking, you can marinate your chicken: in a large bowl add chicken, olive oil, cumin, coriander, turmeric, garlic powder, oregano, cayenne, salt and pepper. Toss together to coat the chicken and allow it to marinate for 30 minutes-1 hour, or up to 24 hours.
  • Next prepare your corn: drizzle corn with olive oil and rub with chili powder, cumin and salt and pepper.
  • Now it's time to grill both the chicken and the corn: preheat grill to 400 degrees F. Place the corn and chicken directly on the grill. Turn corn occasionally until charred and cooked for about 15-20 minutes. Grill chicken thighs for 6-8 minutes per side or until fully cooked and the meat thermometer reads 165 degrees F. Transfer cooked chicken to a plate and cover with foil to keep warm, then chop into bite sized pieces.
  • Allow corn to cool a bit before cutting it off the cob and placing corn into a medium bowl along with following ingredients for the salsa: diced or sliced avocado, jalapeno, cilantro, red onion, lime and salt and pepper, to taste. Toss to combine.
  • Char your tortillas if you'd like, then top each with a spoonful of the jalapeno cashew lime sauce, chicken, street corn mixture, extra jalapenos and an extra drizzle of cashew lime sauce on top. Enjoy! Serves 4; 2 street corn chicken tacos each.

1. Promoting Communication
Cooking requires communication, whether it's agreeing on what ingredients to use or deciding how long to cook the chicken. Working together in the kitchen can help improve communication skills and build trust between partners.
2. Encouraging Creativity
Tacos are a blank canvas, allowing you to get creative with different toppings and spices. This can be a fun way for couples to explore their creative side and try new things together.

Healthy Taco Options for Date Night

While tacos can be a fun and indulgent meal, there are also plenty of healthy options to choose from. For example, you can opt for grilled chicken instead of fried, or use lettuce wraps instead of tortillas. Here are a few more healthy taco options to consider:
1. Cauliflower Tacos
Cauliflower makes a great vegetarian taco filling, as it has a similar texture to ground meat. Roast the cauliflower with your favorite spices, then add toppings like salsa, avocado, and feta cheese.
2. Black Bean Tacos
Black beans are a great source of protein and fiber, making them a nutritious taco filling. Mix the beans with corn, diced tomatoes, and cumin for a flavorful and filling meal.
3. Fish Tacos
Fish tacos are a lighter option that are still packed with flavor. Grilled or baked fish pairs well with fresh toppings like mango salsa and cabbage slaw.

Spicy, Sweet, and Savory Chicken Taco Recipes

Whether you're in the mood for something spicy, sweet, or savory, there's a chicken taco recipe out there to suit your tastes. Here are a few delicious options to try:
1. Spicy Chicken Tacos
For a spicy twist on traditional chicken tacos, mix the cooked chicken with diced jalapenos and chipotle seasoning. Top with sliced avocado and homemade salsa for a spicy and satisfying meal.
2. Honey-Lime Chicken Tacos
For a sweet and tangy dish, marinate the chicken in a mixture of honey, lime juice, and garlic. Grill the chicken and serve with sliced jalapeno and cilantro for a burst of flavor.
3. Savory Chicken Tacos with Mango Salsa
For a savory twist on chicken tacos, try adding black beans, sautéed onions and peppers, and a creamy avocado sauce. Top with homemade mango salsa for a touch of sweetness.

Going on a date night with your significant other is always a special occasion. One of the best ways to make the night even more memorable is by preparing delicious food for the two of you to enjoy. If you want to impress your partner with your culinary skills, chicken tacos are a great option. With the right ingredients and a few tips, you can create amazing date night chicken tacos that will make your evening unforgettable. Here are some valuable tips to help you pull off the perfect chicken tacos.

Pick the Right Chicken

The key to making delicious chicken tacos is to start with the right type of chicken. You can use chicken breast or thighs, but it is important to make sure that the meat is fresh and high-quality. Look for chicken that is organic or free-range. This will ensure that your chicken is not only flavorful but also healthier for you and your partner to eat. It is also important to properly season your chicken before cooking it. Salt, pepper, cumin, and chili powder are great options that will add a lot of flavor to the meat.

Choose the Right Tortillas

When it comes to selecting tortillas for your chicken tacos, you have a few different options. Soft corn tortillas are the traditional choice, and they are great for a more authentic taste. Flour tortillas are also a good option if you prefer a softer and more flexible tortilla. It is important to heat your tortillas properly before serving them. You can heat them up in a dry pan, on a griddle, or in the oven. This will make them more pliable and easier to fold. Be careful not to overcook the tortillas, or they will become stiff and difficult to eat.

Add Some Spice

Spices are an essential part of any chicken taco recipe. However, the type of spices you use will depend on your personal taste preferences. Some popular options include chili powder, cumin, garlic powder, onion powder, and smoked paprika. Keep in mind that adding too much spice can overpower the other flavors in your tacos, so use these spices sparingly. You can also experiment with different types of hot sauces or salsas to add some extra heat to your tacos.

Use Fresh Ingredients

Another important factor in making delicious chicken tacos is using fresh ingredients. This includes everything from your chicken to your veggies and toppings. If you are going to use veggies like lettuce, tomatoes, or avocado, make sure that they are ripe and flavorful. Adding fresh cilantro and lime juice can also give your tacos a bright and refreshing flavor. It is also important to use fresh herbs and spices rather than pre-packaged seasoning blends.

Experiment with Toppings

One of the best things about chicken tacos is that you can customize them with a wide range of toppings. Some popular options include shredded cheese, sour cream, guacamole, salsa, pico de gallo, and jalapenos. You can also add some unexpected toppings like fresh mango or pineapple for a sweet and savory twist. Whatever toppings you choose, make sure that they complement the flavors of your chicken and tortillas.

Don't Forget the Sides

No taco night is complete without some delicious sides to go along with your chicken tacos. You can serve some classic sides like rice and beans or chips and salsa. Sweet potato fries or roasted veggies are great options if you want to add some extra nutrition to your meal. A refreshing salad or slaw can also balance out the heavier flavors of your tacos. Consider what your partner likes and try to include a side that they will enjoy.

Plan Ahead

Finally, it is important to plan ahead when making your chicken tacos. This means not only selecting your ingredients and preparing your chicken in advance but also setting the mood for your date night. Dim the lights, light some candles, and put on some romantic music to create the perfect atmosphere. You should also consider setting up a taco bar so that you and your partner can build your own custom tacos. This can be a fun and interactive way to enjoy your meal together.
Conclusion
In conclusion, making amazing date night chicken tacos is all about selecting the right ingredients, spicing up your flavors, and adding fresh and delicious toppings. Remember to plan ahead and create a romantic atmosphere to make the evening even more special. With these valuable tips, you can prepare a delicious and memorable meal that your partner will love. So gather your ingredients, put on some music, and get ready to impress your significant other with your culinary skills.
