Categories     Dinner     lunch

Time 35m

Number Of Ingredients 5

2 lbs chicken wings ((tips removed, separated into wingettes and drumettes))
1 Tbsp BAKING POWDER ((whatever you do, do NOT use baking soda))
1 tsp kosher salt ((plus more to taste))
1 Tbsp butter ((melted))
1/3 cup hot wing sauce ((e.g. Duff's hot sauce))

Steps:

  • Preheat oven to 450F.
  • Dry chicken with a paper towel really well. Place the wings in a large bowl. Sprinkle baking powder over the wings. Toss until all wings are evenly covered in baking powder. Better yet, mix by hand to ensure even coverage.
  • Line a large baking sheet with aluminum foil. Place a cooling rack (see note) on top and spray with Pam or rub with cooking oil to prevent sticking.
  • Lay the chicken wings on the rack, leaving space between the wings.
  • Place the baking sheet in the oven. Turn the heat down to 425F and set the mode to convection.
  • Bake for 30-40 minutes, until the wings are nicely browned and crisp.
  • Let the wings rest for 5 minutes. This will preserve crispiness of the skin.
  • Meanwhile, prepare the Buffalo wing sauce by combining the butter and the hot wing sauce in a small bowl.
  • Season the wings with salt and whatever other seasonings you like. Toss with the Buffalo sauce or serve with the sauce on the side.

STICKY AND CRISPY ASIAN CHICKEN WINGS

Sticky AND Crispy Asian Chicken Wings image

These Asian Chicken Wings are Sticky AND Crispy. The best party food ever!

Provided by Nicky Corbishley

Categories     Appetizer

Time 1h40m

Number Of Ingredients 14

1.5 kg chicken wings
2 level tbsp aluminium-free baking powder ((It has to be baking powder, NOT baking soda) - see further notes on baking powder below)
¾ tsp salt ((make sure it's regular table salt))
½ tsp pepper
3 tbsp chopped spring onions/scallions
1 tsp vegetable oil
pinch of salt and pepper
1 thumb-sized piece of ginger (peeled and minced)
1 tbsp sweet chilli sauce
2 tbsp honey
4 tbsp brown sugar
5 tbsp dark soy sauce
1 tsp lemon grass paste
2 cloves garlic (peeled and minced)

Steps:

  • Preheat the oven to 120C/250F and place a rack on a large baking tray.
  • Cut each wing at the joint so you have a mini wing and a drumette. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating. Discard any remaining coating once tossed together.
  • Place in a single layer on the rack, skin side up. It's fine for them to be touching. Place on the lower shelf of the oven for 30 minutes.
  • After 30 minutes, turn the oven up to 220c (425f), rotate the tray and place on a higher shelf (higher middle) in the oven for 45-50 minutes until the wings are golden and crispy. Take out of the oven to cool slightly.
  • Place all of the sauce ingredients into a saucepan, stir and bring to the boil. Allow to bubble for 5-10 minutes until the sauce reduces and thickens slightly (it will thicken more as it cools). Turn off the heat.
  • Place the wings in a large bowl and very carefully pour over the sticky sauce (be careful, it will VERY hot). Toss to combine, then serve topped with chopped spring onions.

The key ingredients include cornflour, soy sauce, fresh ginger, garlic, vegetable oil, and Shaoxing wine. Also, don't forget to add essential spices, such as chili flakes or Szechuan peppercorn for extra flavor.
Cornflour:
Cornflour is a must-have ingredient in Chinese chicken wings recipes. It's used to make the chicken wings crispy and crunchy on the outside.
Soy Sauce:
Soy sauce is a crucial ingredient in Chinese cooking. It adds depth to the flavor of the dish and can be used to marinate chicken wings before cooking.
Fresh Ginger and Garlic:
Fresh ginger and garlic add a unique flavor to the chicken wings. Grate the ginger and finely chop the garlic to bring out the best flavor.
Vegetable Oil:
Vegetable oil is used to fry the chicken wings. Make sure to use a high smoke point oil, such as peanut oil, to avoid burning the chicken wings.
Shaoxing Wine:

Spices:
For the perfect flavor, add spices such as chili flakes, Szechuan peppercorn, or Chinese five-spice powder to the chicken wings.

Cooking Method:

The cooking method is the key to making amazing Chinese chicken wings. Below are some tips to ensure they come out perfectly every time.
Marinate the Chicken Wings:
Marinating the chicken wings before cooking is essential to add flavor to the dish. Mix the soy sauce, Shaoxing wine, ginger, garlic, and spices in a bowl and put the chicken wings into the mixture, making sure to coat them evenly. Leave to marinate for at least 30 minutes in the refrigerator.
Fry the Chicken Wings:
Deep-frying is the traditional cooking method for Chinese chicken wings, and it's best to use a wok or deep frying pan. Heat the vegetable oil in the wok or frying pan to around 180°C, then add the chicken wings in small batches. Fry the chicken wings until they turn golden brown, which takes about 7-8 minutes. Drain the chicken wings on a paper towel to remove excess oil.
Bake the Chicken Wings:
If you prefer a healthier option, bake the chicken wings in the oven instead of deep-frying them. Preheat your oven to 200°C, then place the chicken wings on a baking tray lined with parchment paper. Bake the chicken wings for around 25-30 minutes, flipping them halfway through cooking.

Tips for Serving:

Serving Chinese chicken wings properly can make all the difference in the experience. Here are some tips to make sure you get it right.

Garnish:
Garnishing your Chinese chicken wings can add an extra level of flavor and presentation. Try garnishing them with sesame seeds, green onions, or finely chopped cilantro for a visual appeal.
Dipping Sauce:
Chinese chicken wings are usually served with a dipping sauce. Make a simple dipping sauce by mixing soy sauce, rice vinegar, sesame oil, chili flakes, and chopped garlic.
Accompaniments:
To complete the meal, you can serve the Chinese chicken wings alongside other Chinese dishes such as stir-fried vegetables or fried rice.
