ALPHABET BEEF VEGETABLE SOUP- CROCK POT

Alphabet Beef Vegetable Soup- Crock Pot image

Good hearty soup for those cold and rainy days, and so easy to make, just pitch it all in the crock pot! I made the mistake of putting the noodles in and letting it go too long, and they totally dissolved. It still tasted fine, it was just thicker. Make sure you put them in no more than an hour before you're ready to serve. I also use whatever meat is cheap, doesn't have to be sirloin because it's gonna cook all day. From Family Circle 10/7/09

TOMATO ALPHABET SOUP

Tomato Alphabet Soup image

A taste of nostalgia can be comforting. Inspired by the childhood favorite, canned tomato soup, this homemade version yields a lush and satisfying meal culled from kitchen staples. The process of separating your canned tomatoes from their juices, cooking them until caramelized and enhancing their strength with concentrated tomato paste helps develop deep roasted tomato flavor. If you can't find alphabet pasta, any other small pasta will be delicious.

Provided by Maggie Ruggiero

Categories     dinner, easy, lunch, noodles, soups and stews, vegetables, appetizer, main course

Time 50m

Yield 4 to 6 servings (about 8 cups)

Number Of Ingredients 10

2 tablespoons extra-virgin olive oil
3 tablespoons unsalted butter
1 medium yellow or red onion, finely chopped
2 garlic cloves, smashed
Kosher salt and black pepper
1 medium carrot, chopped
1 rib celery, chopped
1 (28-ounce) can whole peeled tomatoes in juice
1 tablespoon tomato paste
1/2 to 1 cup alphabet pasta (or other very small shaped pasta), depending how hearty you like your soup

Steps:

  • Heat oil and 1 tablespoon butter in a heavy pot over medium heat. Stir in onion and garlic, season with salt and pepper, and cook, stirring often, until onions are softened, about 5 minutes.
  • Stir in carrot and celery, and cook, stirring occasionally, until just tender, about 10 minutes.
  • While the vegetables cook, strain the tomatoes over a bowl, separating the juice from the whole tomatoes, then squeeze the tomatoes over the liquid. Add the squeezed tomatoes and the tomato paste to the pot and cook, stirring frequently, until tomatoes start to caramelize, about 15 minutes.
  • Meanwhile, cook the pasta in salted boiling water according to packing instructions. Reserve 1 cup of cooking liquid, strain, then return pasta to the pasta pot and gently stir in remaining 2 tablespoons butter; season to taste with salt and pepper and set aside.
  • Add the tomato juices from the bowl and 2 cups water to the soup pot, stirring to scrape up any caramelized bits. Bring to a gentle simmer and cook, partly covered, until the vegetables are very tender, 10 to 15 minutes.
  • Using an immersion or countertop blender, pureé the soup until very smooth. (If using a countertop blender, blend in batches with a kitchen towel over the lid of the blender.) Stir in pasta water as needed to thin soup to desired consistency. Stir in buttered alphabets and adjust seasoning. Divide among soup bowls.

VEGGIE BEEF ALPHABET SOUP

Veggie Beef Alphabet Soup image

I started making this when my kids were little because I could get them to eat it because of the tiny Alphabet noodles and it is still a family favorite. Best served with cornbread, bisquits or hot rolls. Makes a whole meal.

Provided by Susie LaLonde

Categories     Other Main Dishes

Time 3h30m

Number Of Ingredients 16

1 1/2-2 lb lean stew beef or roast (round steak or any sort of beef roast or steak)
1/2 stick butter or margerine
1-3 qt hot tap water, depending on size of your pan (should use a large 8-12 quart)
1 medium onion peeled and diced
5 Tbsp beef base or 8-10 boullion cubes (base is much better and easier)
5 large potatoes peeled and diced
1 lb carrots peeled and sliced
2 medium fresh corn on the cob or 1 can of corn (fresh is much better)
1 can(s) 10-12 oz. can of tomato sauce
1 can(s) french cut green beans (small can)
1/2 pkg alphabet noodles, uncooked (small package)
1 c very strong black coffee
1 tsp paprika
1 tsp garlic powder
1/2 tsp black pepper
1/2 - 1 tsp salt (do not add till very end as beef base is very salty you may not need it)

Steps:

  • 1. Cut your meat to small pieces..bite sized. Remove all fat bones etc. melt the butter in big soup kettle and then brown your meat until it is super dark brown stirring constantly so it does not burn but you want the dark brown in the bottom (makes better soup stock the darkest you can get it without burning it)
  • 2. When your meat is brown enough fill your soup pan to about 3/4 full of hot water add your cup of strong coffee, beef base or boullion and garlic powder and cover (very important so the stock does not evaporate too fast) on it and simmer it until it is tender, about an hour to hour and a half depending on the meat.
  • 3. Peel and cut 5 good size potatoes, 1 lb. bag of carrots and dice 1 onion into small pieces. Add your onion to the beef as soon as it is cut and put your carrots and potatoes in a bowl with cold water covering so they don't get all brown and nasty while the beef cooks. With a very sharp knife cut off all of the corn from the cobs and put aside in bowl.
  • 4. Test your meat and check to see that stock does evaporate too much (add more water to at least 1/2 pan full during the time your meat is cooking)
  • 5. When tender enough add your carrots and potatoes and corn, tomato sauce and paprika and cook for 10-15 minutes until fork tender, add green beans and alphabet noodles cook 15 minutes more. Salt and Pepper to taste VIOLA!

CHICKEN ALPHABET SOUP

Chicken Alphabet Soup image

I modified a beef alphabet soup to use chicken and chicken broth and it turned out fantastic! More of a stew than a soup. So good in fact, a niece who seen me when I put the beans on soak said she wanted to try the soup after it was made, and she came back for a second bowl, and she is also a cook who runs a small kitchen near us. I and my family really enjoyed this.

2 1/2 teaspoon(s) italian seasoning
3-4 can(s) great northern beans, drained, (15 oz / 425 g each)1 lb)
1 can(s) diced tomatoes, undrained, (565 g / 20 oz)
2 cup(s) dry alphabet pasta
salt as needed
pepper as needed

Steps:

  • For this recipe I cooked 500 grams (1 lb) of dry Great Northern beans in my pressure cooker. I used all the beans in this recipe, and some of the bean broth. For convenience (I have a lot of time on my hands), feel free to use 3-4 cans of Great Northern beans, drained and you may need additional water.
  • For the chicken, I pressure cooked 4 chicken breasts that weighed 1 kilo (2 lb), this also provided my 2 quarts of broth, as I did add trinity to the pressure cooker before cooking, plus a good palmful of black peppercorns. Feel free to cook the chicken anyway you like, then cube it. If using a pressure cooker or boiling it, after it is cooked, let it set in the broth to room temp for juicy chicken. (Again, I have a lot of time on my hands.)
  • While the beans were pressure cooking, takes the longest at 8 minutes, I diced the carrot, celery (Chinese celery, which is small diameter), onion, and minced the garlic.
  • To a large pot, add the carrot, celery, onion, garlic, and Italian seasoning.
  • Add the undrained tomatoes, broth, and the drained beans (if you pressured cooked the beans, drain them but retain the bean broth.) Stir the soup to mix and bring to a boil then reduce to a simmer.
  • Simmer 30 minutes, string often, or until the carrot is tender.
  • Stir in the dry pasta and cubed chicken, simmer for another 10-15 minutes to cook the pasta and heat the chicken. If more liquid is needed, use some bean broth or water. Taste and season with salt and pepper as needed.
  • When the pasta is cooked (the Thai family, my wife included, said it looked like rice), taste and season as needed with salt and pepper. The consistency is more like a stew, which was perfect.
  • Ladle into bowls and serve. Enjoy.

Alphabet soup, also known as alphabet pasta, is a type of soup that is made with small pasta shapes in the form of letters of the alphabet. This type of soup is popular among children, but adults also enjoy it as well. Alphabet soup is an excellent way to make use of leftover ingredients and can be customized according to your preferences. However, making alphabet soup can be challenging if you have never done it before. There are some valuable tips you should keep in mind when preparing this type of soup to ensure that it turns out perfectly.

Choose the Right Pasta Shapes

One of the essential aspects of making a good alphabet soup is selecting the right pasta shapes. The pasta shapes you choose must be small enough to fit in a spoon and have enough space to form letters. The most common pasta shapes used in alphabet soup include small shells, small elbows, small stars, and small letters. You can also mix different pasta shapes to create a fun and unusual soup. However, make sure to cook them separately before combining them in the soup to prevent overcooking. It is also essential to follow the package instructions for cooking the pasta to ensure that they are cooked correctly.

Make Your Broth Flavorful

The broth is the foundation of a good alphabet soup. To make a flavorful broth, start by sautéing diced onions in olive oil until they are translucent. Then, add diced carrots, celery, and garlic and cook until they are tender. Next, add vegetable or chicken stock and season with salt and pepper. You can also add herbs and spices like bay leaves, thyme, or rosemary for additional flavor. Simmer the broth for at least 30 minutes and skim any foam or impurities that rise to the surface.

Add Vegetables and Protein

Adding vegetables and protein to your alphabet soup is a great way to make it more nutritious and filling. You can add any vegetables you have on hand, such as peas, corn, green beans, or diced tomatoes. You can also add beans, diced chicken, ground turkey, or ground beef. Make sure to cook any protein before adding it to the soup. For instance, if you are using ground turkey or ground beef, brown it in a separate pan before adding it to the soup. If you are using chicken, make sure it is fully cooked before adding it to the soup.

Balance the Flavors

Alphabet soup can be bland if you don't balance the flavors. To balance the flavors, you need to add a balance of salty, sweet, tangy, and umami flavors. You can achieve this balance by adding ingredients like soy sauce, Worcestershire sauce, apple cider vinegar, or lemon juice. You can also add a little sugar or honey to balance out the acidity if necessary. Taste the soup as you go and adjust the seasoning as needed until you achieve the perfect balance of flavors.

Don't Overcook the Pasta

The pasta in an alphabet soup can easily overcook and become mushy if you are not careful. To prevent overcooking the pasta, cook it separately and add it to the soup at the end. Make sure to rinse the pasta under cold water after cooking to prevent it from sticking together. When adding the pasta to the soup, make sure the soup is at a simmer, and the pasta is heated through. Overcooking the pasta can ruin the texture of the soup, so make sure to monitor it closely.
Conclusion
Making alphabet soup is a fun and easy way to use up leftover ingredients and create a tasty and nutritious meal. By following these tips, you can make sure that your alphabet soup turns out perfectly every time. Remember to choose the right pasta shapes, make a flavorful broth, add vegetables and protein, balance the flavors, and don't overcook the pasta. With these tips, you can create a delicious and satisfying alphabet soup that everyone will love.
