DYNAMITE ORANGE-ALMOND SALAD

Dynamite Orange-Almond Salad image

Found this in the book At Home Cafe. I have modified it a little. It is great if you add crumbled blue cheese, mushrooms, shredded chicken and dried cranberries on top also. You can glaze the almonds and dressing ahead to save time.

Time 12m

Yield 6-8 serving(s)

Number Of Ingredients 13

1/2 teaspoon salt
black pepper, to taste
2 tablespoons sugar
4 tablespoons vinegar, white balsamic
1/4 cup oil
6 drops Tabasco sauce (we like some zing)
2 tablespoons chopped fresh parsley
1/2 cup sliced almonds
3 tablespoons sugar
1 (12 ounce) bag mixed greens
2 green onions, chopped
1/8 cup sliced red onion
1 (15 ounce) can mandarin oranges, drained

Steps:

  • For dressing, combine first seven ingredients (from salt through parsley). Whisk until well blended.
  • For glazed almonds, combine almonds and sugar in a small skillet. Heat on low and stir constantly until sugar is dissolved and almonds are well coated. Sugar can caramelize quickly and burn--watch closely.
  • Pour onto waxed paper to cool.
  • Once cooled, break into small pieces.
  • To serve the salad, combine greens, onions and mandarin oranges into a large salad bowl. Pour dressing over the salad and toss to combine.
  • Sprinkle glazed almonds on top and serve.

Picking oranges: Picking the right oranges is important when making pan orange almond salad. The best oranges for this salad are juicy, sweet, and have a bright orange color. You can use any type of orange such as navel oranges, blood oranges, or valencia oranges, depending on your preference. However, make sure to always choose ripe oranges that are firm, without any cracks or soft spots. 2. Slicing oranges: When making pan orange almond salad, it is important to slice the oranges correctly. To do this, cut off the top and bottom parts of the orange, so that it sits flat on a cutting board. Then, using a sharp knife, slice off the peel and white pith from the sides in a circular motion, making sure to remove any remaining white parts. Once the orange is completely peeled, hold the orange over a bowl to catch any juice that comes out, and slice the orange into thin circles. 3. Toaster almonds: Toasted almonds add a crunchy texture and nutty flavor to the pan orange almond salad. Toasting almonds is simple, and only requires a few minutes. Preheat the oven to 350°F. Spread the almonds on a baking sheet, and bake for 10-15 minutes, or until they are golden brown. Once toasted, let the almonds cool completely before adding them to the salad. 4. Making the dressing: The dressing is an important part of the pan orange almond salad, as it brings all the flavors together. To make a simple yet delicious dressing, mix together olive oil, lemon juice, honey, salt, and pepper in a bowl.
