Time 2h

Yield 100

Number Of Ingredients 13

¾ cup amaretto liqueur
½ cup sweetened condensed milk
3 cups white sugar
¼ cup butter
1 ½ cups semisweet chocolate chips
1 cup dark chocolate chips
½ cup white chocolate chips
¾ cup white sugar
2 tablespoons sweetened condensed milk
2 tablespoons amaretto liqueur
1 ½ cups white chocolate chips
3 tablespoons butter
2 drops red food coloring

Steps:

  • Pour 3/4 cup amaretto liqueur and 1/2 cup condensed milk into a large saucepan over medium-low heat. Add 3 cups sugar and stir until dissolved. Add 1/4 cup butter, semisweet chocolate chips, dark chocolate chips, and 1/2 cup white chocolate chips; stir until mixture is smooth and all chocolate has melted, about 5 minutes. Reduce heat to low; stir occasionally to prevent the mixture from burning.
  • Heat 3/4 cup sugar, 2 tablespoons condensed milk, and 2 tablespoons amaretto in a small saucepan over medium-low heat; cook and stir until sugar is dissolved, about 5 minutes. Add 1 1/2 cups white chocolate chips, 3 tablespoons butter, and red food coloring; stir until smooth and coloring is evenly distributed, about 3 minutes.
  • Remove both saucepans from heat. Pour dark chocolate mixture into a square 10-inch aluminum foil pan. Let sit for 1 to 2 minutes. Drop spoonfuls of the white chocolate mixture on top and swirl into dark chocolate layer with a butter knife or toothpick. Shake pan lightly to settle fudge. Refrigerate until firm, about 1 hour and 30 minutes. Cut into 1-inch squares.

Amaretto Fudge Recipe - (4/5) image

Provided by á-43062

Number Of Ingredients 5

3 cups chocolate chips
1 can (14 ounces) sweetened condensed milk
1/2 teaspoon vanilla extract
2 tablespoons Amaretto Liquor (see note)
1/2 cup sliced toasted almonds

Steps:

  • 1. Line a 9x9" or an 8x8" pan with foil and spray with cooking spray. 2. Add chocolate chips and sweetened condensed milk to a medium saucepan. Place over low heat (keep it low!!) and heat until melted, stirring occasionally (more as they melt together). Once the chocolate chips are completely melted, remove from heat and stir in vanilla and Amaretto. Spread quickly in prepared pan. Immediately sprinkle with almonds. Set at room temperature until cool, and then chill until hardened. Notes: If you don't drink liquor, you can substitute 1 teaspoon almond extract for the Amaretto. Or, try a different flavor liquor for a different kind of fudge! To toast almonds, place on a cookie sheet and bake at 350 degrees for just a few minutes, stirring occasionally. DO NOT leave the room or they will burn!

CHOCOLATE COVERED CHERRY AMARETTO FUDGE RECIPE - (4/5)

Chocolate Covered Cherry Amaretto Fudge Recipe - (4/5) image

Provided by Lsweetnell

Number Of Ingredients 9

2 1/2 c. granulated sugar
1 c. unsalted butter
1/2 c. whole milk
1/2 tsp. vanilla extract
13 large marshmallows, torn in half
1 (9 oz.) package Nestle Toll House cherry flavored DelightFulls baking morsels
1 c. confectioners sugar
1/4 c. + 2 T. amaretto
heaping 1/3 c. well-drained maraschino cherries, cut in half {I pat them dry with a paper towel}

Steps:

  • Line a 9x9" pan, bottom and sides, with foil. Rub foil with butter or lightly spray with nonstick cooking spray. In a small bowl, whisk together confectioners sugar and amaretto. Set aside. Place granulated sugar, butter, and milk in a large pot. Bring to a full rolling boil over medium-high heat, stirring constantly. Continue stirring and boil for 3 minutes ~ this is important for the fudge to set up properly, so time it! {Make sure to stir constantly ... and to keep the mixture at a full rolling boil. If the mixture froths up too much, turn the heat down just a little bit. Also, I sometimes lift the pot off the burner, still stirring, for just a second or two.} After the 3 minutes, remove from heat. Add vanilla, marshmallows, and DelightFulls chocolate morsels. Stir until marshmallows and chocolate are completely melted and blended into the sugar mixture. Add amaretto mixture to the pot and stir until blended in. Gently stir in maraschino cherries. Pour into prepared (lined with plastic wrap) pan. Refrigerate until fully chilled. Once chilled, Turn out onto a tray and remove plastic wrap. Cut into to small squares. Store fudge in the refrigerator. Note ~ This is a fairly soft-textured fudge, best enjoyed straight out of the refrigerator or after having set out for just a short time. It still tastes great if it's set out for a while, but it will leave some chocolate on your fingers!

Amaretto fudge recipes are a delightful combination of sweet and nutty flavors with a texture that is creamy and indulgent. This type of fudge is often made with almond or almond-flavored liqueur, which adds a distinct and delicious taste to the candy.

History

The origin of amaretto fudge recipes can be traced back to the Italian region of Saronno, where the liqueur Amaretto was first created in the 16th century. The name Amaretto means "little bitter", referring to the slight bitterness of the almond flavor, which is balanced by sweeteners like sugar or honey. The popularity of the liqueur soon spread beyond Italy, and it became a popular ingredient in many desserts and sweet treats.

Ingredients

The main ingredients in amaretto fudge recipes usually include:
  • Sugar
  • Unsweetened cocoa powder
  • Butter or margarine
  • Evaporated milk or condensed milk
  • Amaretto liqueur
  • Almond extract
Other optional ingredients can be added to the recipe, such as chopped nuts, chocolate chips, or dried fruits.

Preparation

To prepare amaretto fudge, the sugar, cocoa powder, and butter or margarine are melted together in a saucepan over medium heat. The evaporated milk or condensed milk is then added to the mixture, stirring continuously until everything is well combined. Next, the mixture is brought to a boil, and the heat is reduced to low. The fudge is allowed to simmer for about 5-10 minutes, stirring constantly, until it reaches the desired consistency. Once the fudge is cooked, it is removed from the heat, and the amaretto liqueur and almond extract are stirred in. Optional ingredients can be added at this point, such as chopped nuts or chocolate chips. The mixture is then poured into a greased baking dish or lined with parchment paper, and left to cool at room temperature until it becomes firm. It can be refrigerated for a few hours to speed up the process.

Serving suggestions

Amaretto fudge can be cut into small squares or rectangles and served in a decorative box or tin for special occasions. It can also be wrapped in cellophane or wax paper and tied with a ribbon for an elegant and delicious gift. The fudge can be stored in an airtight container in the refrigerator for up to two weeks, or in the freezer for up to three months. To serve, let it thaw at room temperature for a few hours before cutting into pieces.

Variations

Amaretto fudge recipes can be adapted to suit different tastes and preferences. Some variations include:
  • White chocolate amaretto fudge
  • Dark chocolate amaretto fudge
  • Candy cane amaretto fudge
  • Pumpkin spice amaretto fudge
  • Maple amaretto fudge
Each of these variations can be made by substituting or adding different ingredients to the main recipe.

Conclusion

In conclusion, amaretto fudge recipes are a delicious and decadent treat that can be enjoyed on their own or given as a gift. With their rich chocolate flavor and nutty notes, they are a perfect addition to any holiday gathering or special occasion. Whether you prefer white, dark, or any other variation of the candy, there is an amaretto fudge recipe out there that is sure to satisfy your sweet tooth.
If you are a fan of sweet treats, then you have probably heard of amaretto fudge. This delicious dessert is made with almond liqueur and is perfect for any occasion. Making amaretto fudge is not a difficult task, but there are a few tips and tricks that you should know to ensure that you get the best results. In this article, we will share some valuable tips on how to make amaretto fudge recipes.

Choose the Right Ingredients

To make the best amaretto fudge, you need to use high-quality ingredients. This includes using good quality chocolate, heavy cream, butter, and of course, amaretto liqueur. When you are choosing the chocolate, go for a high-quality brand that is at least 60% cocoa. Low-quality chocolate may result in a fudge that is gritty and unpleasant.

Measure the Ingredients Carefully

One of the keys to making amaretto fudge is to measure the ingredients carefully. You need to measure the chocolate, cream, and butter exactly as directed in the recipe to ensure you get the right consistency. Using too much cream or butter can lead to a fudge that is too soft, and using too much chocolate can result in a fudge that is too hard.

Melt the Chocolate Carefully

Melting the chocolate is an essential part of making amaretto fudge. However, it is important not to overheat the chocolate, as this can cause it to seize and become clumpy. To melt the chocolate, you can use a double boiler or heat it in the microwave in short intervals. Be sure to stir the chocolate frequently to ensure it melts evenly.

Use a Candy Thermometer

Using a candy thermometer is highly recommended when making amaretto fudge. This will allow you to monitor the temperature of your fudge as it cooks. The ideal temperature for amaretto fudge is between 234-240°F (112-115°C). If the temperature rises too high, the fudge may become crumbly, and if the temperature is too low, the fudge may not set correctly.

Stir the Fudge Carefully

Stirring the fudge is a critical step in making amaretto fudge. You need to stir the mixture constantly, especially as it heats up. This will help to distribute the heat evenly and prevent the fudge from scorching. As the fudge cools, you should continue to stir it, as this will help to create a smoother texture.

Add the Amaretto Gradually

When adding the amaretto to your fudge, it is essential to do so gradually. Adding too much amaretto can alter the consistency of the fudge or make it too sweet. It is best to add the amaretto slowly, a tablespoon at a time, until you get the desired flavor.

Find the Right Setting to Cool the Fudge

Once you have finished making the fudge, you need to cool it down to the right consistency. The best way to do this is to let it sit at room temperature for a few hours. However, if you are in a rush, you can cool it down in the fridge. Be sure to cover the fudge with plastic wrap or aluminum foil, which will help to prevent it from drying out.

Cut the Fudge into Even Pieces

When it comes time to cut the fudge into pieces, it is important to do so evenly. You can use a sharp knife to cut the fudge into squares or rectangles. If you want to make the process easier, you can use a fudge cutter, which is a special tool designed for this purpose.

Store the Fudge Properly

Proper storage is essential to ensure the longevity and quality of your amaretto fudge. You need to store it in an airtight container in a cool, dry place. Avoid storing the fudge in the fridge, as this can cause it to become too hard. Amaretto fudge can last up to a month when stored correctly.
Conclusion
Making amaretto fudge is not difficult, but there are a few tips and tricks that you need to know to ensure that you get the best results. Choosing the right ingredients and measuring them carefully are essential. Melting the chocolate carefully, using a candy thermometer, and stirring the fudge regularly are also critical steps. Adding the amaretto gradually, finding the right setting to cool the fudge, and cutting it into even pieces will ensure that you have a perfectly delicious amaretto fudge. Finally, storing the fudge correctly will help to maintain its flavor and texture. Follow these tips and enjoy the delicious results.
