Time 2h5m

Yield 8

Number Of Ingredients 18

1½ cups whole wheat flour
1 cup plus more for kneading all-purpose flour
2 tbsp granulated sugar
2¼ tsp active dry yeast
1 tsp cream of tartar
1 tsp baking soda
½ tsp salt
3 tbsp divided into thirds olive oil
1¼ cup warm water
¾ tsp Italian Seasoning
¼ tsp lemon or lime juice
1 cup tomato sauce
2 pieces removed from its casing, crumbled Italian sausage
½ cup shredded or powdered parmesan cheese
½ cup preferably fontina, asiago & provolone, shredded 3-cheese blend of your choice
½ cup cooked chopped bacon
14 slices pepperoni
pinch garlic powder

Steps:

  • In a bowl, add the warm water and yeast.
  • Stir and let the mixture bloom, until the yeast turns foamy and dissolves.
  • Sift together both flours, baking soda, cream of tartar, sugar, & salt.
  • Add the bloomed yeast into the sifter flour mixture. Mix all the ingredients together by hand or with a mixer at low speed until the dough begins to form.
  • Once the dough is smooth and well combined, dust the work area with additional flour & knead the dough by hand for about 10 minutes. Add more flour as needed.
  • Once the dough becomes elastic and bouncy, roundly shape it and put it in a greased bowl with olive oil.
  • Drizzle some olive oil over the dough, cover it, and allow it to rise for one hour.
  • After an hour, the dough will appear to have expanded in size. Poke the middle to release the extra air.
  • Grease a 12-inch pizza pan, and dust it with some flour to prevent the dough from sticking.
  • Press out the dough onto the greased pizza pan, & prick around the dough with a fork.
  • Transfer the pizza dough to a warm area & allow to rest, about 10-15 minutes covered.
  • Preheat the oven to 450 degrees Fahrenheit.
  • Brush the pizza dough with the remaining olive oil, & pre bake them for about 5 minutes.
  • Combine the tomato sauce into a bowl with the Italian Seasoning and lemon juice.
  • Spread the tomato sauce evenly on the pizza dough, leaving a 1 inch border all around the dough.
  • Sprinkle the parmesan cheese and 3-cheese blend generously all over the tomato sauce.
  • Once you're done with the previous step, toss in the sausage and bacon and add the Italian sausage. Afterward, sprinkle the cooked pepperoni over the dough.
  • Place the pan with the dough in the oven and let it bake for about 10-15 minutes. When the crust appears golden brown and the cheese fully melted, remove and scatter the garlic powder around the pizza.
  • Cool the crusts for one minute. Once they're cool enough, cut them evenly and serve.

Papa John's Pizza is one of the most popular pizza chains in the world. Their pizza dough is known for its crispy yet airy texture and delicious flavor. If you're a fan of Papa John's Pizza, you might be looking for a pizza dough recipe that's similar to theirs. Luckily, there are many copycat recipes available online that claim to replicate the famous Papa John's Pizza dough. In this article, we'll share some valuable tips on how to make almost-like Papa John's Pizza dough, without actually providing the recipe.

Tip 1: Use high-quality flour

One of the most important ingredients in pizza dough is flour. Papa John's Pizza uses high-quality flour that's specifically designed for pizza dough. If you want to make dough that's similar to theirs, you should also use high-quality flour. Look for flour that has a high protein content (around 12%) and that's specifically designed for pizza or bread making. This type of flour will give your dough the right texture, structure, and flavor.

Tip 2: Use the right amount of yeast

Another important ingredient in pizza dough is yeast. Yeast is responsible for making the dough rise and giving it a light and airy texture. Papa John's Pizza dough contains a small amount of yeast, around 1% of the flour weight. If you use too much yeast, your pizza dough will rise too quickly and become too fluffy, which is not what you want. On the other hand, if you use too little yeast, your dough will not rise enough and will be too dense. Therefore, it's important to measure the amount of yeast carefully and use the right amount to get a dough that's similar to Papa John's.

Tip 3: Let the dough rise properly

Once you've mixed your flour, yeast, water, and other ingredients to make the pizza dough, it's important to let it rest and rise properly. Papa John's Pizza dough is proofed for around 24 to 48 hours, depending on the temperature and humidity of the environment. This slow rising process allows the dough to develop flavor and texture. If you don't let your dough rise for long enough, you'll end up with a flat and dense pizza crust. Therefore, it's important to be patient and give your dough enough time to rise.

Tip 4: Use the right ingredients

Besides using high-quality flour and the right amount of yeast, there are other ingredients that are important to make almost-like Papa John's Pizza dough. These include salt, sugar, oil, and water. Papa John's Pizza dough contains a small amount of sugar, which helps to feed the yeast and gives the crust a slightly sweet flavor. It also contains a small amount of oil, which makes the dough more pliable and easier to stretch. Finally, the right amount of salt is important for flavor and to help regulate the fermentation process. Make sure to measure all these ingredients carefully and use the best quality products you can find.

Tip 5: Make sure the dough is properly mixed and kneaded

Once you've mixed all the ingredients together, you need to knead the dough properly to develop the gluten and create a smooth and elastic dough. Papa John's Pizza dough is mixed and kneaded using a mixer with a dough hook attachment. The dough is kneaded for around 10 minutes until smooth and elastic. If you don't have a mixer with a dough hook attachment, you can knead the dough by hand on a floured surface. Kneading the dough properly is important to get a crispy and airy texture in the finished pizza crust.

Tip 6: Use the right oven temperature

Finally, when it comes to baking your pizza, it's important to use the right oven temperature. Papa John's Pizza is baked at a high temperature of around 450°F to 500°F. This high heat helps to create a crispy crust and slightly char the edges. If you bake your pizza at a lower temperature, you'll end up with a softer crust that's not as crispy. Therefore, it's important to preheat your oven to the right temperature and bake your pizza for the recommended time to get the best results.

Conclusion

Making almost-like Papa John's Pizza dough at home is possible if you follow these valuable tips. By using high-quality flour, the right amount of yeast, letting the dough rise properly, using the right ingredients, properly mixing and kneading the dough, and using the right oven temperature, you can get a pizza crust that's similar to Papa John's. Don't forget to experiment and adjust the recipe to your taste preferences, and enjoy your delicious homemade pizza!
