1 1/2 c all purpose flour
1/2 tsp baking powder
1/4 tsp kosher salt
1/2 tsp baking soda
3/4 c sugar
1/2 c cream cheese, room temperature
1/4 c butter, unsalted, room temperature
2 Tbsp amaretto liqueur
1 tsp pure vanilla extract
1 large egg
1/2 c sour cream
2 Tbsp milk
1 c apple, finely chopped
1 Tbsp all purpose flour
STREUSEL
2 Tbsp all purpose flour
2 Tbsp brown sugar, lightly packed
1/4 tsp cinnamon
2 Tbsp butter, unsalted, cubed and chilled
2 Tbsp almonds, sliced
GLAZE
1 c powdered sugar
4 tsp milk

Steps:

  • 1. Preheat oven to 350°. Place muffin cup liners in 12 muffin cups. In a bowl combine all purpose flour ( 1 1/2 cups) add baking powder salt and baking soda stirring with a whisk. Combine granulated sugar cream cheese and 1/4 cup butter in a large bowl beat with a mixer at medium speed until well blended.
  • 2. Combine sour cream and 2 tablespoon of milk in a small bowl stir with a whisk until well blended. Combine apple and 1 tablespoon flour in a small bowl toss well. Add flour mixture and sour cream mixture alternately to sugar mixture beginning and ending with flour mixture. Beat just until blended. Fold in apple mixture. Divide batter evenly among muffins cups.
  • 3. To make the streusel combine 2 tablespoon flour brown sugar and ground cinnamon in a small bowl. Cut in 2 tablespoons butter with a pastry blender until mixture resembles coarse meal: stir in almonds Sprinkle streusel evenly over muffins. Bake at 350° for 27 minutes or until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes on a wire rack and remove the muffins from the pan.
  • 4. To prepare glaze, combine powdered sugar and 4 teaspoons milk in a small bowl, stirring with a whisk. Drizzle glaze over cupcakes. If you don't have amaretto you can use almond extract instead (1/2 teaspoon).

Steps:

  • 1. While preheating oven to 400 degrees, sift together flour, baking powder and salt. Stir in brown sugar and dried cherries.
  • 2. In a separate bowl, beat egg lightly and then beat in milk, oil, vanilla extract, amaretto and applesauce. Make a well in the center of the dry ingredients and pour in egg mix, stirring to just mix. Bake for 20 mins.

2 level cups apple pieces (peeled) (, 0.7 cm / 1/3" cubes (2 large apples, I use red))
1 tbsp melted butter (, for muffin tim (or use paper liners))
115g / 0.5 cup unsalted butter (, melted (1 stick))
1 cup (200g) brown sugar (, packed)
2/3 cup (165 ml) milk ((low fat, full fat, non dairy also fine))
1 large egg ((approx 60g / 2 oz))
1 tsp white vinegar ((or any other clear vinegar))
2 cups (300g) wholemeal flour ((wholewheat flour)(white also ok, Note 1))
1 tsp baking soda (bi carb) ((NOT baking powder))
1 tsp cinnamon powder
Pinch salt
2 tbsp raw sugar ((demerara sugar - large granules))

Steps:

  • Preheat oven to 200C/390F.
  • Brush a 12 hole, standard muffin tin with melted butter, or line with paper cases. (Note 3)
  • Place butter and brown sugar in a bowl, whisk to combine.
  • Add milk, then egg and vinegar. Whisk to combine.
  • Scatter flour across batter surface, followed by baking soda, cinnamon and salt. Whisk 10 times until the flour is incorporated - some lumps is fine.
  • Stir through apple -minimum stirs just to disperse.
  • Scoop batter into muffin tin - I use an ice cream scoop - filling it all the way to the top. If using a scooper, leave it the slight ball shape (see video) - don't smooth the top. You should get 12 (see Note 3).
  • Sprinkle with sugar (if using - makes surface slightly crispy), place muffins in the oven.
  • Immediately turn down to 180C/350F.
  • Bake for 20 minutes (standard) or 18 minutes (fan / convection) , or until a skewer comes out clean.
  • Rest in the muffin tin for 5 minutes then transfer to a rack to cool.
  • Once fully cooled, store in an airtight container - it will stay moist for up to 5 days. These also freeze very well.
