THE BEST MACARONI AND CHEESE

The Best Macaroni and Cheese image

Amanda Hesser brought this recipe to The Times in a 1998 article about a return to simply-prepared, down-home foods in response to the brash, over-the-top 90's style of cooking. It's an adaptation of one found in Pam Anderson's book, "The Perfect Recipe," and it calls for stirring the mixture every five minutes while it is baking. This gives it the ideal balance of lightness and creaminess -- a detail that is missing from most macaroni and cheese recipes.

Time 1h

Yield 4 servings

Number Of Ingredients 10

1 cup fresh bread crumbs from French or Italian bread
2 teaspoons salt, plus a pinch
1 1/2 tablespoons melted butter, plus 4 tablespoons butter at room temperature
1/2 pound elbow macaroni
2 large eggs
12 ounces evaporated milk, heated until warm
1/4 teaspoon hot red-pepper sauce
1/4 teaspoon freshly ground black pepper
1 teaspoon dry mustard, dissolved in 1 teaspoon water
10 to 12 ounces mild cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees. Place a 1 1/2-quart heat-proof dish, such as a souffle pan, in oven to warm.
  • In a small baking pan, combine bread crumbs, a pinch of salt and the melted butter. Mix well and set aside.
  • In a large pot, bring 8 cups of water to a boil. Add 1 1/2 teaspoons of salt and the macaroni. Cook until almost tender but still a little firm to the bite. Drain and transfer to preheated dish. Stir in remaining 4 tablespoons of butter.
  • In a small bowl, combine eggs, 1 cup of the evaporated milk, the pepper sauce, 1/2 teaspoon salt, the black pepper and the mustard mixture. Mix well. Pour egg mixture over macaroni. Add 3/4 of the cheese, and stir until thoroughly combined and cheese starts to melt.
  • Place dish of macaroni and cheese in the oven, and bake for 5 minutes. Remove dish from oven and add about half of the remaining evaporated milk, and half of the remaining cheese. Stir well, and return pan to oven. Bake 5 minutes longer, remove pan from oven, and stir thoroughly. If mixture does not look moist and creamy, add a little more of the milk and cheese. Return to oven for an additional 20 minutes, removing pan from oven halfway through to stir in remaining evaporated milk and cheese.
  • While macaroni is baking, add pan of bread crumbs to oven. Bake until bread crumbs are toasted and golden brown, 10 to 15 minutes. Remove from oven and set aside. When macaroni has baked, sprinkle surface with toasted bread crumbs, and serve immediately.

MACARONI AU GRATIN

Macaroni au Gratin image

This 30-minute mac and cheese from chef Ashley Christensen is a bestseller at her Raleigh, NC restaurant, Poole's Diner. What makes it special: the three-cheese combo is brûléed under the broiler for a crust you must crack through to reach the creamy macaroni below.

Provided by Ashley Christensen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 7

1 1/2 tablespoons kosher salt
6 ounces dry elbow macaroni, about 1¼ cups
2 ounces Grana Padano cheese, grated, or Parmesan
2 ounces Jarlsberg cheese, grated, or Gruyère
6 ounces white Cheddar, grated
2 cups heavy cream
Sea salt

Steps:

  • Preheat broiler. In a medium saucepan over high heat, bring 2 quarts water and kosher salt to a boil. Add macaroni and return water to a boil; cook until barely al dente, about 5 minutes. Meanwhile, in a large bowl, stir the grated Grana Padano, Jarlsberg, and Cheddar cheeses to combine. Set aside. Taste a macaroni for doneness: it should be chewy yet firm. Strain macaroni in a colander and set aside.
  • Add heavy cream and a pinch of sea salt to an oven-safe skillet; turn heat to medium-high and bring to a simmer. When cream is simmering, fold in the macaroni. Continue to simmer to reduce and thicken, about 1½-2 minutes. Stir in ¼ of the cheese mixture to combine with noodles. Turn off the heat and stir in another ¼ of the cheese. Place remaining cheese over the top in an even layer (do not stir).
  • Set rack in the oven about 4 inches from the broiler. Place skillet under the broiler until cheese melts and caramelizes into a golden brown crust, 3-5 minutes (keeping an eye on it so it doesn't burn). Remove gratin from oven and let rest 5 minutes before serving.

Time 40m

Yield 4 servings

Number Of Ingredients 9

2 tablespoons butter, plus more for casserole dish
2 tablespoons flour
2 cups milk
1 1/2 cups grated Monterey Jack cheese, plus more for sprinkling
3 1/2 cups cooked elbow macaroni
1 cup small cubes roasted country ham
1 cup canned Italian plum tomatoes, drained
3/4 cup coarse bread crumbs (made from stale bread cut in little cubes)
Freshly ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees. Butter a casserole dish. In a saucepan, heat the 2 tablespoons butter until foamy. Sprinkle in flour and whisk until it turns golden, then slowly pour in milk, continuing to whisk. Bring to a simmer and let thicken. Stir in the cheese. It should be a loose sauce. Fold in macaroni, then ham. Add tomatoes by squeezing them into small pieces. Taste and adjust seasoning. If mixture is too thick, add a little milk or drained tomato juice.
  • Pour into the casserole dish. Sprinkle with bread crumbs and then about 1/4 cup cheese. Grind pepper over top. Bake until browned on top, about 25 minutes.

Valuable Tips for Making Amanda Hesser's Macaroni and Cheese Recipe

Macaroni and cheese is a classic comfort food that is loved by many. Amanda Hesser's macaroni and cheese recipe is a delicious version of this classic dish that is sure to satisfy your cravings. However, making macaroni and cheese can be tricky, and it's important to follow some valuable tips to ensure that your dish turns out perfectly. In this article, we'll share with you some valuable tips for making Amanda Hesser's macaroni and cheese recipe.
1. Choose a Good Quality Cheese
The quality of the cheese you use will make a big difference in the taste and texture of your macaroni and cheese. Amanda Hesser's recipe calls for gruyere and cheddar cheese, but you can use any good quality cheese you like. Avoid using pre-shredded cheese as it often contains additives that can affect the texture and flavor of your dish. Instead, buy a block of cheese and shred it yourself for the best results.
2. Cook the Macaroni Al Dente
One of the biggest mistakes people make when making macaroni and cheese is overcooking the macaroni. To avoid this, be sure to cook your macaroni al dente, which means it should be cooked through but still firm to the bite. Overcooking the pasta can result in a mushy texture and can affect the overall flavor of your dish.
3. Make the Cheese Sauce on Low Heat
When making the cheese sauce for your macaroni and cheese, it's important to do it on low heat. This will help to prevent the cheese from curdling and becoming grainy. Be patient and stir the cheese sauce constantly until all of the cheese has melted and the sauce is smooth and creamy.
4. Use a Roux to Thicken the Cheese Sauce
To thicken the cheese sauce for your macaroni and cheese, you'll need to make a roux. A roux is a mixture of equal parts flour and butter that is used as a thickening agent for sauces. Be sure to cook the roux until it has turned golden brown before adding it to the cheese sauce. This will help to eliminate any floury taste and will give your sauce a rich, nutty flavor.
5. Bake the Macaroni and Cheese
While it's possible to serve your macaroni and cheese straight out of the pot, baking it will provide an extra layer of flavor and texture. Be sure to use a baking dish that is large enough to hold all of the macaroni and cheese, and bake it in the oven until the top is golden brown and the cheese is bubbling.
6. Add Some Seasonings
While macaroni and cheese is delicious on its own, adding some additional seasonings can take it to the next level. Amanda Hesser's recipe calls for mustard powder, cayenne pepper, and nutmeg to be added to the cheese sauce, but you can experiment with other seasonings as well. Try adding some fresh herbs, such as thyme or parsley, or some garlic powder for a more savory flavor.
7. Serve It with a Side Salad
Macaroni and cheese is a rich and heavy dish, so it's a good idea to serve it with a light and refreshing side salad. A simple green salad with a vinaigrette dressing or a classic caesar salad can provide a nice contrast to the creamy pasta dish.

Conclusion

Making macaroni and cheese is a classic comfort food that is loved by many, and Amanda Hesser's recipe is a delicious version of this popular dish. By following the valuable tips we've shared in this article, you can ensure that your macaroni and cheese turns out perfectly every time. Remember to choose a good quality cheese, cook the macaroni al dente, make the cheese sauce on low heat, use a roux to thicken the sauce, bake the macaroni and cheese, add some seasonings, and serve it with a side salad for a complete and satisfying meal.
