ALOHA HAWAIIAN BANANA BREAD

Aloha Hawaiian Banana Bread image

I love this recipe because it uses really ripe bananas that you can catch on sale so it saves money and because Splenda works well in it. I've never tried the other national brands of artificial sweeteners, so I can't comment on how they'll work. You can also make this with regular sugar. If you do, OMIT the honey. Macadamias are very expensive, but wonderful in this recipe. Pecans and walnuts work just as well. Use either or a mixture of the two for an extra kick. Try it for breakfast with a cup of hot tea or coffee. This recipe yields 2 good size loaves so you can enjoy one now and freeze the other or pass it along to a friend.

Time 1h15m

Yield 2 loaves, 16 serving(s)

Number Of Ingredients 13

3 cups all-purpose flour or 3 cups bread flour
3/4 teaspoon salt
1 teaspoon baking soda
2 cups Splenda sugar substitute
1 teaspoon ground cinnamon
1 cup chopped nuts (macadamias are preferred)
3 eggs, beaten
1 cup canola oil or 1 cup olive oil
2 cups mashed ripe bananas
1 (8 ounce) can crushed pineapple, in its own juice, drained
2 teaspoons vanilla extract
2 tablespoons honey
bakers joy cooking spray (or extra flour and shortening)

Steps:

  • Your will need two (8 1/2x4 1/2x3) loaf pans.
  • Preheat oven to 350 degrees.
  • Spray two (8 1/2x4 1/2x3) loaf pans with Bakers Joy (or grease and flour) and set aside.
  • In a medium bowl, combine the first 5 ingredients and stir with a wire wh.isk to blend well.
  • Stir in nuts to combine and set aside.
  • In another bowl, combine the eggs, oil, mashed bananas, pineapple, vanilla and honey (if you're using Splenda) Stir lightly just to mix.
  • Add the wet ingredients to the dry and mix only enough to moisten the dry.
  • DO NOT overmix or your bread will be tough and heavy.
  • Its ok to have some lumps.
  • Spoon the dough into the two pans, making sure to divide it equally between the two.
  • Bake for about 1 hour to 1 hour 10 minutes.
  • A good rule of thumb is to check after about 50 minutes.
  • Insert a toothpick or bamboo skewer into the center to test for doneness.
  • This bread will crack--don't worry.
  • Once done, remove to wire racks and cool for about 10-12 minutes in pans.
  • Turn the bread out carefully onto the racks.
  • Allow it to sit for about 15 minutes upside down, then carefully turn right side up to finish cooling.
  • As with any bread, slice with a serrated knife and enjoy.
  • Just a note--if you use Splenda or any artificial sweetener, the shelf life will be shorter and texture may not be the same than if you had used real sugar.

ALOHA BREAD RECIPE - (4.4/5)

Aloha Bread Recipe - (4.4/5) image

Provided by garciamoss

Number Of Ingredients 10

One package .25 oz / 7 g active dry yeast
1/4 cup / 60 ml warm water
2 eggs
1/2 cup / 120 ml pineapple juice
1/4 cup / 60 ml water
1/3 cup / 75 g white sugar
1/2 tsp vanilla extract
1/4 cup / 55 g butter, melted
4 Cups / 500 g all-purpose flour
1/4 Teaspoon Salt (add it to the flour)

Steps:

  • 1. In small bowl dissolve yeast in 1/4 cup warm water, not so hot you can't touch it, just tepid warm, cover and leave for about 10 minutes. 2. In a stand mixer, beat the yeast mixture, eggs, pineapple juice, 1/4 cup water, sugar, vanilla, and melted butter. When all combined, gradually stir in salt & flour until a stiff batter like dough is formed. *** If your dough is too wet, don't be afraid to add more flour, a tablespoon at a time until it is dry enough to handle. It should come away from the mixing bowl in a 'ball' after kneading. Knead for 10 minutes using the dough hook, or by hand if you don't have a stand mixer. (again, use more flour if kneading by hand so it is not too sticky wet to handle) Watch the short video at the end of this recipe for kneading by hand. After 1 hour of rising 3. Cover with a clean cloth and place somewhere warm to let rise for 1 hour. 4. Punch the air out of the dough and turn it onto a well floured surface. 5. Divide into 2 equal pieces and then divide each of those two pieces into 8, so in total you get 16 pieces Use 2 x 9 inch baking pans, and grease and flour the pans. 6. After dividing the dough, form into buns like in the photo below, so the seam side is placed down in the pan. aloha bread Squeeze each piece of dough like in my hand to form a ball Arrange nicely in the pans Arrange the buns all around and one in the middle. Cover and let rise again until doubled and they are touching each other, about 40 minutes. 7. Preheat oven to 350F / 180 C / Gas 4 8. Bake for 15- 20 minutes, then remove from the oven and brush the tops with melted butter. To test if the rolls are cooked through, Tip them out the pan (use a cloth!) and tap the base. Especially in the centre. If it sounds hollow, they're done. If not, return to the oven for another 5 - 10 minutes. Every oven is different but now you know the trick to see if they're done!

Aloha bread is a type of sweet bread that is popular in Hawaiian cuisine. It is a light and fluffy bread that is often flavored with coconut and pineapple. Aloha bread is perfect for breakfast, brunch, or as a snack. Making Aloha bread is easy and can be done in the comfort of your own home. In this article, we will give you valuable tips on how to make the perfect Aloha bread.

Tip 1: Choose the Right Flour

Choosing the right flour is important when making Aloha bread. All-purpose flour is the best choice for this type of bread as it has the right amount of gluten needed to create a light and fluffy texture. The flour should also be sifted before it is used to ensure that it is light and free of lumps.

Tip 2: Use Fresh Ingredients

Using fresh ingredients is important when making any type of bread. Fresh ingredients will give you the best results and make your bread taste better. To make Aloha bread, you will need fresh butter, eggs, pineapple, and coconut. Make sure that your ingredients are not expired or past their use-by dates.

Tip 3: Don't Overmix the Dough

Overmixing the dough can lead to tough, dense bread. It's important to mix the dough just until the ingredients are combined. Once the dough is combined, stop mixing and let it rest for a few minutes before shaping it into loaves.

Tip 4: Use Coconut Milk

Coconut milk is a key ingredient in Aloha bread as it adds flavor and moisture to the bread. You can use canned coconut milk or make your own by blending fresh coconut with water. Make sure that you shake the can of coconut milk before using it to ensure that the cream and liquid are well combined.

Tip 5: Add Pineapple for Flavor

Pineapple is another key ingredient in Aloha bread. It adds sweetness and flavor to the bread. You can use fresh or canned pineapple, but make sure that you drain it well before adding it to the dough.

Tip 6: Let the Dough Rest

Letting the dough rest is important when making Aloha bread. Once the dough is mixed and kneaded, let it rest for at least 30 minutes to an hour. This will give the dough time to rise and develop a better flavor.

Tip 7: Shape the Dough into Loaves

After the dough has rested, it's time to shape it into loaves. Divide the dough into two or three equal pieces and shape them into loaves. You can shape the loaves on a baking sheet or in loaf pans. Make sure that there is enough room between the loaves for them to expand while baking.

Tip 8: Allow Enough Time to Rise

Allowing enough time for the dough to rise is important for the texture and flavor of the bread. Let the shaped loaves rest for at least an hour or until they have doubled in size. This will ensure that the bread is light and fluffy.

Tip 9: Brush with Egg Wash

Brushing the loaves with an egg wash before baking will give them a shiny, golden-brown crust. To make an egg wash, beat together one egg and a tablespoon of water. Brush the egg wash on the surface of the loaves just before baking.

Tip 10: Bake at the Right Temperature

Baking at the right temperature is important for the texture and flavor of the bread. Preheat your oven to 350°F (180°C) and bake the loaves for 30-35 minutes. The bread should be golden brown and sound hollow when tapped on the bottom.

Conclusion

Making Aloha bread is easy and can be done with a few simple ingredients. Follow these valuable tips to make the perfect Aloha bread at home. Remember to choose the right flour, use fresh ingredients, don't overmix the dough, use coconut milk, add pineapple for flavor, let the dough rest, shape the dough into loaves, allow enough time to rise, brush with egg wash, and bake at the right temperature. Enjoy your homemade Aloha bread for breakfast, brunch, or as a snack!
