Time 8h30m

Number Of Ingredients 13

5 large egg yolks
3/4 cup white sugar
2 teaspoon vanilla extract
1/2 teaspoon almond extract
16 ounces mascarpone cheese
2 tablespoons dark rum
1 tablespoon Amaretto
1 3/4 cup heavy whipping cream
1 cup strong coffee or espresso (cooled)
2 tablespoons dark rum
1 tablespoon Amaretto
7 ounce package of dry lady fingers
1/2-3.4 cup finely shaved dark chocolate

Steps:

  • Start by making the sabayon and whisk the egg yolks, sugar, vanilla extract and almond extract until smooth. Bring a pot of water to a simmer and place bowl on top of the pot, making sure the water is not touching the bottom of the bowl.
  • Continue whisking for about 10 minutes, until mixture is slightly thickened and a light yellow color. Remove from heat and set aside while you prep the rest of the tiramisu.
  • Using an electric mixer, whisk mascarpone, dark rum and amaretto until smooth. Slowly drizzle in egg mixture and whisk until combined.
  • In a separate bowl, whisk the heavy cream until soft-medium peaks, about 3-5 minutes. Then fold in half of the whipped cream into the mascarpone mixture until incorporated and finish with the other half. The mixture will look a bit loose but will firm up as it chills.
  • Meanwhile, in another bowl, stir the coffee, dark rum and Amaretto together. Dip both sides of the ladyfingers into the coffee mixture and place in a 9inch x 13inch casserole dish, lining up the ladyfingers so they are in a snug single layer.
  • Spread half of the mascarpone mixture onto the first layer and dip the rest of the ladyfingers into the coffee mixture for the second layer and spreading the remaining mascarpone mixture on top.
  • Place a sheet of plastic wrap

Time 20m

Yield 2 servings

Number Of Ingredients 9

1 tablespoon unsweetened cocoa powder
1/2 cup hot espresso or strong brewed coffee
1 tablespoon rum
2 teaspoons granulated sugar
1/3 cup mascarpone cheese
1/2 cup heavy whipping cream
2 tablespoons confectioners' sugar
1/2 teaspoon pure vanilla extract
6 lady fingers (each cookie measuring about 4 1/2 by 1 inch)

Steps:

  • Sift about 1/3 of the cocoa powder into the serving glasses, dividing it equally between the two.
  • Combine the espresso, rum and granulated sugar in a small, wide bowl and stir until the sugar dissolves. (Make sure your espresso is hot, which will help the sugar dissolve.)
  • Beat the mascarpone cheese, heavy cream, confectioners' sugar and vanilla together in a large bowl until soft peaks form. Set the mascarpone cream aside.
  • Break a lady finger in half so that the two halves will fit snugly into your serving glass. Dip both sides of the halves into the espresso mixture. (Don't linger in the espresso-the delicate lady fingers will disintegrate!)
  • Place the lady finger pieces, hump-side up, in a layer in the serving glass. About two halves will fit in each layer. Top with about 2 tablespoons of the mascarpone cream and spread in an even layer. Sift in half of the remaining cocoa powder. Repeat the dipping and layering of the lady fingers and dolloping with the mascarpone cream until you reach the top of the serving glasses, finishing with the cream.
  • Dust the remaining cocoa powder on top of each glass in an even layer. Refrigerate until ready to enjoy and serve chilled.

Number Of Ingredients 7

3 large eggs, separated
5 tablespoons sugar, divided
1/2 pound mascarpone (about 1 cup) at room temperature
Pinch of salt
1/2 cup chilled heavy cream
1 cup brewed espresso or very strong brewed coffee, cooled to room temperature
5 ounces amaretti (crisp Italian macaroons; 30 to 40, depending on size)

Steps:

  • Beat together yolks and 2 tablespoons sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Beat in mascarpone until just combined.
  • Beat whites with salt in another large bowl with cleaned beaters until they just hold soft peaks. Add remaining 3 tablespoons sugar, a little at a time, beating, then continue to beat until whites just hold stiff peaks.
  • Beat cream in another bowl with cleaned beaters until it just holds stiff peaks. Gently but thoroughly fold cream into mascarpone mixture, then fold mixture into whites.
  • Pour espresso into a shallow bowl. Dip half of amaretti (15 to 20) in espresso for about 20 seconds, turning to coat both sides and letting excess drip off. Arrange in 1 layer in an 8-inch square baking dish. Spread half of mascarpone mixture evenly over amaretti. Make another layer in same manner with remaining amaretti (dipped in espresso) and mascarpone mixture. Chill at least 6 hours.

When it comes to romantic dinners for two, there's nothing quite like indulging in a decadent dessert together. One of the most impressive desserts you can make is a classic tiramisu, but why not give it a little twist by adding some amaretto liqueur to the mix? Here are some valuable tips to take into consideration when making amaretto tiramisu for two recipes.

Tip #1: Use High-Quality Ingredients

One of the keys to making a truly outstanding amaretto tiramisu is to start with high-quality ingredients. Don't skimp on items like the eggs, mascarpone cheese, and ladyfingers. Look for fresh, organic options when possible, and prioritize brands known for their quality. This will ensure that your dessert has the perfect texture and flavor.

Tip #2: Plan Ahead

Tiramisu may seem like a simple dessert, but it actually requires a fair bit of prep work. Keep in mind that the dessert needs at least several hours to chill and set in the refrigerator, so plan accordingly. Additionally, keep your ingredients at room temperature for at least an hour before beginning to ensure they mix together smoothly.

Tip #3: Use the Right Amount of Liquor

When making amaretto tiramisu, it's important to strike the right balance of flavors. You don't want the amaretto to overpower the other ingredients, but you also don't want to skimp on the liquor and end up with a bland dessert. A good rule of thumb is to add 1/4 to 1/3 of a cup of liqueur for a recipe that serves two people.

Tip #4: Whip the Mascarpone Cheese Thoroughly

The mascarpone cheese is a central ingredient in tiramisu, and whipping it correctly is crucial for achieving the right texture. Use an electric mixer to whip the cheese until it's light and fluffy, making sure to incorporate plenty of air. This will ensure that your tiramisu is creamy and rich.

Tip #5: Allow the Ladyfingers to Soak

The ladyfingers used in tiramisu are typically soaked in a mixture of coffee and liquor before being added to the dessert. It's important to allow the ladyfingers to soak for at least several minutes, so they become soft and infused with flavor. This gives the dessert a delicate, melt-in-your-mouth texture.

Tip #6: Be Careful with Raw Eggs

Many tiramisu recipes call for raw eggs, which can be a concern for some people due to the risk of salmonella. To minimize this risk, use pasteurized eggs or make sure to purchase fresh eggs and handle them carefully. It's also important to avoid serving tiramisu to anyone with a compromised immune system, such as young children or pregnant women.

Tip #7: Use Freshly Brewed Coffee

The coffee used in tiramisu is a key ingredient that can make or break the dessert. Avoid using instant coffee or coffee that's been sitting around for too long. Invest in high-quality beans and brew a fresh pot to use in your recipe. The richness and complexity of the coffee flavor will enhance the dessert and take it to the next level.

Tip #8: Garnish Creatively

A beautiful, carefully crafted dessert is a feast for the eyes as well as the palate. Take your amaretto tiramisu to the next level by adding creative and visually appealing garnishes. This might include a dusting of cocoa powder, a sprinkling of almond flakes, or a few raspberries arranged delicately on top.

Tip #9: Store it Properly

Once you've made your amaretto tiramisu, it's important to store it properly to keep it fresh and delicious. Cover the dish with plastic wrap and store it in the refrigerator for at least several hours to allow the flavors to meld together. If you have leftovers, make sure to store them in an airtight container in the refrigerator for up to 2-3 days.

Conclusion

Amaretto tiramisu is a decadent and romantic dessert that's perfect for a special evening with your loved one. By following these valuable tips, you'll be able to make a dessert that's not only delicious but visually stunning as well. Start with high-quality ingredients, plan ahead, and be careful with the raw eggs, and you'll have a dessert your partner won't soon forget.
