ALOHA PINEAPPLE CHICKEN RICE CASSEROLE

Steps:
- Preheat oven to 425 degrees F. Spray a baking dish with cooking spray. I used an 11 x 7-inch dish.
- In a large bowl, whisk together brown sugar, soy sauce, garlic, and chicken broth.
- Add uncooked rice, onion, bell pepper, pineapple and it's juices and chicken. Cover the baking dish tightly with foil. Bake for 50 minutes. Once cooking is done, uncover and stir ingredients.
- Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until chicken is cooked through and rice is tender.
- Let stand 5 minutes before serving. Top with diced bacon and cilantro.

- Preheat oven to 375°. Place chicken in a greased 13x9-in. baking dish. In a small bowl, mix ketchup, soup, green pepper, vinegar, brown sugar and mustard; stir in pineapple. Pour over chicken., Bake, uncovered, 25-35 minutes or until a thermometer reads 165°. Serve with rice. Freeze option: Freeze cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally.

- Preheat oven to 325 degrees F (165 degrees C).
- Melt butter in a saucepan over medium heat; stir ketchup and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornstarch into vinegar until smooth; pour into pan. Whisk constantly and add salt, soy sauce, and Worcestershire sauce to mixture; bring to a simmer. Cook until thickened, about 2 minutes. Stir pineapple into sauce.
- Arrange chicken pieces in a 9x13-inch baking dish; pour pineapple sauce over chicken.
- Bake until sauce is bubbling, chicken is browned, and the juices run clear, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C).

- Whisk pineapple with its juice and honey in a bowl until combined.
- Season chicken cubes with salt and pepper and place in a plastic bag covered with 2/3 of the pineapple sauce.
- Refrigerate for at least an hour.
- Place chicken on baking pan lined with foil and broil on middle rack for 6-8 minutes per side, or until cooked through.
- For dipping sauce: While chicken is broiling, put the remaining sauce in a saucepan and cook over medium heat for 1 minute or until thickened.

- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika

Instructions
Chicken
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine salt, pepper, garlic powder, paprika, and cayenne pepper.
- Place the cornstarch in a shallow dish.
- Coat the chicken breasts with the seasoned salt mixture, then coat them in cornstarch.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts and cook for 2-3 minutes on each side, until golden brown.
- Transfer the skillet to the oven and bake for 18-20 minutes, until no longer pink.
- Remove from oven and transfer to a serving platter.
Pineapple Dip
- In a small saucepan, combine soy sauce, pineapple juice, brown sugar, honey, apple cider vinegar, ginger, garlic powder, and onion powder.
- Bring the mixture to a boil over medium heat.
- In a small bowl, whisk together water and cornstarch until smooth.
- Slowly pour the cornstarch mixture into the soy sauce mixture, whisking constantly.
- Bring the mixture to a boil and cook for 1-2 minutes, or until thickened.
- Remove from heat and stir in diced pineapple, red pepper, and green onion.
- Serve the pineapple dip with the chicken on the side or spoon the dip over the chicken, garnish with green onions and additional diced pineapple if desired.
