Time 8h10m

Number Of Ingredients 20

1 tablespoon extra virgin olive oil
1 pound boneless chuck roast or beef stew meat (cut into 1-inch cubes)
2 teaspoons kosher salt (divided)
¼ teaspoon black pepper
3-4 cups low sodium beef broth (divided)
1 small yellow onion (diced)
2 cloves garlic (minced (about 2 teaspoons))
4 large carrots (peeled and finely chopped)
2 Yukon gold potatoes (peeled and diced)
2 parsnips (peeled and diced)
2 ribs celery (diced)
1 can (14.5 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
3 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
½ teaspoon smoked paprika
1/2 teaspoon granulated sugar
1 cup peas (fresh or frozen (no need to thaw))
Chopped fresh parsley (optional for serving)

Steps:

  • In a large skillet, heat the oil over medium high. Add the beef and sprinkle with 1 teaspoon salt and pepper. Brown the beef on all sides, disturbing it as little as possible on each side so that it develops nice coloring. Once the beef is lightly browned (it won't be all the way cooked through), remove it to a 6-quart slow cooker.
  • To the pan, add the onion. Cook and stir until the onion is beginning to soften, about 3 minutes. Stir in the garlic and let cook 30 seconds. Splash in about 1/2 cup the beef broth and scrape up any browned bits that have stuck to the bottom (this is flavor!). Let the broth reduce for 2 minutes, then transfer the entire mixture to the slow cooker.
  • To the slow cooker, add the carrots, potatoes, parsnips, and celery.
  • Add the diced tomatoes in their juices, tomato sauce, tomato paste, Worcestershire, oregano, paprika, sugar, 2 1/2 cups beef broth, and remaining 1 teaspoon salt.
  • Cover and cook on low for 8 hours, until the beef and vegetables are tender. Stir in the peas, just until warmed through. If the soup is thicker than you would like, add the remaining 1 cup beef broth until you reach your desired consistency. Serve hot, sprinkled with fresh parsley.

Soup is a comfort food that is easy to make and provides warmth and nutrients during cold days. The benefit of using a crockpot to make soups is that ingredients can be conveniently placed and cooked together over a long period without constant supervision. Alphabet beef vegetable soup is a wholesome soup that is filling, easy to make, and can be enjoyed by people of all ages. Below are valuable tips to guide you when making alphabet beef vegetable soup in a crockpot.

Tip 1: Choose the Right Meat

Choosing the right meat is crucial in determining the taste and texture of the soup. Beef is the best option for alphabet beef vegetable soup because it adds flavor to the soup and is also tender. When buying beef, consider purchasing cuts that are well-marbled as they are juicer and more flavorsome. Additionally, you should cut your meat into smaller pieces to ensure that it cooks evenly.

Tip 2: Use Fresh Vegetables

Vegetables are an essential part of any soup, and using fresh vegetables adds to the flavor and nutritional value of the soup. Use seasonal vegetables that are readily available in your local market for the best results. You can also add frozen vegetables, but ensure that they are not overcooked as they may become soggy and lose their flavor.

Tip 3: Prepare Your Veggies Ahead of Time

To save time, you can prepare your vegetables ahead of time. Wash and chop your vegetables into bite-size pieces, and store them in an airtight container in the fridge. This will make it easy to add them to your soup when you are ready to cook. You can also consider using a food processor to chop your vegetables more efficiently.

Tip 4: Use Broth or Stock

To add flavor to your soup, consider using broth or stock instead of plain water. Alternatively, you can use a bouillon cube, which dissolves in water and adds flavor to the soup. When using broth or stock, you should add it to the crockpot after adding the meat and vegetables.

Tip 5: Add Flavor with Herbs and Spices

Herbs and spices are an essential part of any soup, and they add flavor and aroma to the dish. When making alphabet beef vegetable soup, consider using herbs such as parsley, basil, or thyme, and spices such as paprika or cumin. You should add these herbs and spices towards the end of the cooking process to prevent them from losing their flavor.

Tip 6: Layer Your Ingredients

Layering your ingredients is an essential step when making crockpot soups. Start by adding your meat, followed by your vegetables, and then your broth or stock. This will ensure that the meat cooks evenly and that the vegetables do not become too mushy. You can also add the herbs and spices towards the end of the cooking process.

Tip 7: Cook the Soup on Low Heat

To ensure that your soup is cooked slowly and evenly, cook it on low heat. This will allow the flavors to meld together, and the meat to tenderize. This way, you can leave your soup to cook for up to 8 hours without worrying about it burning or overcooking.

Tip 8: Stir Occasionally

Stirring your soup occasionally will ensure that the ingredients are well-distributed, and that nothing sticks to the bottom of the pot. You should avoid opening the crockpot unnecessarily as this can cause heat to escape and slow down the cooking process.

Tip 9: Add Noodles Towards the End

If you decide to add noodles to your soup, consider adding them towards the end of the cooking process. This is because noodles cook quickly, and adding them too soon will cause them to become too soft and lose their texture. You can also consider cooking the noodles separately, and adding them to the soup when you are ready to serve.

Tip 10: Adjust the Seasoning

Taste your soup before it finishes cooking, and adjust the seasoning to your liking. Salt and pepper are essential seasonings that you can use to adjust the flavor of your soup. Consider adding additional herbs and spices to give your soup a unique flavor.

Conclusion

In conclusion, alphabet beef vegetable soup crockpot recipes are easy to make and nutritious. The tips provided above are useful in guiding you through the process of making delicious alphabet beef vegetable soup in a crockpot. Remember to choose the right meat, use fresh vegetables, prepare your veggies ahead of time, use broth or stock, add flavor with herbs and spices, layer your ingredients, cook on low heat, stir occasionally, add noodles towards the end, and adjust the seasoning. Follow these tips, and you are guaranteed to make a soup that is wholesome, hearty, and delicious.
