GRILLED STEAK SUMMER SALAD
This salad combines some of my favorite summer flavors like bright cherry tomatoes, grilled sweet corn and caramelized onions with juicy seasoned steak and creamy gorgonzola!

Steps:
- Prepare the steak by removing from refrigerator and placing onto counter. Let come to room temperature for 1 hour before grilling/cooking.
- Season steaks by drizzling lightly with olive oil and seasoning well with kosher salt and pepper on both sides.
- For the grill: Plan to grill for about 8 minutes per side over high heat, turning just once. The key is to cook until the steak is about 135-140 degrees internally, because it will continue to cook once removed from the grill. Take off, tent with foil and let rest for at least 10 minutes before slicing.
- Meanwhile, grill corn with husks on for 3 minutes per side, rotating often. Then peel back the paper and let corn roast on grill for a few minutes to char.
- In a bowl, place chopped kale and drizzle on a few teaspoons of olive oil. Massage kale with hands to soften.
- Top kale with cherry tomatoes, grilled corn (cut off husks), sliced steak, crumbled gorgonzola and prepared pesto!
GRILLED STEAK SALAD WITH CRUMBLY BLEU SALAD DRESSING
A lovely summer salad topped with grilled steak slices and served with a delicious vinaigrette dressing with crumbly bleu cheese added.

Steps:
- In a small bowl, combine the first seven ingredients and mix well.
- Stir in blue cheese.
- Cover and refrigerate.
- Brush olive oil on steaks and sprinkle with Monreal Steak Seasoning.
- Grill steaks, uncovered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness.
- Thinly slice meat.
- On a serving platter or individual salad plates, arrange lettuce, tomato, carrot, onion and olives.
- Top with steak and dressing.

TOMATO GRATIN
This recipe uses sourdough bread along with the tomatoes and crumbled goat cheese or feta cheese. This dish can be baked and served immediately or assembled and refrigerated overnight before baking.

- Heat the oven to 350 degrees. Lightly coat a shallow 2-quart baking dish with olive oil or cooking spray.
- Arrange 4 slices of bread over the bottom of the baking dish, tearing to fit. Top with half the tomato slices. Sprinkle the garlic over the tomatoes, then sprinkle with half the chives. Season with salt and pepper. Crumble the goat cheese or feta over the chives and drizzle with half of the oil. Top with remaining bread slices, pressing firmly to fit. Arrange remaining tomato slices on top, then sprinkle with the remaining chives, the parmesan cheese, and additional pepper to taste. Drizzle with remaining 1 1/2 teaspoons oil. Bake for 40-45 minutes or until the cheese on top is golden and the tomatoes are soft.
ANA'S ASIAN NY STRIP STEAK
Great when you feel like having something different on the grill! Preparation time does not include marinating time in refrigerator. Cooking time includes cooking time and setting time before slicing.

- Whisk soy sauce, Worcestershire, lemon juice, cilantro and ginger root to blend. Pour into a large Zip-lock bag.
- Add steak, and turn to coat. Let stand 1 hour at room temperature, or refrigerate overnight.
- When ready to cook, prepare barbecue.
- Drain marinade into small sauce pan, and bring to boil. Set aside, and keep warm.
- Grill steak about 3-5 minutes per side, depending on how rare or well done you like it. Let steak stand for 10 minutes.
- Thinly slice across grain.
- Drizzle sauce over top.

- Whisk shallot and lemon juice in small bowl to blend. Gradually whisk in oil. Season to taste with salt and pepper. Let stand 15 minutes to blend flavors.
